Steps:
- Heat the oven to 350 degrees F. Combine the flour, onion powder, paprika and cayenne pepper in a shallow dish. Season with salt and black pepper and stir to combine.
- Heat the oil in a large ovenproof skillet over medium-high heat until shimmering. Pat the chicken dry and place in the flour-spice mixture, turning to dust on both sides. Shake off the excess. Add the coated chicken to the hot oil and sear until brown, 1 to 2 minutes per side. Remove to a plate.
- Add the onions to the oil remaining in the skillet and reduce the heat to medium. Season the onions with salt and black pepper. Cook, stirring occasionally, until the onions are golden brown, 5 to 7 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds.
- Tip the remaining flour mixture into the onions and stir to coat and combine. Stir in the warmed chicken stock and increase the heat to medium high. Bring to a boil. Reduce the heat until the mixture simmers. Add the reserved chicken with any accumulated juices, nestling it into the onions, and the thyme and bay leaf. Transfer the skillet to the oven and cook until the juices of the chicken run clear when pierced with a knife and the temperature reads 165 degrees F when measured with an instant-read thermometer, about 30 minutes. Taste and adjust the seasoning with salt and black pepper. Discard the thyme sprigs and bay leaf. Serve the chicken immediately.

- Whisk celery soup and beef stew seasoning mix together in a bowl until smooth and creamy.

- Heat oven to 190C/fan 170C/gas 5. Have a shelf ready in the middle of the oven without any shelves above it.
- Scatter 1 roughly chopped onion and 2 roughly chopped carrots over the base of a roasting tin that fits the whole 1 ½ kg chicken, but doesn't swamp it.
- Season the cavity of the chicken liberally with salt and pepper, then stuff with 2 lemon halves and a small bunch of thyme, if using.
- Sit the chicken on the vegetables, smother the breast and legs all over with 25g softened butter, then season the outside with salt and pepper.
- Place in the oven and leave, undisturbed, for 1 hr 20 mins - this will give you a perfectly roasted chicken. To check, pierce the thigh with a skewer and the juices should run clear.
- Carefully remove the tin from the oven and, using a pair of tongs, lift the chicken to a dish or board to rest for 15-20 mins. As you lift the dish, let any juices from the chicken pour out of the cavity into the roasting tin.
- While the chicken is resting, make the gravy. Place the roasting tin over a low flame, then stir in 1 tbsp flour and sizzle until you have a light brown, sandy paste.
- Gradually pour in 250ml chicken stock, stirring all the time, until you have a thickened sauce.
- Simmer for 2 mins, using a wooden spoon to stir, scraping any sticky bits from the tin.
- Strain the gravy into a small saucepan, then simmer and season to taste. When you carve the bird, add any extra juices to the gravy.

- Pat chicken pieces dry with paper towels. Sprinkle chicken pieces with 1 teaspoon salt and 1/2 teaspoon pepper. In a shallow bowl, spread 3/4 cup all-purpose flour. Dredge chicken pieces, one at a time, in flour mixture, shaking off any excess.
- Heat vegetable oil in a Dutch oven over medium-high heat. Add half the chicken pieces, skin side down, cooking 4-6 minutes until nicely browned. Remove browned chicken to a plate. Repeat with remaining chicken pieces, adjusting heat as need, so not to burn the flour.

- Take the chicken out of the fridge 30 minutes before cooking – a cold chicken will take longer to cook and possibly cook unevenly.
- Pat the chicken dry - do not rinse. Trim any large bits of fat and remove giblets, if any. Put the mustard powder, paprika, garlic powder and brown sugar (or sweetener) in a small bowl and mix together. Rub the chicken with the spices and season well with salt and pepper. Place half a lemon and the rosemary in the cavity.
- Put the onions, celery, carrots potatoes, lemon and garlic in the slow cooker. The vegetables create a sort of trivet for the chicken. If you don’t want to cook vegetables in the crockpot then place the chicken on a silicone rack or scrunch some foil for a makeshift rack. This allows for any fat to drip away from the chicken.
- Cover and cook on HIGH for 4-5 hours (check after 4). Use a digital thermometer to check the internal temperature at the thickest part is 75C/165F. You can also check by slicing into the thickest part of the meat and checking it is cooked through, or piercing the bird to see if the juices run clear. If the are still a bit pink you should continue cooking for a futrher 15-20 minutes before checking again.

- Let's Start With a Video :) As with my previous Instructables, let me post a video first. The recipe is VERY easy, so I'm sure you can make it just by following the video.
- Ingredients. Just a few basic things are needed, let me list them below. I know that "caraway" is not that popular in certain parts of the world, so feel free to skip it when having trouble to get some.
- Season the Thighs Properly! Start with the olive oil, this way the dry spices will stick to the meat better. Be generous with the salt and BBQ mix!
- Form the Onion & Garlic Base. Roughly cut the onions and garlic. Layer them over the bottom of the baking dish (use a deep one) and pour 2 cups of broth or stock over them.
- Time to Start Baking. Place the thighs over the onion base, cover with foil and start baking at 200-225C (400-425F). We're gonna bake the thighs in 3 phases.
- Remove the Foil and Keep Baking. After 20-30 minutes, as mentioned in the previous step, remove the foil and give the thighs a fork check. They should be somewhat soft by now, so the fork can slide in relatively easily.
- Time to Remove the Onions. Now it's time to work on the gravy. Remove the thighs to a plate and use a soup ladle to transfer all the onions, garlic and most of the sauce to a small pot.
- Finish the Gravy. Use a hand blender to finely blend the onions and garlic and form the base of the gravy. The color will turn into a creamy one and that's what we want.
- Thighs Are Ready! The thighs are fully cooked now, the color looks really good! I'd say it's time to serve now :)
- We're Done, Let's Eat :) I used simple boiled rice as the side, with lot's of that delicious gravy of course! And a small bowl of a simple apple & bacon coleslaw that my son made today.
