ROASTED CHAYOTES

Want to be daring and try something new? Give these a try. This was my first taste of Chayotes and I love them. They have a light fresh taste, a bit sweet and the texture somewhere between a squash and a pear. This includes directions to prepare them in advace.

6 lbs chayotes (mirlitons)
3 tablespoons olive oil
1/2 cup thinly sliced garlic (10 to 12 cloves)

Steps:

  • Preheat oven to 450°F with racks in upper and lower thirds.
  • Wearing protective gloves, halve chayotes lengthwise and discard seeds. Peel, then cut lengthwise into 1-inch wedges. Toss with oil and 1 to 1 1/2 teaspoons salt. Divide between 2 large 4-sided sheet pans.
  • Roast 45 minutes. Divide garlic between pans, then continue to roast, turning occasionally, until chayotes are golden brown on edges, about 10 - 15 minutes more. Season with salt.
  • Cooks' note:
  • Chayotes can be roasted 5 hours ahead and kept, loosely covered with foil, at room temperature. Reheat in a preheated 350°F oven (about 15 minutes).

CHAYOTE CASSEROLE

3 medium chayotes, sliced (about 4 cups)
2 epazote leaves
1 Tbsp. oil
3 large poblano chiles, seeded, cut into thin strips
1 large onion, thinly sliced (about 1 cup)
1 jalapeño pepper, seeded, minced
1 can (28 oz.) diced tomatoes, drained
1 pkg. (8 oz.) KRAFT Monterey Jack Cheese with Jalapeño Peppers, sliced

Steps:

  • Preheat oven to 375°F. Place chayotes and epazote in saucepan. Add enough water to cover. Bring to boil on high heat, stirring occasionally. Reduce heat to medium-low; simmer 10 min. Drain; discard epazote. Set aside. Heat oil in small heavy-bottomed skillet on medium heat. Add poblano chiles and onions; cook 5 min. or until tender, stirring occasionally. Stir in jalapeño peppers.
  • Layer half each of the tomatoes, poblano mixture and chayotes in 2-qt. baking dish; sprinkle with half of the cheese. Repeat all layers.
  • Bake 20 to 25 min. or until mixture is heated through and cheese is melted.

CHAYOTE WITH CHEESE (STUFFED & BAKED)



Chayote With Cheese (Stuffed & Baked) image

A Chayote dish to add variety to your meal. Note:When I made this I also added some garlic powder along with the salt & pepper. I used mexican blend cheese for the cheese, It was delicious. When boiling the chayote be sure to cook it until really tender so that is is easy to scoop out of the shell. Note: I have found that most of the time the Chayote takes longer to cook than 15 minutes because of size or age.

4 medium chayotes
2 medium onions, minced
2 tablespoons butter or 2 tablespoons olive oil
salt and pepper
2 eggs, beaten
American cheese or cheese, of choice

Steps:

  • Cut the chayotes in half, place in boiling salted water and cook until tender, approximately 15 minutes.
  • Scoop out the pulp and reserve the shells.
  • Chop the pulp and drain.
  • Mince the onion and slowly fry in butter or olive oil until transparent.
  • Add the pulp of the chayote and season to taste with salt & pepper.
  • Add the 2 beaten eggs over the mixture and cook over low heat for a few minutes, mixing well until done.
  • Stuff the chayote shells and top with grated cheese.
  • Place in hot oven, 400 degrees until cheese is melted & golden.

4 cups cut-up peeled chayotes (about 3 medium), cooked
1-1/2 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

Steps:

  • Preheat oven to 400ºF. Prepare stuffing as directed on package; set aside.
  • Spread chayotes into 13x9-inch baking dish; sprinkle with cheese. Top with stuffing.
  • Bake 15 min. or until heated through.

I don't know if chayote is well known in the U.S., but let me tell you, it has a very delicate taste,and is an almost sweet-flavored vegetable, which if not overpowered by any other ingredient, will delight your taste buds.

3 bigger sized chayotes
1 tablespoon finely diced onion
1/4 cup grated mild flavored cheese (your favorite meltable)
1/4 cup butter
3 tablespoons breadcrumbs
1 dash ground cinnamon
1 dash granulated sugar
salt, to taste,about a teaspoon
butter, for greasing baking pan

Steps:

  • Cook chayotes in water with salt.
  • Drain.
  • Halve chayotes horizontally carefully so as not to tear outer peel at this stage.
  • Scoop out the pulp, discard pit and keep the hollowed out halves.
  • Dice the scooped out chayote pulp and mix with onion, cheese and salt to taste if needed.
  • Fill in the chayote halves with previous mixture.
  • (Optional-- if scooping out pulp and watching out for not tearing outer peel sounds like much bother, just scoop out, discard peel, mash, and proceed with rest of recipe).
  • Place in a previoulsy greased pan.
  • Sprinkle with bread crumbs, cinnamon, and sugar.
  • Bake on high temperature until bread crumbs are browned.

4 chayote squash, halved, seeded
2 tablespoons vegetable oil
1 onion, finely chopped
11/2 teaspoons salt
1/2 pound chopped mushrooms
2 garlic cloves, minced
2 jalapeno chilies, minced
1/2 teaspoon ground cumin
2 tomatoes, peeled, seeded chopped
1 to 2 tablespoons chopped epazote leaves or fresh oregano
1 cup dry bread crumbs
1/2 cup toasted almonds, chopped
1/2 cup grated Cotija or Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F. Cook unpeeled squash in lightly salted water until crisp tender, about 15 minutes. Drain well. Scoop out most of flesh, leaving 1/4-inch thick shell. Season shell with salt and pepper. Coarsely chop chayote flesh. Set aside.
  • Heat oil in heavy large skillet over medium high heat. Add onion and salt and saute until tender, about 5 minutes. Add mushrooms and cook until most of liquid evaporates. Add garlic, jalapeno and cumin and saute until fragrant. Add tomatoes and reserved chayote flesh. Stir until most of liquid evaporates. Stir in epazote, bread crumbs and almonds. Season to taste with salt and pepper. Spoon mixture into shells. Sprinkle with cheese. Arrange shells in large baking pan. Pour enough hot water around shells to reach 1/4-inch. Bake until heated through, about 15 minutes.

BAKED CHAYOTE SQUASH

Cheesy, custardy stuffed squash with bread crumbs on top. This dish is great as a side with beans, meat, and rice, Central American-style.

4 chayote squash, cut in half
1 tablespoon unsalted butter (such as Kerrygold®)
1 egg, beaten
¼ cup heavy cream
¼ cup grated Parmesan cheese
2 tablespoons shredded Cheddar cheese
1 ¼ cups shredded Cheddar cheese
½ cup dry bread crumbs

Steps:

  • Place the chayote into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until very tender, 45 to 50 minutes. Drain and allow to steam dry for a minute or two.
  • Preheat an oven to 375 degrees F (190 degrees C).
  • Remove the seed and seed membrane from the chayote using a spoon; discard. Scoop out as much of the remaining pulp as possible into a bowl without puncturing the shell. Pat the shell dry with a paper towel and place in a baking dish; set aside. Squeeze the excess water from the reserved pulp. Stir in the butter, egg, heavy cream, Parmesan cheese, and 2 tablespoons Cheddar cheese until well-blended. Fill each of the chayote shells with the pulp/cheese mixture. Sprinkle the remaining 1 1/4 cup Cheddar cheese on top, followed by the bread crumbs.
  • Bake in the preheated oven until heated through and the cheese has melted, 35 to 45 minutes.

2 chayotes
2 medium white onions
2 tablespoons butter or 2 tablespoons margarine
1 tablespoon lite olive oil
1/2 teaspoon oregano (dried)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Pare and seed the chayote.
  • Cut lengthwise into 1/2-inch thick slices.
  • Cut onions lengthwise into halves.
  • Cut halves lengthwise into 1/4-inch slices and separate into slivers. Heat butter and oil in a skillet over medium heat until foam subsides.
  • Add onions and oregano; sauté over medium-low heat until onions are golden (8-l0 minutes). Add chayote; sauté 3 minutes. Cover and cook until chayote is crisp tender (approx. 8 minutes).
  • Add salt and pepper.
