Whipped cream desserts are a light and lovely affair, especially at the end of a big meal like Thanksgiving. Some people love crunch, but the particular joy of this pudding lies in its voluptuous softness, as it needs to sit in the fridge overnight for the layers to cohere: vanilla cookies, caramel-fried apples and salted cinnamon whipped cream. It's an airy fall dream in dessert form.

4 tablespoons unsalted butter
2 large crisp sweet-tart apples (1 pound), such as Fuji or Pink Lady, unpeeled and finely chopped (see Tip)
1/4 cup lemon juice (from 1 to 2 lemons)
1/4 packed cup dark brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt (Diamond Crystal)
2 cups very cold heavy whipping cream
1 packed tablespoon dark brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt (Diamond Crystal)
1 (11-ounce) box vanilla wafers

Steps:

  • Make the caramel apples: Melt the butter in a large skillet over medium heat. Add the apples, lemon juice, brown sugar, cinnamon and salt and cook, stirring occasionally, until the apples are tender and the liquid is reduced but saucy with the consistency of chunky applesauce, 15 to 20 minutes. Set aside to cool slightly.
  • Meanwhile, make the whipped cream: In a large bowl, using a large whisk or an electric mixer, whisk the cream, brown sugar, cinnamon and salt until soft peaks form. (When you lift the whisk out of the bowl and turn it whisk-side up, a peak of cream should flop over onto itself.) Don't overbeat; you're looking for a soft-set whipped cream that drapes rather than plops.
  • Assemble the pudding: In a medium bowl or other serving vessel (preferably clear), arrange one-third of the vanilla wafers at the bottom, top with half of the caramel apples, then spread with half of the whipped cream. Repeat these layers once more and end with a final sprinkle of crushed vanilla wafers on top. (If you want crunch, save this final sprinkle for right before serving.) Cover and refrigerate until the cookies are soft, about 8 hours and up to 24 hours.

This Toffee Apple Pudding, also known as Caramel Apple Pudding, is rich, packed with apples, and is the perfect after-dinner treat. Enjoy with custard, ice cream, pouring cream, or simply by itself- whatever topping you chose, this pudding will become your new fall favourite.

PUDDING: 85g (6 tbsp) unsalted butter, melted 140g (1¼ cup) self-raising, sifted 100g (½ cup) golden caster (superfine) sugar 1 tbsp baking powder pinch salt 200ml (7oz) milk 1 egg, beaten 1 tsp vanilla extract 2 large Bramley apples, peeled, cored and sliced TOPPING: 140g dark brown sugar 250ml (1 cup) boiling water
85g (6 tbsp) unsalted butter, melted
140g (1¼ cup) self-raising, sifted

200ml (7oz) milk
1 egg, beaten
1 tsp vanilla extract
2 large Bramley apples, peeled, cored and sliced
140g dark brown sugar
250ml (1 cup) boiling water

Steps:

  • Preheat the oven to 180°C (160°C fan) / 350°F / Gas mark 4. Grease a 2-litre/3½-pint ovenproof dish lightly with butter, set aside. In a large bowl, add the flour, sugar, baking powder, and a pinch of salt. In a small bowl, mix together the milk, melted butter, egg and vanilla extract, then stir into the dry ingredients until you get a smooth batter. Arrange the apples in the greased ovenproof dishes and spoon the batter over the apples, smoothing the batter into the edges and ensuring the apples are covered. For the caramel topping, pour the boiling water over the brown sugar, stirring until the sugar has dissolved, then pour this syrup over the pudding batter. It will seem like a lot, and also looks like it's making the pudding mixture watery- this is OK. Optional: Add a handful of nuts of your choice over the batter, if required. Bake for 40 minutes, or until the pudding is risen, and/or golden brown. Remove from the oven and serve immediately, making sure you get some of the gooey caramel sauce covering the bottom of the dish, with pouring cream, custard, ice cream, or by itself. Store leftovers in the ovenproof dish covering with plastic wrap or foil for a day or two.

2 Granny Smilth apples
2 tablespoons water
1 1/2 tablespoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
2 Granny Smith apples
1 tablespoon unsalted butter
1 tablespoon sugar
8 tablespoons (1 stick) unsalted butter
1/2 cup brown sugar
2 large eggs
1/4 cup molasses
1 1/4 cups all-purpose flour
2 1/4 teaspoons baking powder
Pinch of salt
1 cup plain dry bread crumbs

Steps:

  • To make caramel: Combine sugar and water in a small, heavy saucepan; set over medium heat. Cover, and cook until sugar has melted. Remove cover, and continue cooking, swirling pan occasionally, until sugar turns a deep amber. Carefully pour caramel into pudding mold; tip so caramel coats mold evenly. Set mold aside.
  • To make applesauce: Peel and core apples and cut into chunks. Place in a small saucepan along with water, sugar, and spices. Cook, covered, over low heat until apples fall apart, 10 to 12 minutes. Uncover, and cook 5 minutes more, stirring often. Set the applesauce aside.
  • To make apple topping: Peel and core apples and cut into 1-inch chunks. Melt butter in a small saute pan and add apples and sugar. Cook over medium-high heat until apples turn brown on all sides, 3 to 5 minutes. Place apples in the bottom of the caramel-lined mold, distributing evenly so they reach up the sides.
  • Choose a pot large enough to hold the pudding mold with a 2-inch space all around. Place a wire rack or a folded kitchen towel in the bottom of pot; fill with enough water to reach halfway up sides of mold. Cover pot, and bring to a boil. Reduce heat to a simmer.
  • To make pudding: In the bowl of an electric mixer, cream together butter and brown sugar. Add the eggs and molasses; mix well. Add the reserve applesauce, and mix well.
  • In a large bowl, sift together flour, baking powder, and salt; stir in breadcrumbs. Add to the applesauce mixture. Stir batter until just combined.
  • Fill pudding mold with batter; clamp on lid. Place mold in a pot of simmering water. Cover pot, and cook until a toothpick inserted into middle of pudding comes out clean, about 1 hour 40 minutes. Check water often, keeping it at a steady, low simmer. Transfer mold to a wire rack to cool, 15 minutes.
  • When ready to serve, invert the pudding onto a serving plate. If any of the apple chunks stick to the mold, remove them, and rearrange them on the top; slice.

Oh wow! This is seriously good! Slightly tart apples topped with a light sponge and drizzled (before cooking) with a caramel sauce that works its way through the whole dish! Real comfort food! I found this recipe in Australia's 'Delicious' Cooking Magazine and have adapted it slightly. It will serve 8 generously but could stretch to more if necessary.

6 large granny smith apples
250 g plain flour (all purpose)
2 teaspoons baking powder
250 g white sugar
200 ml milk
150 g butter, melted
2 eggs, beaten
1 cup brown sugar (200g)
1/2 cup golden syrup
300 ml water
icing sugar
heavy cream, to serve

Steps:

  • Preheat oven to 180°C (350°F).
  • Butter a large glass or ceramic baking dish approx 32cm x 23cm x 5cm (12" x 9" x 2").
  • Peel, core and slice apples 1cm (approx 1/2") thick.
  • Pile apples into the baking dish, adding more apple if necessary to generously cover the bottom of the dish.
  • Sift flour, baking powder and sugar into a large mixing bowl.
  • Make a well in the centre and add milk, butter and eggs and beat with an electric mixer until the mixture becomes pale and the beaters leave a trail.
  • Spoon batter evenly over the apples and smooth out with the back of a large spoon.
  • Combine brown sugar, golden syrup and water in a small saucepan.
  • Stir over medium heat until the mixture has become liquid and the brown sugar has melted.
  • Stop stirring and allow mixture to come to the boil.
  • Remove immediately from heat and pour evenly over the batter.
  • Place dish on the centre shelf of the preheated 180°C (350°F) oven.
  • Bake for 30-35 minutes or until the top is golden brown.
  • Dust lightly with icing sugar to serve and serve with thick cream.

Steamed puddings have fallen out of fashion but try this oven-baked pudding - a light, apple-based dessert that will be enjoyed by young and old as a grand finale to Christmas dinner, or any dinner for that matter. With it, you can serve a caramel sauce and a crème anglaise or just plain old-fashioned ice cream.

1/2 cup granulated sugar
1/4 cup water
1/2 cup butter
1/2 cup brown sugar
3 eggs
1/2 cup dried cranberries
1/2 cup pecans
2 tart apples, peeled and chopped
1 orange, juice and zest of, grated
1/2 cup apple cider
1/4 cup flour
1 1/2 cups fresh breadcrumbs
1 pinch salt
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F (180°C). Butter a stainless steel or ovenproof china bowl about 6 cups (1.5 L) in size.
  • Combine sugar and water in heavy pot on medium heat. Heat until sugar has melted, bring to a boil and boil for 5 to 7 minutes or until caramel turns a golden colour. Pour into prepared bowl, swirling to coat. Reserve.
  • Cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time. Stir in cranberries, pecans, apples, orange zest and juice and apple cider.
  • In a separate bowl, combine flour, breadcrumbs, salt and cinnamon. Stir half of flour mixture into apple mixture until well blended then blend in remaining mixture.
  • Turn into the prepared bowl and cover with foil. Place in roasting pan. Pour hot water reaching halfway up sides of the bowl. Bake in centre of oven for 45 minutes. Remove foil and bake another 45 minutes or until a cake tester comes out clean. Let cool slightly and turn out onto a serving plate. Serve warm or cold.

1 package yellow cake mix (I prefer Duncan Hines because it's parve)
3 large red apples
3/4 cup brown sugar
1 1/2 cups boiling water

Steps:

  • Core the apples and cut into thin, small chunks.
  • Peeling is optional.
  • Mix with the dry cake mix and pour into a greased 9 X 9 inch square pan.
  • Mix the brown sugar with the boiling water and stir until the sugar is dissolved.
  • Pour evenly over the cake mix.
  • Bake in a medium over for 1 hour or until brown and bubbly.
  • This makes a wonderful dessert with its own caramel sauce.
  • Serve warm with vanilla ice cream or whipped cream.
