BAKED CAJUN MAHI MAHI DINNER
This Baked Cajun Mahi Mahi Dinner is a healthy way to get dinner on the table in under an hour. Loaded with vegetables and andouille sausage it's a delicious seafood twist on Cajun flavors. Best of all this dinner only uses one dish so cleanup is a breeze!

Steps:
- Preheat oven to 425 degrees Fahrenheit.
- In a 9 x 12 glass baking dish, place the diced plum tomatoes, bell peppers, onion, and andouille sausage. Drizzle one tablespoon of the olive oil and sprinkle one teaspoon of the cajun seasoning on top. Mix well and then push to the sides of the dish leaving a large hole for the mahi mahi.
- Drizzle one tablespoon of olive oil on the empty spot in the baking dish. Then add the large frozen mahi mahi filet to the dish (skin side down). Drizzle the remaining one tablespoon of olive oil on top and sprinkle the remaining one teaspoon of cajun seasoning on top of the fish.
- Place aluminum foil on top of the glass baking dish and bake for 25 minutes. Then remove the aluminum foil from the dish and bake for an additional 15 minutes until internal temperature reads 165 degrees Fahrenheit.
- Remove from the oven, carefully cut the fish in 3-4 pieces depending on the size of the filet. Place fish on plates and top with tomato, pepper, sausage mixture. Enjoy immediately.

FLAVORFUL MAHI MAHI SHEET PAN DINNER
Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Spray a large sheet pan with cooking spray.
- Mix green beans, olive oil, and seasoned salt together in a large bowl. Coat thoroughly. Place on one quarter of the sheet pan.
- Bake in the preheated oven for 10 minutes.
- While beans are baking, pat mahi mahi dry with a paper towel. Combine butter, lemon juice, and garlic in a small mixing bowl.
- Toss green beans. Spray the empty side of the pan. Add tomatoes and onion; toss well. Place mahi mahi on top and brush with the lemon-garlic mixture. Season fish and tomatoes with salt and pepper.
- Continue baking until fish flakes easily with a fork, about 25 minutes.

You can easily control the level of spiciness in blackened fish by making your own Cajun spice mix. This is a super fast, incredibly delicious way to add more seafood to your diet.

Steps:
- Combine all Kickin' Cajun Seasoning Mix ingredients in a small bowl.
- Pat fillets dry with paper towels. Season the fillets liberally with Kickin' Cajun Spice Mix on both sides, pressing the seasoning into the fish with your hands. Wash hands thoroughly.
- Place a large saute pan over medium-high heat and add butter and oil. When the fat is nice and hot, add the seasoned fish. Cook, undisturbed, for several minutes, until golden brown on one side. Flip fish over and continue to cook until opaque and completely cooked through.
- Squeeze lemon juice over the fish and serve.

This is so good! I looked for a good recipe for maple glaze for chicken or fish or *whatever* that had the ingredients that I had on hand, but I just couldn't find the right one, so I created this extremely simple recipe myself and it was a success. I guess sometimes, to find the right answers, you have to look within!

- Mix all ingredients together except for fish. Spoon mixture over fish.
- Place fish into shallow pan (sprayed heavily with cooking spray) and sautee with onions if desired for about 3-5 minutes on the first side and 2-3 minutes on the second side. Add more of the syrup mixture if you want.
- Best served with rice.
- ***Can also marinate fish for a few hours for maximum flavor.

- In a large ovenproof skillet, saute onion and green pepper in 1-1/2 teaspoons oil until tender. Add garlic; saute 1 minute longer. , Stir in the salsa, wine, olives and Greek seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until slightly thickened. Transfer to a bowl; set aside., Sprinkle mahi mahi with salt and pepper.
