BROCCOLI AND RICE
In order to infuse the rice with the taste of broccoli, I puree the broccoli stalk with water and cook the rice in the green broccoli water. Some freshly squeezed lemon at the end adds freshness to this broccoli and rice recipe.

Steps:
- Combine broccoli stalk and 1 cup water in a blender; blend until pureed. Add remaining cup of water for a total of 2 cups of green water to cook the rice in.
- Heat olive oil in a saucepan over medium heat and cook garlic until fragrant, 1 to 2 minutes. Add rice and cook and stir for 3 minutes. Add chopped broccoli florets, green water, and salt; bring to a boil. Reduce heat to low and simmer until rice is tender, 15 to 20 minutes.
- Fluff cooked rice with a fork and squeeze lemon juice on top before serving.

- Place 1/2 of the broccoli florets in a food processor; pulse about 20 times until broccoli looks like grains of rice. Repeat with remaining broccoli florets.
- Heat olive oil in a large skillet over medium-low heat. Add onion; cook and stir until softened, about 3 minutes. Stir in garlic; cook for 30 seconds. Stir in broccoli rice, salt, and pepper. Reduce heat to low and cook, covered, until broccoli has softened, about 5 minutes. Pour lemon juice on top.

My grandma Lorraine Stromgren would listen to WCCO Radio's Joyce Lamont as she broadcast a daily recipe. My grandma would sit by the radio with pencil in hand to write down those recipe favorites! A cookbook was published in 1979 after 10 years of recipes being broadcast. Of over 2,000 recipes that had been broadcast, the cookbook has the recipes that were the listeners' favorites.

- In a large skillet, saute onions in butter.
- When onion is transparent, stir in cooked rice, mushroom soup and the cooked broccoli.

- Cook broccoli and rice according to package directions. Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan over low heat, mix cream of mushroom soup, cream of chicken soup, and 1 1/4 cups water. Gradually stir in cheese until melted. Be careful that the cheese doesn't burn.
- Melt butter in a large skillet over medium-high heat, and cook and stir celery and onion until soft.
- In a large mixing bowl, combine broccoli, rice, soup and cheese mixture, celery and onion. Season with salt and pepper. Pour mixture into a 9x13 inch baking dish.
- Bake in the preheated oven for 45 minutes, until bubbly and lightly brown.

This is another recipe I make quite often. Especially when I am busy. I can throw this in the oven and do a hundred other things while it bakes. Delicious, too.

- Remove skin from chicken if desired.
- In an 8-cup (2L) oblong baking dish, combine soup, water and rice.
- Arrange chicken on rice mixture; sprinkle with pepper and paprika.
- Bake at 375 without cover for 50-60 minutes or until chicken is no longer pink and rice is tender.
- Garnish with parsley if desired.
BAKED CHEDDAR-BROCCOLI RICE CUPS
A great basic recipe! I have added more veggies to the original recipe. Try adding other veggies, like grated carrot, cooked caulifower, etc. You could also make this with quinoa instead of rice. - Cook rice in vegetable broth according to package directions(simmer 40-45 minutes).
- Move cooked rice to a bowl.
- Mix in the rest of the ingredients, but only use 1/2 of the cheese.
- Grease a 8 cup muffin tray and make 8 balls. Place in muffin tins. Sprinkle the rest of cheese on top.
- Put in the oven for 25 minutes and bake at 350 degrees - until golden and crisp.
- To reheat these you could place them in a brown paper bag. Lightly wet the bag and put in 300*F oven until the bag dries out and the cups are nice and hot and not dried out, about 5 minutes.

BROCCOLI & RICE GRATIN
Creamy baked rice and broccoli, an easy delicious side dish or light lunch with a salad and sliced tomatoes! My DD will only eat rice if cooked like this (or chinese) it is really easy, and tastes great! Good re-heated too! I have also used spinach or 1 cup of frozen peas instead of the broccoli. I think this came from a milk calander.

- Preheat oven to 375 In a large fry pan, melt butter.
- Add onion and garlic and cook for 1 min over med heat.
- Add thyme, rice, and flour, stirring for 1 minute Pour in chicken broth, stir and bring to a boil, cook for 1 minute Remove from heat.
- Stir in broccoli, milk and parm cheese.
- Mix well and pour into a buttered 6 cup casserole dish.
- Cover and bake for 35 min or until tender.
- Meanwhile, to make crumb topping, toss together all ingredients and set aside.
- Remove casserole from oven, stir in lemon zest and sprinkle with crumb topping.
- Broil for 1 to 2 min until golden.
