AWESOME CAJUN CHICKEN WINGS
If you like spicy wings, you HAVE to give these a try. My husband and I have been making these for years and never has there been any left. We like to grill them and serve w/ celery and blue cheese. My kids even gobble these down!

Steps:
- Rinse chicken and pat dry.
- (if wings are whole, cut off and discard pointed tip and halve wings at the main joint.) In food processor or blender, combine all remaining ingredients, EXCEPT oil.
- Process until well blended.
- With machine on, slowly pour in oil and process until a thick paste forms.
- In a large bowl, combine wings and paste.
- Toss until wings are well coated.
- Cover and refrigerate over night.
- Broil or grill wings until nicely browned outside and cooked through.
- Serve warm or at room temperature.

BAKED BLACKENED CAJUN CHICKEN WINGS
These Cajun-flavored wings bake up beautifully then get a sweet glaze and a spin under the broiler to give them a crispy blackened skin.

- Position oven rack 4 inches from broiler. Heat oven to 425°F. Line large rimmed baking sheet with foil; spray with cooking spray.
- In large bowl, mix hot sauce and Cajun seasoning. Add wings; toss to thoroughly coat. Pour onto baking sheet; arrange in single layer.
- Bake 30 to 35 minutes or until golden brown and juice of wings is clear when thickest part is cut to bone (at least 165°F). Remove baking sheet from oven; turn wings. In small bowl, mix butter, brown sugar and tomato paste. Brush wings with butter mixture.
- Set oven control to broil. Broil wings 2 to 4 minutes or until crispy and blackened in spots. Top with green onion.

- Mix all blackened seasoning together and set aside. If you have left seasoning, save in either an air tight bag or container. Spray a baking sheet with spray, or line with parchment or foil. In large bowl, add wings, olive oil, 2 tablespoons blackened seasoning, toss to coat wings. Place wings on prepared sheet and sprinkle with the remaining 1 tablespoon of blackened seasoning. Bake at 375 for 1 hour or longer until skins becomes crispy. Turn over once during cooking time. Optional: Coat with melted butter and hot sauce mixture.
CAJUN SPICE CHICKEN WINGS WITH REMOULADE SAUCE
Hot, crispy wings dipped in a cold, creamy sauce provide a great contrast in texture, flavor, and temperature. This New Orleans-inspired version of Buffalo-spiced chicken wings uses a technique that does not include a deep fryer so it's easier and less messy. By using baking powder in the spice rub, these wings stay super crispy!

- Prepare spice rub by combining baking powder, salt, garlic powder, and onion powder, cumin, paprika, cayenne, black pepper, oregano, and thyme in a small bowl. Mix until thoroughly combined.
- Place wings in a large bowl and toss in 3 tablespoons spice rub. Toss wings with tongs until thoroughly and evenly coated. Transfer to a baking rack set over a parchment-lined sheet pan. Sprinkle a little more spice rub over each wing and let sit for 15 minutes.
- Preheat the oven to 425 degrees F (220 degrees C).
- Prepare remoulade sauce by crushing capers in a mixing bowl with the back of a fork. Add mayonnaise, Dijon, Worcestershire sauce, hot sauce, cayenne, paprika, garlic, green onion, parsley, and lemon juice; whisk to combine. Taste and add salt if needed. Cover and refrigerate until needed.
- Bake wings in the center of the preheated oven for 20 minutes. Flip and continue to bake until beautifully browned, no longer pink at the bone, and the juices run clear, 20 to 25 minutes longer. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Serve with remoulade sauce.

GRILLED BLACKENED CAJUN CHICKEN

- Brine the chicken: Combine 4 cups water, 2/3 cup salt, and the brown sugar in a medium saucepan. Bring to a boil and whisk until the salt and sugar are completely dissolved. Turn off the heat and transfer to a bowl or pot large enough to submerge the chicken. Stir in 6 cups of ice water and let cool completely. Submerge the chicken in the cooled brine, cover and refrigerate for at least 6 hours or up to overnight.
- Take the chicken out of the fridge 30 minutes before cooking. Remove from the brine and pat dry completely.
- Prepare a grill for medium-high indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Whisk together the paprika, onion powder, dried oregano, dried thyme, cayenne, garlic powder, 1/4 teaspoon ground black pepper and the remaining 1/2 teaspoon salt in a small bowl. Brush the chicken all over with the melted butter, and then pat on all of the dry rub mixture.
- Grill the chicken: Place the chicken breast-side up on the indirect side of the grill, with the legs facing the hotter side of the grill. Cover and cook until an instant-read thermometer reads at least 165 degrees F in the thickest part of the thigh (avoiding the bone), 50 to 60 minutes. The chicken will be quite dark and blackened in spots.
- Remove from the grill and let rest on a cutting board for at least 20 minutes before carving.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet. Heat a cast iron skillet over high heat for 5 minutes until it is smoking hot.
- Mix together the paprika, salt, cayenne, cumin, thyme, white pepper, and onion powder. Oil the chicken breasts with cooking spray on both sides, then coat the chicken breasts evenly with the spice mixture.
