GROUND BEEF CHILE RELLENO CASSEROLE

Steps:
- Preheat oven to 450° and line a baking sheet with foil and spray with a non stick spray.
- Wash and dry peppers and place poblano peppers on baking sheet. Roast until peppers are charred and skin are blacken and bubbly, making sure to turn a few times. Approximately 20-25 minutes.
- Once peppers have finished roasting, remove from oven and carefully place in a glass bowl. Cover with plastic wrap and let cool for about 15 minutes. When cool enough to handle, remove skins, slice in half lengthwise and rinse to remove seeds. Pat dry.
- In a large frying pan, brown ground beef, onions and garlic. Add crushed red peppers, pepper and cumin. Once ground beef is thoroughly cooked, drain grease and return to pan.
- In a 2 1/2 quart baking dish, spray with a non stick spray. Place a layer of peppers in the bottom, then 3/4 cup of Monterey Jack cheese, 1/2 of the ground beef mixture, 1/2 cup Pepper Jack cheese, and 1/2 cup of sharp cheddar cheese. Repeat layers ending with sharp cheddar cheese.
- In a small mixing bowl, whisk half & half, eggs and flour together. Pour on top of pepper mixture.
- Bake uncovered at 350° for 30-35 minutes. Add remiaining 1/2 cup of cheddar cheese on top and pop back in the oven for 15 more minutes or so.
- Once cheese has browned a bit, remove from oven and enjoy with your favorite side dishes like refried beans, rice, etc.
DUMP-AND-BAKE CHILES RELLENOS CASSEROLE
There's no prep work necessary for this layered Chiles Rellenos Casserole with ground beef and cheese! Just place 5 ingredients in one dish and the oven does the work.

- Preheat oven to 425 degrees F. Spray a 2-quart baking dish with nonstick spray.
- Place 3 of the tortillas in the bottom of the prepared dish, tearing them as necessary to cover the bottom (overlapping is fine).
- Top with half of the raw meat, breaking up the meat into small pieces as you spread it over the tortillas. Add half of the green chiles, half of the enchilada sauce and half of the cheese. Repeat layers one more time.
- Cover with foil and bake for 30 minutes. Uncover and bake for an additional 10 minutes (or until beef is cooked through). Allow the dish to rest for about 10 minutes before serving. Garnish with toppings of choice.

CHILES RELLENOS CASSEROLE WITH GROUND BEEF RECIPE

- Gather the ingredients.
- Preheat the oven to 350 F. Lightly grease an 11 x 7-inch baking dish or a shallow 2-quart baking dish.
- In a heavy skillet over medium heat, cook the ground beef and onion until the beef is browned and no longer pink and the onion is translucent. Drain well. Sprinkle beef with half of the salt and pepper.
- Place half of the drained and halved (or diced) chile peppers in the prepared baking dish.
- Sprinkle the cheese over the chile peppers and then top with the ground beef mixture.
- Arrange the remaining chiles over the ground beef mixture.
- In a mixing bowl, combine the milk, flour, remaining salt, remaining pepper, eggs, and several dashes of hot pepper sauce. Beat until smooth.
- Pour the egg mixture over meat and chile mixture.
- Bake for 45 to 50 minutes or until a knife inserted in center comes out clean.
- Let the casserole cool for 5 minutes before serving.

- 1. In a medium-sized skillet, add the olive oil and saute the onion and bell pepper with and a pinch of salt until onion is translucent.
- 2. Then add the ground beef and season with salt and pepper, cumin, allspice, garlic powder, and cook until just browned (cooked through). It is going in the oven so don't overcook the beef.
- 3. Set your skillet at an angle and allow all the fat to drain away from the beef mixture. Soak up the grease with a paper towel and discard.
- 4. In a 9 x 13 x 1 1/2 inch baking dish add one can of the chiles. Spread evenly over bottom of the dish.
- 5. Sprinkle with the sharp cheese on top of the chiles.
- 6. Then add the drained ground beef mixture, spreading evenly.
- 7. Add the second can of chiles over the meat.
- 8. In a small mixing bowl add the milk, sour cream, flour, salt, pepper, beaten eggs, and a dash of Tabasco. Whisk well until smooth.
- 9. Pour this mixture evenly over the dish.
- 10. Bake at 350 degrees for 45 to 50 minutes until it is set.
- 11. Add some cheese to the top about ten minutes before the dish is done. If the dish is not brown enough when cooking time ends, turn the oven on broil, watch carefully so it doesn't burn, only takes about five minutes or so.
- 12. Cut into squares to serve and top with sour cream black olives and chopped green onions. Enjoy!

- Split chiles and remove seeds; dry on paper towels. Arrange chiles on the bottom of a greased 2-qt. baking dish. Top with cheese. - Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Evenly layer 1 can chile peppers in the bottom of the baking dish. Sprinkle with half of the Jack and Cheddar cheeses, and cover with remaining chile peppers.
- In a bowl, mix together the eggs, evaporated milk, and flour. If too thick, feel free to add 1/2 cup regular milk. Pour over the top of the chilies.
- Bake in the preheated oven for 25 minutes. Remove from oven, pour tomato sauce evenly over the top, and continue baking another 15 minutes.
- Sprinkle with remaining Jack and Cheddar cheeses, pop under the broiler for a few minutes, and serve.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium high heat, combine the ground beef and onions and saute for 5 to 10 minutes, or until browned; drain excess fat.
- Arrange 1 can of the chile peppers on the bottom of a 7x11 inch baking dish. Sprinkle with half the cheese and top with the meat mixture. Sprinkle the meat mixture with the remaining cheese, followed by the next can of chile peppers.
- In a medium bowl, combine the eggs, flour and milk, whisking until smooth. Pour this into the baking dish over the chile peppers. Season with salt and pepper to taste.

I found this recipe in an old family cookbook. It was handwritten and didnt have the original amounts for the ingredients. Its fairly easy to make.

- Preheat oven to 400 degrees.
- Spray pan with nonstick cooking spray.
- Lay half the chilis flat into a 8X10 baking dish or pan.
- Sprinkle half of each type of cheese over top.
- Whip egg whites til frothy.
- Slowly add flour, salt and pepper, and milk to egg whites.
- Pour half of the egg mixture over the top of the cheese in pan.
- Place another layer of peppers.
- Sprinkle rest of cheese over top.
- Pour the rest of the egg mixture over cheese.
- Bake in 400 degree oven for about 25 minutes.
- Pour 1 can tomatoe sauce over top.
- Bake 15 minutes more.
- Serve hot.
