SAUSAGE AND SAUERKRAUT
This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

Steps:
- Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
- Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
- Bake in the preheated oven until bubbling, about 1 hour.

BAKED BEANS WITH SAUSAGE
Steps:
- Gather the ingredients.
- In a large skillet, melt the butter over medium heat. Add onion and garlic; sauté and stir until tender, about 5 minutes. Add jalapeño pepper, if using, and green bell pepper; cook another 3 to 4 minutes.
- Add the sausages to the skillet and cook until slightly browned, turning the sausages occasionally so they cook evenly.
- Add the baked beans, tomatoes, ketchup, and mustard to the skillet and bring to a boil. Reduce the heat to low so the food is just simmering and cook, uncovered, stirring frequently, until slightly thickened, about 15 to 20 minutes. Serve immediately.

DIANE'S BAKED BEANS WITH SAUERKRAUT
Everytime I make these beans and take them to a party I am always asked for the recipe. Don't expect leftovers. My niece Jennifer doesn't like baked beans but she loves these. I had to share this recipe so I can put it in my Zaar cookbook and because it is soooo delicious!!!

- Preheat the oven to 350 degrees F (175 degrees C). Cook bratwurst in a skillet over medium-high heat just until nicely browned on the outside.
- Spread sauerkraut in the bottom of a 9x11 casserole dish, leaving a 2 inch margin at the edges. Sprinkle celery salt and brown sugar over the sauerkraut. Place the sausages on top. Pour the beans around the outer edge of the sauerkraut. Cover the dish with a lid or aluminum foil.
- Bake for about 45 minutes in the preheated oven, until bratwurst links are cooked through.

This is my favorite way to make baked beans. They can be made in a crock pot, in a skillet, or even in a dutch oven. I use smoked Italian sausage, but other types of smoked sausage can be used as well.

- Brown the Italian sausage and onion in a skillet.
- Put all ingredients including the browned sausage and onion into the crock pot and heat until hot (about 1 hour, depending on your crock pot).

- Fry the bacon in a skillet over medium heat until it is crisp, about 5 minutes.
- Remove the bacon with a slotted spoon and drain it on absorbent paper.
- Add the onions to the skillet, and sauté them until they are translucent, about 6 minutes.
- Transfer the onions with a slotted spoon to a medium bowl.
- Add the cooked bacon and the sauerkraut to the bowl, and toss to blend well.
- Transfer the sauerkraut mixture to a large saucepan.
- Add the apple, bay leaf, sugar, and wine.
- Bring to a boil, reduce the heat, and simmer, covered, for 30 minutes.
- Add a little water, or additional wine, if the mixture begins to dry out.
- Add the beans, salt, and pepper, cover, and simmer for 20 minutes more.
- Place the smoked pork chops or the sausages on top of the mixture, cover, and simmer for 20 minutes more, or until the meats have warmed through.
- Serve hot.
- Serves 8.
