1 (8 ounce) can hunt tomato sauce
1 teaspoon prepared yellow mustard
2 tablespoons pourable Splenda sugar substitute or 2 tablespoons Sugar Twin
1 teaspoon Worcestershire sauce
3 (16 ounce) cans great northern beans, rinsed and drained
1 cup finely chopped onion
6 tablespoons hormel bacon bits

Steps:

  • Spray a slow cooker container with butter-flavored cooking spray.
  • In prepared container, combine tomato sauce, mustard, Splenda and Worcestershire sauce.
  • Stir in great northern beans.
  • Add onion and bacon bits.
  • Mix well to combine.
  • Cover and cook on low for 6 to 8 hours.
  • Mix well before serving.
  • HE: 2-1/2 protein, 1 vegetable, 1/4 slider, 5 optional calories Diabetic: 2 meat, 1 vegetable, 1 starch.

Originally from a diabetic cookbook, it's my preferred way to enjoy baked beans, even though I'm not diabetic (DH is), because it's so easy and the taste is rich & savoury, without all the creamy sauce. Canned beans work just as well, if you like. 240 calories per serving, 35 g carbs, 9 g protein, 7 g fat. Prep time does not include soaking beans overnight and cooking them beforehand (they would need only 20 minutes cooking time to be ready to use).

1 tablespoon extra virgin olive oil
1/2 large onions or 1 medium onion, chopped
3 garlic cloves, chopped
2 cups cooked beans (kidney, pinto, navy or mixed)
1 tablespoon molasses
1 tablespoon tamari soy sauce (soy)
1 teaspoon dry mustard

Steps:

  • Preheat oven to 350°F.
  • Heat olive oil in skillet.
  • Sauté onion and garlic over medium heat until onion is translucent.
  • Add beans, molasseses, tamari, mustard.
  • Stir well.
  • Spray baking dish with oil and add bean mixture.
  • Bake 20 minutes.

1 tsp rapeseed oil
1 large onion (185g), finely chopped
2 garlic cloves, finely grated
500g passata
3 pitted dates (about 15g), roughly chopped
1 tbsp balsamic vinegar
2 tsp bouillon powder
1 bay leaf
3 x 400g haricot beans, drained
4 medium cooked jacket potatoes

Steps:

  • Heat the oil in a non-stick saucepan over a low heat and fry the onion for 5 mins until golden. Add a drop of water if it looks like it's starting to burn.
  • Stir in the garlic, then tip in the passata, dates, vinegar, bouillon and bay leaf. Grind in plenty of black pepper and simmer for 5 mins.
  • Tip in the beans and 400ml water, then simmer for 10 mins, stirring every now and then until thick. To freeze, leave to cool completely, then divide between freezer bags and freeze for up to three months. Defrost thoroughly in the fridge overnight and reheat in a pan until piping hot. Serve over jacket potatoes.

2 cups dried navy beans, cooked (6 cups cooked)
2 cups water
12 ounces lean ham, chopped
1 onion, chopped
3 stalks celery, minced
1/2 green pepper, minced
1 jalapeno, minced
1 cup carrot, shredded
6 ounces tomato paste
1/2 teaspoon salt
1 teaspoon salt substitute
2 tablespoons yellow mustard
1/2 cup brown sugar substitute
1 tablespoon molasses
1 tablespoon Worcestershire sauce

Steps:

  • Put olive oil, onion, celery, peppers, carrots, salt & salt substitute in a pot. Cook until vegetables are tenderand onion is transculent.
  • Add water, ham, tomato paste, mustard, worcestershire sauce, brown sugar substitute, and molasses and mix well.
  • Gently stir in cooked beans.
  • Pour into a shallow greased baking dish.
  • Bake at 325 degrees 2 1/2 - 3 hours until beans are almost dry, stirring every hour.
