BACON-WRAPPED JALAPEñO POPPER CHICKEN

Bacon-Wrapped Jalapeño Popper Chicken image

Here are all the good foods -- jalapeño poppers, cheese, bacon -- rolled up into dinner. Cooking it on the grill gets the bacon crispy while the cheese stays gooey and melted on the inside.

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 7

4 large jalapeño peppers (about 3 ounces each)
4 ounces cream cheese, divided into 4 pieces, chilled
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
4 small boneless, skinless chicken breasts (about 5 ounces each)
4 thin slices Colby Jack cheese
20 slices bacon (about 1 1/2 pounds)

Steps:

  • Wear gloves to protect your hands and use a small paring knife to cut the stem-end off the jalapeño; you should see the white ribs attached to the walls of the jalapeño. Use the paring knife to remove the ribs from the walls. Make a cut down the length of the jalapeño from the top to the tip. Carefully, without breaking the jalapeño in half, scrape out the ribs and seeds. Transfer to a microwave-safe bowl, add 3 tablespoons water, cover tightly with plastic wrap and microwave on high power until the jalapeños turn olive green and are lightly softened but are still firm and hold their shape, 2 to 3 minutes. Let cool.
  • Stuff each cooled jalapeño with a piece of cream cheese; squeeze the walls around the cream cheese to force out any air pockets and to seal the jalapeño walls together.
  • Mix together the cumin, 1 tablespoon salt and 1/2 teaspoon pepper in a small bowl. Pound the chicken lengthwise down the breast to make a rectangular 1/4-inch-thick cutlet. Sprinkle with a quarter of the seasoned salt. Repeat with the remaining chicken and seasoned salt.
  • With one of the narrow ends of the chicken facing you, lay a piece of Colby Jack cheese at the bottom of the cutlet. Place 1 stuffed jalapeño crosswise on top of the cheese about 2 inches from the bottom. Tightly roll up the chicken and the cheese around the jalapeño, folding in the sides as you roll. Repeat with the remaining chicken and jalapeños.
  • Lay 5 strips of bacon on a clean work surface so that the strips are slightly overlapping (about 1/4-inch) and are wide enough to completely cover a chicken roll. Place 1 chicken roll at the bottom of the bacon blanket. Wrap the bacon tightly over the chicken roll. Repeat with the remaining bacon and chicken rolls.
  • Prepare a grill for indirect grilling and heat to medium-high heat.
  • Place the chicken rolls, bacon seam-side down, on the cooler side of the grill. Cover and cook until the bacon is beginning to brown and the cheese is beginning to melt and ooze from the sides, 15 to 20 minutes. Transfer the chicken rolls to the hot side of the grill and cook until lightly charred, 1 to 2 minutes per side. Let cool 10 minutes before serving.

BACON WRAPPED JALAPEñO POPPERS

Bacon Wrapped Jalapeño Poppers image

The all-in-one finger food for a party, our Bacon Wrapped Jalapeño Poppers are simply the best that you'll find. The filling for these peppers is ultra savory with garlic powder and Worcestershire sauce giving a mouth-smacking layer of flavor to the tang of cream cheese and the punchy sharpness of cheddar. While all of these things are mixed together and stuffed into the hollowed out halves of jalapeño peppers, the greatest upgrade for this bite-sized snack is its outer layer. Each stuffed pepper is surrounded in a band of high-quality bacon, adding a chewy and smoky exterior to an already decadent stuffed pepper. In the oven, the fat that renders from the bacon conducts heat onto the surface of the pepper, encouraging it to blister and char in places while the rest of the pepper cooks through. The end result is a tender and mildly spicy snack stuffed with a creamy filling that balances the jalapeño's heat alongside the chewy richness of delicious bacon. You can assure guests that you removed the seeds of the peppers, so they shouldn't be too hot to enjoy. Put these out alongside other snacks and watch them disappear at an alarming rate.

Time 50m

Yield 16 poppers

Number Of Ingredients 9

1 (8-oz). pckg. cream cheese
1 cup sharp cheddar cheese, shredded
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon Worcestershire sauce
8 jalapeños, halved lengthwise, seeds removed
8 slices Wright Brand bacon
Fresh dill for garnish, optional
16 toothpicks

Steps:

  • Preheat oven to 400°F. Line a baking sheet with parchment paper; set aside.
  • With a hand mixer, beat together cream cheese, cheddar, garlic powder, kosher salt, and Worcestershire sauce. Fill each of the hollowed jalapeño halves with 1 tablespoon of the cheese mixture.
  • Cut each slice of bacon in half so there are 16 shorter pieces of bacon. Wrap each jalapeño in a piece of bacon and insert a toothpick to hold the bacon in place; transfer to prepared baking sheet. Repeat with remaining stuffed jalapeños.
  • Bake until bacon is cooked through and the cheese begins to brown in spots, about 25 minutes. Remove from oven and allow to cool slightly before removing toothpicks. Transfer to a serving platter and garnish with fresh dill if desired.

BACON-WRAPPED CAJUN JALAPENOS

Bacon-Wrapped Cajun Jalapenos image

These peppers are so addictive that if I want any for myself, I either need to make a double batch or hide some. The jalapenos are not that spicy after they are baked (I take out the seeds and white membrane), but have a wonderful flavor. -Linda Foreman, Locust Grove, Oklahoma

CREAM CHEESE STUFFED JALAPENOS WRAPPED IN BACON

Cream Cheese Stuffed Jalapenos Wrapped in Bacon image

Delicious stuffed jalapeno recipe I got from my sister. Great for parties, especially barbecues. You can cook either in the oven or on the grill, but I prefer the grill. You can also substitute Anaheim peppers for a little less heat.

Provided by abbibaby

Categories     Cheese

Time 30m

Yield 30 peppers, 10-15 serving(s)

Number Of Ingredients 5

30 jalapeno peppers (or Anaheim peppers)
2 (16 ounce) packages bacon
16 ounces cream cheese, softened
2 cups sun-dried tomatoes, chopped (out of a jar is fine, they don't have to be fresh)
1 tablespoon garlic powder

Steps:

  • Wash and remove the seeds of the jalapenos by making a "T" cut in the jalapenos and scooping out the seeds. (A "T" cut is where you cut the pepper horizontal about half way and then in the middle of the slit, you cut a vertical slit forming a "T" cut in the pepper.).
  • In a bowl, combine cream cheese, sun dried tomatoes, and garlic powder. Using a teaspoon "stuff" the jalapeno with the cream cheese mixture.
  • Wrap jalapeno in bacon and secure with a toothpick. (If you are cooking on the grill remember to soak toothpick in water for 15 minutes before securing pepper with it, to ensure it doesn't catch fire on the grill).
  • Cook on the grill or bake at 450° F for 15 minutes or until bacon is cooked through.
  • Enjoy!
