BAKED ASPARAGUS WITH PARMESAN AND BALSAMIC VINEGAR
This baked asparagus with Parmesan and balsamic vinegar is an Italian-inspired side dish made by baking tender blanched asparagus spears with a sprinkling of nutty Parmesan cheese and a drizzle of balsamic glaze.

- Preheat the oven to 350°F (175˚C).
- If using ridiculously pricy, top-notch balsamic vinegar, skip this step. Otherwise, throw the windows open and turn on the exhaust fan. Then place the vinegar in a small saucepan and bring to a boil over medium-high heat. Reduce the heat and simmer, swirling the pan occasionally, until the vinegar is reduced by half, anywhere from 7 to 15 minutes, depending on the size of the saucepan. Remove from the heat.
- Bring a pot of water to boil. Add 1 tablespoon of the salt and the asparagus and blanch until barely tender, about 1 minute for spears of average thickness, more for thicker spears and less for skinnier ones. Drain and rinse under cold water to stop the cooking. Pat the asparagus dry with paper towels.
- Place the asparagus in a single layer on a rimmed baking sheet or, if necessary, two sheets. Sprinkle the spears with salt to taste, drizzle with 2 tablespoons of the oil, and turn to coat. Shower the asparagus with the Parmigiano-Reggiano cheese.
- Bake until the spears are tender and the cheese is browned and almost bubbling (it won't actually melt), about 5 minutes.
- Use a spatula to shimmy the asparagus from the baking sheet to a platter. Drizzle with 2 tablespoons of the reduced balsamic vinegar or a few drops of the really top notch stuff and the remaining 2 tablespoons olive oil. Serve immediately, with the remaining reduced balsamic vinegar on the side.

SIMPLE ROASTED ASPARAGUS WITH BALSAMIC AND PARMESAN
Adapted from the Canal House Cooks Every Day cookbook. Asparagus: The Canal House ladies, Christopher Hirsheimer and Melissa Hamilton, suggest purchasing fat asparagus and peeling them. Do this if you are able to or simply buy what is available. I never peel - lazy! - but do so if you wish. Balsamic: You can buy aged balsamic vinegar that's syrupy or you can simmer balsamic vinegar until it's reduced by half its volume. Simply simmer 1/4 cup vinegar in a small saucepan until it is thick and syrupy. Keep a close watch the entire time, and transfer the balsamic to a small bowl as soon as it starts to thicken because it will continue to reduce as it sits. This will give you 1 to 2 tablespoons of syrupy balsamic vinegar.

- Heat your oven to 425ºF, convection roast if you have it.
- To prepare the asparagus, snap off the end of each spear. Discard or compost the end. Cut the spears in half. Transfer to a 9×13-inch baking dish or a sheet pan or something similar.
- Drizzle with the olive oil. Season with salt and pepper to taste. Toss with your hands to ensure each spear is nicely coated and seasoned. Transfer pan to the oven for 20-25 minutes or until the tips of the asparagus are just lightly beginning to char.
- Remove the pan from the oven and transfer to a serving platter. Taste one spear. If it tastes under-seasoned, sprinkle the entire dish with more salt to taste. Using a peeler - this is my favorite - shave parmesan over top to taste.
- Finish the dish by drizzling the syrupy balsamic over top.

- Spread out trimmed asparagus in 1 layer on a baking sheet and drizzle with olive oil. Roll asparagus back and forth so it is evenly covered with olive oil

ROASTED BALSAMIC GARLIC ASPARAGUS APPETIZER
After preparing AngelaTN's roasted asparagus for dinner recently, I just couldn't get enough of them! I wanted to make them again, but the event I was going to was a non-heating kind of thing, so I decided I'd put together an adapted version that would work well chilled or room temperature, as an appetizer. Here's what I came up with, and it's delicious! I made them as part of an anti pasto tray. Prep time does not include chilling.

- Preheat your oven to 400 degrees F.
- Trim the asparagus: rinse the asparagus, cut about an inch off the ends, then use a vegetable peeler to take the outer layer off another inch of the remaining fibrous ends (easiest is to lay the spear on a flat surface then use peeler to gently take off the layer - careful, or you'll remove too much).
- Place the trimmed asparagus in a single layer on a non-stick baking sheet, then spray with an olive oil mister or drizzle evenly with olive oil (or spray with pan spray).
- Season with the sea salt and the freshly ground pepper.
- Place in oven and roast for 8 minutes (don't overcook).
- Meanwhile, in a small saucepan over very low heat melt the butter and extra virgin olive oil.
- Add the sliced garlic and simmer (again, over very low heat) for 5 minutes - careful not to burn.
- Remove from heat and add the soy sauce and balsamic.
- When asparagus is done, remove from the oven and place in a container which has an airtight cover.
- Place the garlic from the balsamic mixture on the asparagus; whisk the balsamic mixture well (I use a pigtail whisk) and pour it over the roasted asparagus.
- Cover tightly, shake, and place in refrigerator to chill (please note that the asparagus is still hot in the container, and that covering them and adding the sauce at this point will continue to steam them a bit for a few minutes).
- Chill for at least 4 hours before serving, the place attractively on serving platter.
- Goes well as part of an anti pasto course!
- Note: although I used these as an appetizer/snack, they could also work quite well as a side dish.

This is based on a recipe from Second Helpings from Union Square Cookbook. Much to the dismay of family and friends, I could never learn to appreciate asparagus. It always reminded me somehow of eating grass. But I tried this recipe and finally found a way to love asparagus. This is incredibly simple, but the combination is superb. Spending the extra to get true fleur de sel is really worth it for this dish.

- Preheat oven to 450 degrees.
- Wash the asparagus and break the tough ends off (no need to peel them in my opinion).
- Place the asparagus in a roasting pan and drizzle on the oil and sprinkle with the pepper.
- Shake the pan to coat the asparagus evenly with oil.
- Place in the oven and roast until asparagus is softened but retains a little crunch, about 10 to 12 minutes.
- Watch it carefully!
- It's so sad to overcook it!
