2 vanilla wafers
1/3 cup finely shredded apples
1 Tbsp. pecan pieces
2 Tbsp. PHILADELPHIA Cream Cheese, softened
1 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream
1 Tbsp. sugar
1 egg
1/4 cup milk
1/4 tsp. ground cinnamon
2 Tbsp. thawed COOL WHIP Whipped Topping

Steps:

  • Preheat oven to 325°F. Spray two 6-oz. custard cups with cooking spray. Place 1 wafer in each cup. Combine apples and pecans; spoon evenly over wafers in cups. Set aside.
  • Beat cream cheese, sour cream and sugar in small bowl until well blended. Add egg, milk and cinnamon; mix well. Pour evenly over apple mixture in cups. Place cups on baking sheet.
  • Bake 20 to 25 min. or until center of each dessert is set. Cool slightly. Top each dessert with a dollop of the whipped topping just before serving.

2 tablespoons butter or 2 tablespoons margarine
1 -2 apple, peeled,cored and cut into 24 crescent shaped pieces
4 eggs
1/3 cup sugar
1 pinch salt
2 cups milk (or for richer custard use half and half)
1 teaspoon vanilla
nutmeg

Steps:

  • Melt butter (or margarine) in a large skillet over medium-high heat. Add apple slices and saute for 1 minute.
  • Reduce heat to medium-low, cover and cook 1 minute longer.
  • Reduce heat to low, uncover and let apples cook until light brown (3-5 minutes). Set aside.
  • Preheat oven to 325-degrees F.
  • Butter 6 custard cups (or butter a 1 1/2 quart casserole dish).
  • In a bowl, whisk eggs until thick. Add sugar and salt and beat well.
  • Blend in milk (or half and half) and vanilla.
  • Pour custard into prepared custard cups.
  • Set custard cups into large shallow baking pan.
  • Add enough boiling water to pan so water comes up halfway up sides of cups.
  • Bake for 1 hour or until a knife inserted in center of custard comes clean. (If using the casserole dish bake for 1 1/2 hours).
  • Remove cups from water and let cool to room temperature.
  • Top each custard with 4 (reserved) overlapping apple slices.
  • Refrigerate until cold or overnight.
  • Sprinkle with nutmeg before serving.

6 small apples, peeled and cored (we use Macintosh)
sugar
1 1/2 cups milk
3 eggs
3 tablespoons flour
1 dash salt
3 tablespoons sugar
nutmeg (optional)

Steps:

  • Preheat oven to 350-degrees F.
  • Butter an 8 x 8 baking dish.
  • Roll apples in sugar until they are coated evenly. Place apples close together in prepared dish.
  • Using a blender (or use electric mixer) mix together the remaining ingredients (milk- almond extract) and pour over apples. Sprinkle with nutmeg, if desired.
  • Bake for 30- 40 minutes or until apples are tender. Custard will finish setting while apples are cooling.

This was originally a pie recipe that I got from TOH magazine, but I converted it to bars, just for fun! This does make an excellent pie, too, just halve the recipe. I may just post this again, in pie form, so that people who do searches for pies can find it. The crust is quite simple (finally!) I never can make a crust without the family running away in fear of getting hit with flying pastry thrown in frustration. This doesn't look too pretty, but it sure is good!

1 teaspoon salt
1 cup cold butter
6 cups peeled sliced tart apples
1 2/3 cups sugar
2 teaspoons cinnamon
2 cups evaporated milk
2 eggs

Steps:

  • FOR CRUST:.
  • Preheat oven to 375 degrees.
  • Combine flour and salt.
  • Cut in butter until crumbly.
  • Press into bottom and up sides of a 13"x9"x2" cake pan.
  • Put in apples.
  • Combine 2/3 cup sugar with cinnamon.
  • Sprinkle over apples.
  • Bake for 20 minute.
  • Remove from oven.
  • FOR CUSTARD:.
  • Whisk milk, eggs, and rest of sugar until smooth.
  • Pour over apples.
  • Bake 25-30 minutes longer or until knife in center comes out clean.
  • If you're worried the crust will be too browned, whatever is showing up above the custard, just put foil all the way around the edges.

1 cup raisins
1/2 cup sugar
1/4 cup butter, melted
8 medium unpeeled tart apples
1/2 cup water
CUSTARD SAUCE:
1/2 cup sugar
1 tablespoon all-purpose flour
1/8 teaspoon salt
1 cup milk
1 cup heavy whipping cream
4 egg yolks, lightly beaten
1/4 teaspoon vanilla extract

Steps:

  • In a blender, combine the walnuts, raisins and sugar; cover and process until blended. Stir in butter; set aside. Core apples and remove enough pulp to leave a 1-in. shell. Fill each apple with about 1/4 cup nut mixture. , Place in a greased shallow 3-qt. baking dish. Pour water around apples. Bake, uncovered, at 375° for 50-60 minutes or until tender. , Meanwhile, for custard sauce, combine the sugar, flour and salt in a saucepan. Gradually stir in milk and cream until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir a small amount of hot milk mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in vanilla. Cool.
