GRILLED CITRUS MARINATED CHICKEN THIGHS

Number Of Ingredients 9

2 1/2 to 3 pounds chicken thighs, bone-in and skin-on, trimmed of excess fat
Kosher salt
Freshly ground black pepper
1/4 to 1/3 cup vegetable oil
1 lemon, zested and juiced
1 orange, zested and juiced
1 lime, zested and juiced
Few dashes cayenne pepper
10 sprigs fresh thyme

Steps:

  • Season the chicken thighs generously with salt and pepper. In a non-reactive baking dish large enough to hold all the chicken to marinate, whisk together the vegetable oil, citrus zests and juices, cayenne pepper and the thyme. Add the chicken thighs and turn to coat. Let marinate for at least 30 minutes or up to a couple hours in the refrigerator.
  • Preheat the grill. Remove the chicken from marinade and let excess drip back into dish. Place chicken on the hot grill, without overcrowding the pieces. Grill until fully cooked through, turning occasionally, about 15 minutes total, depending on how hot your grill is. Serve immediately.

4 -6 chicken breasts (slice thin if over inch thick) or 4 -6 pork chops (slice thin if over inch thick)
6 ounces carbonated lemon-lime beverage (like Sprite)
1/3 cup orange juice
2 tablespoons vinegar
2 tablespoons soy sauce
1/4 cup oil
1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons salt
1 teaspoon cayenne

Steps:

  • Whisk or stir together all ingredients.
  • Place meat in a rectangular shaped pan or dish and pour marinade over all contents.
  • Turn and move pieces to ensure best coverage of marinade. (Turn halfway through if you are at home.).
  • Marinate for 4 or more hours (or overnight).
  • Grill until cooked thoroughly!

2 limes (juice of)
2 oranges (juice of)
2 lemons (juice of)
2 tablespoons balsamic vinegar
3 tablespoons honey
1 teaspoon Dijon mustard
1 teaspoon paprika
3 garlic cloves, crushed
1 teaspoon pepper
1/2 teaspoon salt
6 boneless pork chops

Steps:

  • Combine ingredients in a large Ziploc freezer bag.
  • Remove as much air as possible.
  • Label and freeze.
  • Defrost overnight in the fridge; pork will marinate as it defrosts.
  • To serve, remove chops from bag and place in a non-stick skillet; reserve marinade.
  • Cook for 5 minutes, or until brown, repeat for other side.
  • Add marinade, and reduce heat to medium. Cover and cook for 7 minutes, or until chops are no longer pink in the middle. Transfer pork to a plate and cover. Turn heat to high and whisk for 3-5 minutes until sauce is thick. Spoon over pork. Pork Chops can also be made on the BBQ/Grill if desired.

1 cup hoisin sauce
1/4 cup soy sauce
1/4 cup rice vinegar
1/4 cup honey
1 tablespoon gingerroot, grated
4 cloves garlic, minced
1/2 teaspoon sambal oelek or 1/2 teaspoon chili paste
2 lbs pork loin or 2 lbs pork tenderloin
1 tablespoon sesame oil, divided
8 8-inch flour tortillas
1 cup sliced green onion

Steps:

  • Mix hoisin sauce, soy sauce, rice vinegar, honey, grated gingerroot, minced garlic and chili paste in a medium bowl.
  • Reserve 1 cup hoisin sauce mixture; set aside.
  • Cut chicken or pork into thin slices.
  • Add chicken or pork to the remaining sauce mixture in bowl, and stir well.
  • Cover and marinate in the refrigerator up to 8 hours and at least 2 hours, stirring occasionally.
  • Remove chicken or pork from bowl; discard marinade.
  • Coat a large nonstick skillet with some olive oil and place over medium heat until hot.
  • Add half of the chicken or pork, being careful not to crowd pan so chicken or pork doesn't stew but actually sears and cook 5 minutes or until done.
  • Remove chicken or pork from skillet, and set aside.
  • Repeat with remaining chicken or pork (you may need to wash up your pan between searing).
  • Warm tortillas according to package directions.
  • Spread 2 tablespoons of reserved hoisin sauce mixture down the center of each tortilla.
  • Arrange 1/8 of chicken or pork slices and 2 tablespoons green onion slices down the center of each tortilla.
  • Roll up and enjoy!
