Homemade Baharat (Arabic 7 Spice) image

A very versatile Middle Eastern spice blend that is so fragrant and rich in flavors of cinnamon, cardamom, cumin and so much more. Known as both baharat and Arabic 7 Spice.

2 tablespoon freshly ground pepper
2 tablespoon ground paprika*
1 1/2 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon ground cinnamon
1 tablespoon ground cloves
1 tablespoon ground nutmeg

Steps:

  • Mix all the spices together and store in an airtight container. Keep away from direct sunlight.
  • Enjoy as dry rub on meat and vegetables or mix with olive oil to make a marinade, or make kofta with baharat sauce. Mix with olive oil and spread on any kind of bread. Sprinkle over rice or caramelized onions. Get lost in the Middle Eastern cuisine with your own mix of baharat!

Number Of Ingredients 8

1 tablespoon black peppercorns
1 tablespoon cumin seeds
2 teaspoons coriander seeds
1 teaspoon whole cloves
½ teaspoon cardamom seeds
1½ tablespoons paprika
1 teaspoons ground cinnamon
¼ teaspoon ground nutmeg

Steps:

  • Heat a small skillet over medium-high heat and dry roast the whole spices/seeds (set aside the paprika, cinnamon and nutmeg) until they become very fragrant, about 3-5 minutes, tossing regularly to prevent scorching. Transfer them to a bowl and allow them to cool completely before grinding them in a spice or coffee grinder along with the paprika, cinnamon and nutmeg. Keep stored in an airtight glass jar.

Lebanese seven spice blend, also known as baharat ("spices" in Arabic), is a classic Middle Eastern blend made with warm spices, including allspice, cumin, cloves and coriander. Different regions within Lebanon have their own recipes and ratios, with some using other spices such as white pepper, fenugreek and/or paprika. Seven spice is what lends distinctive flavor to regional dishes, notably kebabs, koftas and dolmas. You can also use it to flavor meat, vegetables and rice.

In Arabic, the term "baharat" simply means "spices" and can refer to any number of different blends, each tailored to a specific dish or ingredients. This all-purpose blend, adapted from Freda Nokaly and Doaa Elkady of Spice Tree Organics, reflects the women's Egyptian ancestry, highlighting a combination of musky cumin and floral, citrusy coriander that's been sweetened with an aromatic mix of cinnamon, cardamom and clove, and spiked with black pepper and bay leaf. Unlike some other baharat blends, this version doesn't call for first toasting the spices, giving it a subtle but distinct brightness. Use it in meatballs and pilafs, in marinade and sauces for grilled meats and fish, and in rice dishes.

Steps:

  • Place all the ingredients in a spice grinder, clean coffee grinder, or mortar and pestle, and grind until fine. If you like, you can strain the mix through a fine-mesh strainer to remove any coarse bits, but this is optional. Store in an airtight container in a cool, dark place for up to 1 year.

1/2 cup whole black peppercorn
1/4 cup whole coriander seed
1/4 cup cassia or 1/4 cup cinnamon bark
1/4 cup whole cloves
1/3 cup cumin seed
2 teaspoons whole cardamom seeds
4 whole whole nutmegs
1/2 cup ground paprika

Steps:

  • Basically, just place all the spices except the paprika and nutmeg in a blender or adequate grinder and process until it becomes a powder.
  • If necessary you can grind 1/2 cup at a time.
  • Grate the nutmeg and blend this with the paprika into the spices.
  • Store in an airtight jar.
  • Generally in some areas, they lightly toast the spices in an oven to bring out more flavor.
  • You can gain this also by putting the amount you're going to use, on a hot dry frypan and toast it for a few seconds before using.
  • This not only makes the kitchen smell good, but brings out a richer flavor of any spice.
  • *Note* You can also use ground spices, but using them whole is the authentic way.
  • Four nutmegs come to about 1/4 cup ground.
  • Be careful how much nutmeg you use; it's toxic in large doses.
