SWEET CHICKEN BACON WRAPS (PAULA DEEN)
Hey you Paula Deen fans, she has a new magazine, "Cooking with Paula Deen"--this recipe is from the premier issue. It was so yummy looking, I couldn't wait to try it. I added another 15 minutes to the cooking time suggested (30-35 minutes) and It was just right, but oven temperatures vary, so check on it during the last few minutes of cooking time. I'm also going to add a few dashes of cayenne pepper next time for something hot and sweet!

Steps:
- Preheat oven to 350°F.
- Cut chicken breasts into 1-inch cubes.
- Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick inserted on the diagonal starting where bacon seam overlaps.
- Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture.
- Coat a rack and broiler pan with non-stick cooking spray. Place chicken on rack in broiler pan.
- Bake at 350°F for 30 to 35 minutes, or until bacon is crisp.
BACON-WRAPPED CHICKEN BREASTS WITH CHILE CHEESE SAUCE
This is from the Deen Bros. cookbook, Y'ALL COME EAT. This is delicious. I served it to co-workers and they thought it different and wonderful. The bacon gives the chicken a smokey flavor.

- Preheat oven to 400 degrees. Line a rimmed baking sheet with aluminum foil; set aside.
- Wrap a slice of bacon around each piece of chicken and place on the baking sheet. Bake about 20 minutes or until cooked through. Remove chicken from the oven. Preheat the broiler.
- Meanwhile, in a saucepan, bring the soup, milk, chipotle pepper, Worcestershire to a simmer over medium heat. Turn of heat; keep sauce warm.
- Broil the chicken 4 to 5 inches from heat for 1 to 2 minutes or until the bacon is really sizzling. Serve chicken topped with the cheese sauce.

BACON WRAPPED CHICKEN
This simple bacon wrapped chicken breast with goat's cheese filling is a simple way to impress at a last-minute dinner party or it's great for a quick midweek meal

Steps:
- Skin 2 chicken breasts, then cut a pocket in each side and stuff each with 25g/1oz soft goat's cheese.
- Wrap each breast in 2 rashers rindless streaky bacon, tucking in a few fresh sage leaves, then put the breasts in a baking dish and season. Spoon over 1 tbsp olive oil.
- Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). To check if they are done, insert a sharp knife into the centre of a parcel and leave it for a few seconds, if the chicken is cooked the tip should feel very hot when you pull it out and touch it. The chicken should also feel very firm when pressed with the back of a fork.
- Serve with a gratin of potatoes and leeks.
BACON WRAPPED CHICKEN WITH GREEN CHILE FILLING

- Preheat oven to 375 degrees. Line a large rimmed cookie sheet with aluminum foil and top with a wire baking rack. Set aside.
- Slice chicken breasts thinly in half to create two thin breasts. You will have 8 total after slicing. Sprinkle both sides of the chicken breasts evenly with the garlic powder, salt, and pepper. Top each chicken breast with half of a green chile, a slice of cream cheese (about 1 oz), and evenly sprinkle with the shredded cheddar cheese. Roll each chicken breast into a bundle, wrap with a piece of bacon, and secure with a toothpick.
- Place the bacon wrapped chicken bundles on top of the rack on the prepared cookie sheet. Bake uncovered for 30-35 minutes, until chicken is cooked through. Turn on the oven broiler and place chicken on the top rack of the oven closest to the broiler. Allow the chicken to broil for about 3-5 minutes, until bacon is crispy. Enjoy!

- Preheat the oven to 375 degrees F. Heat the olive oil in a medium skillet over medium heat. Add the onion and cook, stirring, until golden brown, about 6 minutes. Stir in the garlic and cook 30 seconds more. Remove the pan from the heat and add the cream cheese, chives and Worcestershire sauce and stir until evenly combined. Season the filling with salt and pepper.
- Halve each chicken breast horizontally, leaving it attached at one side so it opens like a book. Sprinkle the chicken with salt and pepper, then divide the filling among the breasts, spreading it evenly on the inside of each. Close the chicken breasts and sprinkle the outsides lightly with salt and pepper.
- Lay 3 strips of bacon side-by-side on a cutting board and position a chicken breast right-side-up at the end of the strips. Tuck the thinner "tail" of the chicken breast underneath for even cooking, then roll the breast up in the bacon. Repeat with the remaining bacon strips and chicken breasts.
- Set a cooling rack in a rimmed baking sheet and transfer the chicken breasts with the bacon seam-side down to the rack. Bake until the chicken is almost cooked through and an instant-read thermometer inserted in the middle of each breast reads 155 degrees F, about 35 minutes. Heat the broiler and broil the breasts until the bacon turns golden brown and crisp, about 5 minutes. Serve hot.

- Preheat oven to 325 degrees F (165 degrees C).
- Pound the chicken breasts until flat. Put a slice of cream cheese and 1 teaspoon chopped chives in the middle of each breast and roll up. Wrap each rolled breast with 1 slice of bacon and secure with toothpicks. Place in a 9x13 inch baking dish.

BACON-WRAPPED CHICKEN AND CHILES
Steps:
- Spray grill rack with cooking spray. Spray 16x12-inch perforated grill pan with cooking spray. Heat gas or charcoal grill. In small bowl, mix spice rub ingredients.
- Sprinkle both sides of chicken with 1 tablespoon of the spice rub; press and rub into chicken. Wrap each chicken breast with 1 slice bacon, stretching bacon gently to cover as much of the chicken as possible; secure ends of bacon with toothpicks.
- Cut each chile lengthwise in half; remove seeds and stems. Cut chiles into quarters. In 2-gallon resealable food-storage plastic bag, place chiles, sweet potatoes, oil and remaining spice rub. Seal bag; shake to coat.
- Arrange potatoes and chiles in single layer on grill pan; place pan on one side of grill. Place chicken on other side of grill. Cover grill; cook over medium heat 12 to 15 minutes, turning potatoes and chiles twice and turning chicken once, until potatoes are tender and juice of chicken is clear when center of thickest part is cut (at least 165°F).
