2-3 peaches, sliced in two and pitted
2 tablespoons olive (not extra virgin) or vegetable oil, for coating

Steps:

  • Right before cooking, slice the peaches along the seam and pit them. Coat them in oil for cooking, being sure to give them a thick, even coating. I prefer to toss them in a gallon size Ziplock bag along with the oil and gently rub the oil into the peach. This reduces mess, which is critical when you might be in the backyard, far from access to a sink. Don't use extra virgin olive oil, as the smoke point is lower and may cause the peaches to taste burnt and smoky. Grill the peaches skin side up for 5-6 minutes. When they begin to sizzle and shine, turn them over onto their skin and cook for another 6-7 minutes, or until they soften and lose a little bit of their shape. Serve immediately, with or without a garnish of whipped cream or ice cream. If you don't have room to eat all the peaches you've grilled, they can be reheated in the microwave for about 30 seconds, and they still taste great the second time around.

1 peach (per person)
1 teaspoon neutral-flavored cooking oil (per peach)
Optional: 1 tablespoon brown sugar (per whole peach)
Optional: 1/4 teaspoon ground cinnamon (per whole peach)
For Serving: Crème fraîche , if desired

Steps:

  • Gather the ingredients.
  • Prepare a gas or charcoal grill to medium heat: You should be able to hold your hand about an inch above the cooking grate for 3 to 4 seconds before pulling it away from the heat. If you are also using the grill to cook something else that requires more heat, place the peaches around the edges; they're cooler. Or cook dinner, let the fire cool down, and then grill the peaches.
  • Cut the peaches in half and pit them.
  • Lightly brush the peaches with the oil, being particularly aware of coating the cut sides well.
  • Set the oiled peaches cut side down on the medium hot grill. Make sure they aren't touching so the hot air of the grill can circulate around each piece.
  • Cook the peaches until grill marks form, turning as necessary. Then, flip the peach halves over, sprinkle with the cinnamon and sugar, if using. Cook until the peaches are tender, but not falling apart, about 8 minutes total (4 minutes per side).
  • Serve grilled peaches hot, warm, or even at room temperature. Serve with dollops of crème fraîche if desired. Enjoy!

1 tablespoon rice syrup or 1 tablespoon honey
1 teaspoon light olive oil
40 g crushed pecan nuts (1 1/2 ounces) or 40 g sliced almonds, toasted (1 1/2 ounces)

Steps:

  • Halve the peaches and remove and discard the stones. Cut the peaches into thick slices. There's no need to remove the skins but you can if you wish to.
  • Heat the oil. Add the peaches and cook 3-5 minutes on each side. They should start to caramelise.
  • Sprinkle with the toasted nuts and serve. You can drizzle a little maple syrup around the plate if you wish.

  • In a small bowl add the butter and stir until smooth. Add the cinnamon sugar, granulated sugar and salt and mix until combined.
  • Heat grill to high. Brush peaches with oil and grill until golden brown and just cooked through. Top each with a few teaspoons of the butter and garnish with mint leaves.

Steps:

  • Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
  • Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
  • Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

1 teaspoon pure vanilla extract
1/4 teaspoon almond extract
1/4 cup dark brown sugar
1 to 2 pints frozen vanilla yogurt
Suggested toppings: toasted sliced almonds

Steps:

  • Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Set aside for 15 minutes while you preheat a grill with a medium-high heat. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.
  • Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.

1 lime , zested and juiced
1 tbsp rapeseed oil
2 tbsp finely chopped mint , plus a few whole leaves to serve
2 tbsp basil , chopped
2 peaches (300g), quartered
75g quinoa
160g fine beans , trimmed and halved
1 small red onion , very finely chopped
1 large Little Gem lettuce (165g), roughly chopped
½ x 60g pack rocket
1 small avocado , stoned and sliced

Steps:

  • Mix the lime zest and juice, oil, mint and basil, then put half in a bowl with the peaches. Meanwhile, cook the quinoa following pack instructions.
  • Cook the beans for 3-4 mins until just tender. Meanwhile, griddle the peaches for 1 min on each side. If you don't have a griddle pan, use a large non-stick frying pan with a drop of oil.
  • Drain the quinoa and divide between shallow bowls. Toss the warm beans and onion in the remaining mint mixture and pile on top of the quinoa with the lettuce and rocket. Top with the avocado and peaches and scatter over the mint leaves. Serve while still warm.

4 tbsp olive oil
100g bag of rocket
100g blue cheese , crumbled
85g pack prosciutto
1 tbsp balsamic vinegar

Steps:

  • Brush the peach quarters with 2 tbsp of the olive oil and grind a little black pepper over. Heat a griddle pan until really hot, add the peaches, cooking for 2-3 mins on each cut side until caramelised. Set aside.
  • Toss the rocket in 1 tbsp of the olive oil and pile up with the cheese and prosciutto on 4 plates. Top with the peach quarters. Whisk together the remaining oil and the vinegar, spoon over the salad and serve.

¾ cup balsamic vinegar
2 teaspoons freshly ground black peppercorns
2 large fresh peaches with peel, halved and pitted
2 ½ ounces blue cheese, crumbled

  • In a saucepan over medium heat, stir together the white sugar, balsamic vinegar, and pepper. Simmer until liquid has reduced by one half. It should become slightly thicker. Remove from heat, and set aside.
