SUNNY'S EASY BACON CHEESEBURGER SALISBURY STEAKS
Steps:
- For the Salisbury steaks: In a large bowl, add the chuck, breadcrumbs, mustard, ketchup, onion pulp, salt and a few hefty grinds of black pepper and gently mix to combine. Divide into fourths and make four 1/2- to 3/4-inch-thick oval burgers; set aside.
- In a large pan with straight sides on medium heat, add the bacon and cook until crisp, 8 to 10 minutes. Remove to a paper towel-lined plate, leaving the bacon fat in the pan. Cool the bacon, then chop.
- In the same pan, turn the heat to high and add the formed burgers. Sear on one side for a few minutes, then remove to a plate.
- For the sauce: In the same pan, add the beef stock and scrape up any bits. Add the heavy cream and American cheese and stir. Bring to a boil. Stir in the noodles. Nestle the burgers into the noodles and sauce, cover, lower the heat to a simmer and cook until the burgers are done and the noodles are cooked, about 10 minutes. Stir in the parsley and bacon.
- Serve family style or place a burger on a plate with noodles and serve topped with sauce.

CHEF JOHN'S SALISBURY STEAK
When I was a kid, we didn't have smartphones or the internet, all we had was a TV. But we didn't care because as we watched, we got to enjoy a little something called a "TV dinner." The king of those dinners, in my opinion, was the Salisbury steak, which is what I'll show you how to make here, along with one of the greatest gravies ever invented. Serve with buttered mashed potatoes and a vegetable side of your choice.

Steps:
- Combine beef, black pepper, dry mustard, ketchup, Worcestershire, soy sauce, egg, cayenne, and bread crumbs in a mixing bowl. Use a fork or your hands to stir the ingredients until very evenly distributed.
- Cover with plastic wrap and refrigerate for 2 hours, or up to overnight.
- While the meat is resting, melt 2 tablespoons butter in a large nonstick pan over high heat; add mushrooms, onions, and a pinch of salt. Saute, stirring occasionally, until very nicely browned, 5 to 8 minutes. Reduce heat to medium and add flour. Cook and stir for 3 minutes.
- Stir in ketchup, Worcestershire sauce, and beef broth; increase heat to high. Bring to a simmer; reduce heat to medium and cook, stirring occasionally, until the gravy thickens slightly and reduces, about 10 minutes. Taste and adjust salt as needed. Transfer to a glass measuring cup, scraping the pan clean with a spatula, and reserve.
- Remove meat from the refrigerator and divide into 4 equal portions. Moisten hands and form into oval patties, about 1/2 inch thick. Season both sides of the patties lightly with salt.
- Melt 2 tablespoons butter in the previously used nonstick pan over medium-high heat. Add the patties and cook until browned, 2 to 3 minutes per side. Pour in gravy and bring to a simmer; reduce heat to medium and continue to cook until gravy is piping hot, and the meat is just cooked through and springs back lightly when touched, about 5 minutes.

EMERALIZED SALISBURY STEAK
This is a recipe from Chef Emeril Lagasse. I haven't made it yet as I don't have a food processor, but wanted to share it because it looks very good.

Steps:
- In a lrg skillet over medium-high heat, cook bacon until most of the fat is rendered but is not yet crisp.
- Transfer bacon to the bowl of a food processor and set aside.
- Remove all but 3 tbsp.
- of the bacon fat from skillet and reserve the removed bacon fat in a small bowl and set aside.
- Add onions to the fat in the pan and cook, stirring occasionally, until very soft and carmelized around the edges, about 6 minutes.
- Combine the onions with the bacon and process until smooth.
- Transfer to a lrg bowl and set aside.
- Heat 3 tbsp of the remaining bacon fat in the pan.
- Add the mushrooms and 1 tsp of salt and cook, stirring occasionally, until they have released their liquid and are golden brown around the edges, about 5 min.
- Add the shallots, thyme, and rosemary and cook until the shallots are soft, about 2 minutes.
- Add red wine and cook until almost completely evaporated.
- Sprinkle the flour over the shallots and mushrooms and stir to combine.
- Cook for 1 minute.
- Add beef stock and cook for 5 minutes, until thickened.
- Add 1/2 cup heavy cream, stir to combine, and cook until the sauce is thick enough to coat the back of a spoon and the flavors come together, about 6 min.
- Cover and keep hot.
- Preheat broiler to 500*.
- In the mixing bowl with the pureed onion-bacon, add beef, veal, pork, remaining 2 tbsp heavy cream, egg yolks, mustard, worcestershire sauce, garlic, remaining 1 1/2 tsp salt.
- and black pepper.
- Mix thoroughly.
- Shape into 6 oval patties, about 1 cup each, and 1" thick, and transfer to a non-stick baking sheet.
- Broil patties about 4 minutes each side for medium rare.
- Add meat pan drippings, butter, and chives to the sauce and stir until butter is thoroughly incorporated.
- Taste and adjust seasonings if necessary.
- Spoon sauce over patties.
BACON SALISBURY STEAK RECIPE

- Mix ingredients together and shape into patties. Coat patties in flour. Saute bacon, cut into 2" strips. Saute patties 2 minutes per side Remove all patties from pan. Add gravy to drippings and mix into gravy. Bring to a boil. Add patties to pan and simmer 15 minutes in the gravy and then top w/ bacon.

- Combine all ingredients for the salisbury steak together in a large mixing bowl until seasoning is evenly incorporated. Separate into quarters, the form beef patties by hand.
- In a large cast iron skillet, heat oil on medium-high heat. Cook each salisbury steak until browned on all sides and cooked through. Remove from pan and set aside.
