This hearty and creamy potato and pancetta bake is beautiful served hot straight from the oven. It makes a beautiful side dish to a big dinner spread.

- Preheat oven to 200°C (180°C fan-forced). Grease 2-litre (8-cup) ovenproof dish.
- Boil, steam or microwave potato until tender; drain.
- Meanwhile, heat oil in medium frying pan; cook onion and pancetta, stirring, until onion softens and pancetta is crisp.
- Combine cream, sour cream and chives in medium jug.
- Layer a third of the potato slices over base of dish; sprinkle with half the pancetta mixture. Pour a third of the cream mixture over pancetta mixture; sprinkle with a third of the cheese. Repeat layering, finishing with cheese.
- Bake, uncovered, in oven, about 30 minutes or until browned lightly. Stand 10 minutes before serving.

CRISPY CHEESE AND BACON POTATOES

- COOK THE BACON: Spread the bacon strips out across a large rimmed baking sheet pan and place on the middle rack of a COLD oven. Set the temperature to 400 degrees. Set a timer for 16 minutes and check the bacon. Remove it from the oven when it is as crisp or crunchy as you like. I remove ours at 18 minutes and it's a great balance of chewy crunch. If you like your bacon crispy enough to crumble, you will probably want to cook it another minute past that.
- COOK THE POTATOES: While the bacon is cooking, peel and chop the potatoes. Transfer the bacon to a paper towel lined plate to drain. There should be 2-3 tablespoons of bacon grease left on the sheet pan. (If there is more than that, drain off a bit.) Put the potatoes on the pan and toss with tongs to thoroughly coat them in the bacon grease. Sprinkle with salt and pepper. Spread the potatoes out in a single layer and bake for 20 minutes, stir well and bake an additional 20 minutes. Stir again, making sure that none of the potatoes are sticking to the tray. Bake another 15 minutes.
- Chop the bacon into small pieces. Remove the potatoes from the oven, stir again and sprinkle generously with shredded cheese and chopped bacon. Return the tray to the oven and bake an additional 2-3 minutes, until the cheese has melted. Top with sliced green onions just before serving. Enjoy!

- Heat oven to 200C/fan 180C/gas 6. Put the stock in a large pan, bring to the boil, then add the potatoes and the leeks. Bring back to the boil for 5 mins, then drain well, reserving the stock in a jug.
- Meanwhile, butter a large baking dish. Layer up the potatoes and leeks higgledypiggledy, seasoning as you go, then scatter the bacon over the top. Season well, pour over 200ml of the reserved stock, then spoon over the cream (if using) and cover with foil. Can be made up to 1 day ahead and chilled. POTATO AND BACON PIZZA

- Freeze the bacon on a plate until firm, 20 to 30 minutes (this will make it easier to chop). Dice the bacon and set aside.
- Meanwhile, place a pizza stone or inverted baking sheet in the top third of the oven and preheat to 475 degrees F. Brush a large piece of parchment paper with 2 tablespoons olive oil. Stretch the pizza dough into an 11-by-15-inch rectangle on the parchment. Transfer the dough (on the parchment) to a pizza peel or another inverted baking sheet; set aside.
- Peel and very thinly slice the potatoes with a mandoline or knife and place in a large microwave-safe bowl. Cover with plastic wrap and microwave until tender, 3 to 4 minutes. Uncover and toss the potatoes with the remaining 2 tablespoons olive oil, 1 teaspoon salt and a few grinds of pepper until fully coated.
- Spread the potatoes all over the pizza dough, with a slightly thinner layer in the center. Top with the bacon. Slide the pizza (on the parchment) onto the hot pizza stone and bake until the crust is golden and the potatoes are tender and crisp around the edges, 30 to 35 minutes. Remove from the oven and dot with the cheese, then return to the oven and continue baking until the cheese just melts, 1 to 2 minutes. Sprinkle with chives.

- Place the butter, flour, and salt in the food processor, and pulse lightly just until the mixture resembles wet sand.
- Add the water, 1 tablespoon at a time, pulsing after each addition of water.
- Keep adding water until the dough just begins to gather into larger clumps.
- Divide the dough in half, and shape each into a disc.
- Cover in aluminum foil or place in a plastic ziptop bag and refrigerate at least half an hour.
- Roll out each half of dough into a 10-12 inch round.
- Drape one of them into a pie plate, return to the refrigerator.
- Preheat the oven to 375 degrees F.
- In a skillet over medium heat, cook the bacon into crispy bits. Drain on a paper towel and set aside.
- Pour off all the bacon grease except 1 tablespoon, return skillet to heat and add onions.
- Cook for about 5 min or until golden brown.
- Set aside with the bacon.
- Slice the potatoes very thinly, 1/8-1/4 inch slices.
- Take the pie plate with the crust from the refrigerator and layer the potatoes in a circular single layer, slightly overlapping.
- Season with salt and pepper, sprinkle with bacon and onions.
- Continue layering until the pie pan is nearly full.
- Microwave the cream until it's simmering, about 1 1/2 minutes and pour the cream over the potatoes.
- Cover the pie with the dough and crimp the edges closed.
- Brush the top and edges of the crust with egg wash. Make a few slits in the center of the top crust, for the steam to escape.
- Bake the pie for 40-55 min. When the potatoes are fork tender, it is done.

- Preheat the oven to 300 F / 150 C / Gas 2 and grease a 10 x 12-inch (25 x 30-centimeter shallow baking dish with a little of the butter.
- Peel and slice the potatoes into thick slices, approximately 1/8-inch (3-millimeters) thick. Place the potatoes in a colander and rinse thoroughly under cold, running water. Dry with kitchen paper and season well with salt and pepper (potatoes soak up a lot of salt while cooking, so be generous). Keep to one side.

- Cut bacon in half crosswise and place it in a single layer covering the bottom of a large skillet. Fry the bacon on one side over medium heat. When it starts to turn brown and gets a little crispy, turn each piece over. Remove the skillet from the heat immediately before it browns on the second side. Drain excess bacon grease.
