BLT BURGERS WITH BACON MAYONNAISE

BLT Burgers with Bacon Mayonnaise image

Provided by Kelsey Nixon

Time 45m

Yield 4 servings

Number Of Ingredients 15

3 tablespoons packed light brown sugar
Pinch of cayenne pepper
Pinch of ground cinnamon
4 slices thick-cut bacon
3 slices thick-cut bacon
1/3 cup mayonnaise
2 tablespoons sour cream
1 tablespoon chopped fresh chives
Kosher salt and freshly ground black pepper
1 1/2 pounds ground beef chuck
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
4 slices cheddar cheese
8 slices Texas toast, toasted
Romaine lettuce and sliced tomato, for topping

Steps:

  • Make the candied bacon: Preheat the oven to 350 degrees F. Mix the brown sugar, cayenne and cinnamon in a small bowl. Arrange the bacon on a wire rack set over a rimmed baking sheet. Sprinkle with half of the sugar-spice mixture. Bake 10 minutes, then flip and sprinkle with the remaining sugar-spice mixture and bake 10 more minutes. Remove the bacon from the oven and let cool.
  • Make the bacon mayonnaise: Cook the bacon in a skillet over medium heat, turning occasionally, until crisp, 9 to 11 minutes. Drain on paper towels, then finely dice. Whisk the mayonnaise and sour cream in a small bowl. Stir in the diced bacon and chives and season with salt and black pepper. Cover and refrigerate until ready to use, or up to 1 day.
  • Make the burgers: Form the ground beef into 4 equal-size patties, about 3 1/2 inches in diameter. Sprinkle both sides of each patty liberally with salt and black pepper.
  • Heat a grill pan or cast-iron skillet over high heat, then add the canola oil. Add the patties and cook about 3 minutes, then flip and top each with 1 slice cheddar. Cover and continue cooking 3 more minutes for medium rare.
  • Build the burgers: Smear the bacon mayonnaise on the toast. Serve the patties on the toast with lettuce, tomato and the candied bacon.

ULTIMATE ONION RINGS WITH BACON MAYO

Ultimate onion rings with bacon mayo image

Lightly pickle rings of red onion, then deep fry for a crisp, indulgent starter or snack that's guaranteed to please

Provided by Cassie Best

Categories     Buffet, Side dish, Snack, Starter, Treat

Time 40m

Number Of Ingredients 11

100g plain flour , plus 2 tbsp
125ml sparkling water
½ tsp fast-action dried yeast
3 thyme sprigs , leaves picked and chopped
1 large red onion
3 tbsp white wine vinegar
2 tbsp golden caster sugar
rapeseed, vegetable or sunflower oil , for frying
3 rashers crispy bacon (We used ready- cooked from the deli meats section in the supermarket)
1 tsp sweet paprika
4 tbsp mayonnaise

Steps:

  • Put the 100g flour, the sparkling water, yeast, thyme and a good pinch of salt in large bowl and whisk to a smooth batter. Cover the bowl and set aside to rest for 1 hr. Meanwhile, slice the onion into 0.5cm slices and pop out the layers into rings. Place in a bowl with the vinegar, sugar and a good pinch of salt, and toss until well coated. Cover and set aside for at least 1 hr. (If you want to prepare ahead, the batter and onions can be made up to 8 hrs before cooking, then chilled.)
  • To make the bacon mayo, break the crispy bacon into pieces and pound to a breadcrumb texture using a pestle and mortar. Add the paprika and mayonnaise, mix well, then transfer to a bowl and chill until ready to serve.
  • Pour enough oil into a large pan to come halfway up the sides - it should be at least 10cm deep (make sure you have a lid close to hand in case the oil catches fire). Heat the oil to 170C, using a cooking thermometer to keep the temperature consistent. Drain the onion rings, pat dry on kitchen paper, then toss in the 2 tbsp flour. When you're ready to fry, make sure you have a plate lined with kitchen paper to hand. Give the batter a whisk, adding a splash more water if it has become very thick. Dip each onion ring into the batter to coat, then drop into the hot oil. Cook the onion rings in batches of 6-10 (depending on the size of your pan) - make sure you don't overcrowd the pan or the onion rings will stick together. When crisp and golden, scoop the onion rings out and transfer to the plate to drain. Sprinkle each batch with a little salt as they come out of the frying pan. Serve straight away with the mayo for dunking.

BACONNAISE (COPYCAT)

Baconnaise (Copycat) image

Bacon flavored mayonnaise, yummy! This is our copycat version of Baconnaise (which has no bacon in it). It uses bacon fat vs. soybean oil. Put it on sandwiches, burgers, BLT's and salad. Use it as a dipping sauce for chicken nuggets.

Time 5m

Yield About 1/2 cup

Number Of Ingredients 5

1 egg yolk
3/4 teaspoon Dijon mustard
1 teaspoon freshly squeezed lemon juice
Sea salt and freshly ground pepper
1/2 cup liquid bacon fat

Steps:

  • Combine the egg yolk, mustard and lemon juice in the small bowl of a food processor or in a blender and process to mix. Season with salt and pepper.
  • Have the bacon fat liquid, but not hot. With the machine running, gradually the bacon fat until the mixture starts to stiffen and emulsify, about 2 minutes. Once it starts to emulsify, you can add the fat more quickly. If the mayonnaise is too thick, just blend in 1 teaspoon of boiling water to thin it. Taste and adjust the seasoning.
