MAC DADDY MAC N' CHEESE
Steps:
- Preheat oven to 350 degrees F. Place shallots and garlic in a small aluminum foil pouch and drizzle with olive oil. Roast 20 to 30 minutes or until tender. Remove from foil and chop. In a large saute pan, reheat reserved bacon fat over medium heat. Add roasted shallot and garlic and saute for 1 minute. Add flour and stir for 1 minute. Whisk in heavy cream and thyme. Reduce by a third. Stir in cheeses until melted, creamy and thickened. Season to taste with salt and pepper. Remove from heat and gently stir in pasta. Place in a 9X13 casserole dish. In a small bowl, mix together diced bacon, bread crumbs, butter and parsley. Top Mac n Cheese with Panko mixture and bake uncovered at same heat until bubbling and lightly browned on top, 20 to 25 minutes.

- Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
- Preheat the oven to 400 degrees F.
- In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.
- While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.
- To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

- In a large pot or skillet, add 2 cups (470ml) of milk, pasta, salt, and pepper. Bring it to boil, stirring constantly so the milk and pasta do not burn.
- When the liquid is evaporated halfway, add the rest of the milk. Stir until pasta is al dente. Add shredded cheeses and mix until melted.
- Take off the heat to prevent mac 'n' cheese from over cooking.
- In a oven-safe ceramic bowl, coat the inside with butter (or oil). Place sliced cheese until the bowl is fully covered.
- Add bacon (or any desired fixins'), and add the pasta to the top.
- Roll or spread out pizza dough to fit the bowl and place over the top.
- In a small bowl, melt butter. Add in garlic powder, salt, and Italian seasoning, then brush on top of dough.
- Bake in a 350°F (180°C) over for 25 minutes.
- Carefully place a plate over the dough and flip the bowl. Use a butter knife or fork to separate from the bowl.
- Sprinkle with parsley for garnish.

- Cut all slices of bacon in small pieces. It is easiest to do this when they are very cold, maybe even slightly frozen. Cook bacon in a pan until almost done.
- Take out ¼ to ½ of bacon and set aside. Cook remaining bacon until crisp and set aside. Keep bacon fat in pan.
- At this point you can cook your pasta separately according to package instructions.
- Put a couple tablespoons of flour into pan and stir with bacon grease until lumped and slightly brown to make a roux.
- Stir in warm milk to make a béchamel sauce. When sauce is thick and creamy, add your cheese, but save some to the side. If sauce is too thick, add some more milk. If sauce is too thin, add some more cheese. Don't forget to season and taste!
- Now add your cooked pasta and completely cooked crisp bacon. Mix together.
- Pour some of mixture into an oven pan. Layer more of cheese. Add more mixture, then layer more cheese.
- Use a food processor to chop up some stale bread, or crackers, or what have you with any herbs you desire. Mix with Parmesan cheese and sprinkle on top of mac n cheese. Add your almost cooked bacon on top of the topping.
- Place in oven at about 350 degrees for 15-20 minutes. Put on broil for another 5-10 minutes to brown top.
- Serve and enjoy!
