I got this recipe from one of those community cookbooks that my mother-in-law gave me. I modified it slightly to suit our personal tastes. I hadn't made it for a long time but made it this Christmas Eve to serve with cabbage rolls - it was a HUGE hit. So, I thought I would share. There are several hash brown casseroles already posted but none with bacon.

2 lbs frozen hash browns
1 (10 ounce) can low-fat cream of chicken soup
1/2 cup margarine
2 cups light sour cream
8 ounces cheddar cheese, shredded
1/2 lb bacon
salt & pepper, to taste

Steps:

  • Thaw hash browns for 30 minutes.
  • While hash browns are thawing, prepare the bacon: Using clean scissors, cut the bacon into thin strips horizontally. Fry until crispy or desired doneness. (The scissor method saves the hassle of trying to crumble the bacon after it is cooked.).
  • In a large bowl, mix together soup & sour cream & salt and pepper.
  • Add melted margarine & mix well.
  • Add the cheese & bacon and then the hash browns. Continue mixing until well combined.
  • Spread mixture into 9 X 13 pan, lightly coated with cooking spray.
  • Bake for 1 hour at 375 degrees.

1 tablespoon butter, melted
1/2 teaspoon paprika

Steps:

  • In a bowl, combine the first 7 ingredients. Transfer to a greased 9-in. pie plate. Drizzle with butter; sprinkle with paprika. Bake at 350° until lightly browned, 35-45 minutes.

1/2 Pound fresh Mushrooms, sliced

1/3 Cup Breakstone's or Knudsen Sour Cream
12 Ounces Velveeta® Pasteurized Prepared Cheese product, sliced

Steps:

  • 1.Heat oven to 350°F
  • 2.Cook and stir bacon in large skillet on medium heat until crisp. Remove from skillet, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels. Meanwhile, cook and stir hash browns and vegetables in drippings 10 min.
  • 3.Spread vegetable mixture onto bottom of 13x9-inch baking dish sprayed with nonstick cooking spray. Whisk eggs and sour cream until blended; pour over vegetable mixture. Top with bacon and Velveeta®.
  • 4.Bake 40 min. or until center is set and casserole is heated through.

1 link smoked pineapple-bacon chicken sausage, cut into slices
1 tablespoon canola oil
1 teaspoon butter
2 ½ cups frozen hash brown potatoes, thawed

½ teaspoon onion powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place bacon in a 10-inch skillet and cook over medium heat, turning occasionally, until crisp, about 10 minutes. Use a slotted spoon to remove bacon to a paper towel-lined small bowl. Discard half the bacon fat using a spoon.
  • Cook sausage in the hot skillet until browned on both sides, about 5 minutes. Remove to the bowl with the bacon.
  • Heat canola oil and butter in the same skillet over medium heat. Add hash browns and onion. Add onion, bell pepper and mushrooms; cook 4 minutes over medium heat, stirring occasionally. Stir in mustard, salt and pepper. In large bowl, beat milk and eggs with wire whisk.

The original recipe is delicious, but this is my healthier version, with less fat and calories. It also freezes beautifully and individual portions can be reheated in 3 minutes in the microwave. As a single person, I can't eat 8 portions at one sitting, so I divide and freeze. But it's great if family visits, because I can have the portions ready to reheat, and it's also great if you're in a hurry in the morning and don't have time to cook before heading off to work.

5 -6 large eggs
1/2-1 lb bacon, cooked and crumbled
1 cup shredded sharp cheddar cheese
1 (1 lb) package frozen hash browns (shredded "or" diced) or 1 (1 lb) package fresh hash brown potatoes (shredded "or" diced)
2 tablespoons vegetable oil
salt
pepper

Steps:

  • Have your bacon cooked and crumbled and set aside.
  • Place vegetable oil (or you can use bacon drippings) in a non-stick 12" skillet and heat over medium heat.
  • Pour potatoes into pan and press down evenly.
  • Fry about 10 minutes until underside is brown and crispy.
  • As carefully as you can flip potatoes over.
  • If you can't do this in one piece, try to do it in thirds or fourths, but try to keep them from falling apart.
  • Press potatoes down in pan evenly.
  • Make 5 to 6 two inch holes, or openings into the potatoes, evenly spaced.
  • Drop an egg into each hole.

  • Bake for 45 minutes. Remove the foil and bake, uncovered, until the top is lightly browned and bubbly, another 15 minutes. Serve hot. (Cooled casserole will keep, covered, in the refrigerator for 3 to 5 days.)
