Beef Chili With Bacon & Black Beans image

I found this recipe in the March, 2003 issue of Cook's Illustrated Magazine. We just love this chili and hope that you will, too! It is best served with the optional condiments, the more variety, the better! The flavor is better if you make it a day or two before and then reheated, which means it makes great leftovers, too ;) Freezes well up to one month.

8 ounces bacon, cut into 1/2-inch pieces (about 8 strips)
2 medium onions, chopped fine (about 2 cups)
1 red bell pepper, cut into 1/2-inch cubes
2 tablespoons garlic, minced
1/4 cup chili powder
1 tablespoon ground cumin
2 teaspoons ground coriander
1 teaspoon red pepper flakes (or to taste)
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper (or to taste)
2 lbs 85% lean ground beef
2 (16 ounce) cans black beans, drained and rinsed
1 (28 ounce) can diced tomatoes with juice
1 (28 ounce) can tomato puree
table salt, to taste
2 limes, cut into wedges
fresh tomato, diced
avocado, diced
scallion, sliced
red onion, chopped
cilantro leaf, chopped
sour cream
shredded monterey jack cheese or cheddar cheese

Steps:

  • Fry bacon in large heavy-bottomed nonreactive Dutch oven over medium heat, stirring frequently, until browned, about 8 minutes.
  • Pour off all but 2 tablespoons fat, leaving bacon in pot.
  • Add onions, bell pepper, garlic, chili powder, cumin, coriander, pepper flakes, oregano, and cayenne; cook, stirring occasionally, until vegetables are softened and beginning to brown, about 10 minutes.
  • Increase heat to medium-high and add half the beef; cook, breaking up pieces with wooden spoon, until no longer pink and just beginning to brown, 3 to 4 minutes.
  • Add remaining beef and cook, breaking up pieces with wooden spoon, until no longer pink, 3 to 4 minutes.
  • Add beans, tomatoes, tomato puree, and 1/2 teaspoon salt; bring to boil, then reduce heat to low and simmer, covered, stirring occasionally, for 1 hour.
  • Remove cover and continue to simmer 1 hour longer, stirring occasionally (if chili begins to stick to bottom of pot, stir in 1/2 cup water and continue to simmer), until beef is tender and chili is dark, rich, and slightly thickened.
  • Adjust seasoning with additional salt.
  • Serve with lime wedges and condiments if desired.

⅓ cup bottled steak sauce
5 slices bacon
1 ½ pounds ground beef
1 (1.25 ounce) package chili seasoning mix
1 teaspoon ground cumin
1 (15 ounce) can kidney beans, drained
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh parsley

Steps:

  • In a large pot over medium-low heat, combine tomatoes, tomato paste, carrot, onion, celery, wine, pepper flakes, bell peppers and steak sauce.
  • While tomato mixture is simmering, in a large skillet over medium heat, cook bacon until crisp. Remove to paper towels. Cook beef in bacon drippings until brown; drain. Stir chili seasoning into ground beef.
  • Stir seasoned beef, cumin and bacon into tomato mixture. Continue to simmer until vegetables are tender and flavors are well blended.
  • Stir in beans, cilantro and parsley. Heat through and serve.

When the weather cools down the first thing I'm making is chili. I'm always on the lookout for a new recipe and when I saw this one from Loveless Café here in Tennessee I had to try it. I tweaked it a little according to what I like and the ingredients I had, so feel free to do the same and enjoy!

1/2 lb bacon, chopped
1 lb ground beef
1 onion, diced
1 1/2 c pinto beans, cooked
1 can(s) small chili beans, undrained
1 can(s) (14.5 oz) diced tomatoes, undrained
1 c salsa- your choice
1 Tbsp chili powder
2 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt

Steps:

  • 1. In a Dutch oven or large saucepan, cook bacon over medium low to medium heat, stirring, until crisp. Remove with a slotted spoon and drain on a plate lined with paper towels. Drain all but 1 Tablespoon bacon grease (don't throw it away- save it to make cornbread, or use in place of oil when browning meat, etc.)
  • 2. Brown ground beef with onions. Drain.
  • 3. Add remaining ingredients and bacon- mix well. Bring to a boil, reduce heat, cover and simmer on low for 20-25 minutes. Serve with frito chips, or cornbread, and top with shredded cheddar cheese, sour cream, or any of your favorite chili toppings. Note: This makes a thick chili, so if you want add tomatoes or other liquid to thin it out.

6 slices bacon
2 pounds ground beef chuck
1 large onion, chopped
1 large green bell pepper, chopped
4 cloves garlic, finely chopped
Kosher salt
1/4 cup chili powder
1 tablespoon ground cumin
2 teaspoons paprika
2 teaspoons dried oregano
2 tablespoons tomato paste
1 12-ounce bottle amber beer
2 tablespoons unsweetened cocoa powder
1 28-ounce can whole plum tomatoes, crushed by hand
1 1/2 cups low-sodium beef broth, plus more if needed
2 15-ounce cans black beans, drained and rinsed
1 tablespoon hot sauce
Shredded cheddar cheese, sliced scallions and/or sour cream, for topping (optional)

Steps:

  • Cook the bacon in a large saucepan or Dutch oven over medium heat until crisp, 6 to 8 minutes per side. Drain on a paper towel-lined plate and let cool, then crumble and set aside. Pour off all but 1 tablespoon of the bacon drippings from the saucepan (reserve the drippings). Increase the heat to medium high, add the beef and cook, breaking up the meat with a wooden spoon, until browned, about 8 minutes. Transfer to a plate using a slotted spoon; wipe out the pan.
  • Heat 1 tablespoon of the reserved bacon drippings in the saucepan over medium-high heat. Add the onion and bell pepper and cook, stirring, until soft, about 5 minutes. Add the garlic and 1 teaspoon salt and cook 2 minutes. Add the chili powder, cumin, paprika, oregano and tomato paste and cook, stirring, until the tomato paste is brick red, about 6 minutes (add a splash of water if the mixture begins to stick). Add the beer and simmer until almost completely reduced, about 3 minutes.
  • Stir in the beef and any juices from the plate; add the cocoa powder, tomatoes, beef broth and beans and bring to a simmer over low heat. Cook, stirring occasionally, until the chili thickens slightly, about 1 hour, 30 minutes.
  • Stir the hot sauce into the chili and season with salt. Add some beef broth if the chili is too thick. Ladle into bowls and top with the crumbled bacon, cheese, scallions and/or sour cream.

1 lb sliced bacon (can use a little less)
1 (4 lb) pork shoulder, cut into 1-inch cubes
2 onions, chopped
1 -2 fresh jalapeno chilie, seeded and chopped
2 tablespoons chopped fresh garlic (heaping tablespoons)
2 teaspoons dried oregano (rubbed between fingers to release flavors)
1/3 cup chili powder (yes 1/3 cup, or to taste)
1 tablespoon cumin (can use more)
1/4 teaspoon cayenne pepper
1 (14 ounce) can beef broth
1 cup brewed coffee
1 cup water
1 (28 ounce) can crushed tomatoes
2 (19 ounce) cans red kidney beans, rinsed and drained
salt and pepper
sour cream
shredded cheddar cheese

Steps:

  • Cook the bacon in a large pot over medium heat until crisp; transfer to paper towels.
  • Drain about half of the bacon fat and leave the rest in the pot.
  • Season the cubed pork with salt and pepper.
  • Add to the pot and brown on all sides; then transfer to a plate.
  • Add in onion, garlic, oregano and jalapenos, and saute until the onions are soft, stirring often (about 3-4 minutes).
  • Add in the chili powder, cumin and cayenne pepper; stir for 1 minute.
  • Return the pork and bacon back to the pot along with any juices from the plate.
  • Add in broth, coffee, water and tomatoes; mix to combine.
  • Simmer uncovered, stirring occasionally until pork is very tender (about 2 hours).
  • Season with salt and pepper to taste.
  • Stir in the beans towards the end of cooking.
  • Serve with sour cream on the side.

Steps:

  • Melt butter in a large pot over medium heat. Add bacon and cook until bacon begins to brown, about 4 minutes. Add onion, cover, and cook until translucent, 4 to 8 minutes. Add garlic; cook and stir for 2 minutes.
  • Increase heat to medium-high. Add ground beef and cook and stir until browned and crumbly, 6 to 10 minutes. Stir in chili powder, paprika, cumin, salt, and cayenne pepper; cook for 2 to 4 minutes. Add tomatoes, beer, tomato sauce, Worcestershire, and hot sauce; stir well.

4 pounds ground turkey
2 large onions, chopped
3 cloves garlic, crushed
2 cups chicken stock
1 cup hot sauce, such as Frank's Hot Sauce
1/2 cup canned chipotles, diced
1/4 cup tomato paste
3 tablespoons chili powder
1 teaspoon ground cumin
1 pound bacon, cooked and chopped

1 ripe avocado, sliced
Tortilla chips, for serving

Steps:

  • Heat the oil in a large pot over medium heat. Add the turkey and cook until the color changes, about 5 minutes. Next add the onions and cook till translucent. Then add the garlic and cook for another 2 minutes. Next add the stock, hot sauce, chipotles, tomato paste, chili powder and cumin. Cook it on very low heat, covered, for about 40 minutes. Add three-quarters of the bacon, saving one-quarter for garnish, and cook for an additional 20 minutes, uncovered. Add salt if needed. Serve topped with the chopped bacon and sliced avocado with tortilla chips.
