Pasta with broccoli recipe. Comforting pasta flavored with garlic, pecorino cheese and olive oil in an easy to make broccoli sauce.

1 pound orecchiette
1 large head of broccoli
6 cloves garlic
1/3 cup olive oil
1/4 cup extra virgin olive oil
1/2 cup pecorino cheese
1/2 tsp chili flakes
2 cups pasta water

Steps:

  • Bring a large pot of salted (2 Tbsp kosher salt per gallon) water to boil. Remove and discard lower stems from broccoli and break into bite size florets. Add florets to boiling water and cook for 8 minutes until tender. When finished, set cooked broccoli aside making sure to not drain boiling water.
  • Cook pasta in boiling water to al dente. While pasta cooks, in a large pan saute 6 cloves of chopped garlic in a 1/3 cup of olive oil over medium-low heat until golden. After golden (about 2-3 minutes) add 1/2 tsp of crushed red pepper flakes to oil.
  • Add the precooked broccoli to the pan and continue to saute for 2-3 more minutes to further soften broccoli. Before draining pasta reserve at least 2 cups of pasta water.
  • Add 1 cup of pasta water to the pan to make the broccoli sauce and cook for 1 minute. Add the pasta into the pan along with a 1/2 cup of grated pecorino. Stir to thoroughly combine and continue to cook for 1 more minute.
  • Taste test the pasta and adjust salt and pepper if necessary. Also, add more pasta water if required to achieve a loose consistency. Remove pan from heat and drizzle the 1/4 cup of extra virgin olive onto the pasta. Serve with more pecorino cheese, crushed red pepper, and extra virgin olive oil. Enjoy!

1 pound broccoli rabe
3 garlic cloves, minced

1/4 cup minced fresh parsley
1/4 cup shredded Parmesan cheese

Steps:

  • Cook linguine according to package directions. Meanwhile, trim 1/2 in. from broccoli rabe stems; discard any coarse or damaged leaves. Rinse broccoli rabe in cold water and cut into 2-in. pieces; set aside., In a large skillet, saute garlic in oil for 1 minute. Add the broccoli rabe, salt, pepper, pepper flakes and 1/2 cup broth. Bring to a boil., Reduce heat; cover and cook for 3-5 minutes or until broccoli rabe is tender. Drain linguine; add to the pan. Stir in parsley and enough remaining broth to moisten the linguine. Sprinkle with cheese.

3-4 cups of broccoli, cut into small pieces

2-4 clove of garlic, minced
1/4 cup grated parmesan cheese (plus extra to serve)
1/2 tbsp butter
1 cup pasta water, reserved from cooking past
salt and pepper to taste

Steps:

  • Cook the pasta and save 1 cup of the pasta cooking water when it is done. While the pasta is cooking, cut the broccoli into bite sized pieces. Heat the oil in a large pan, add the garlic and broccoli, and cook over a medium heat until the broccoli begins to soften. Add the cooked pasta to the pan, along with 1/4 cup of grated parmesan cheese, butter, and the pasta water. Season with salt and better and stir everything to combine. Serve with a sprinkling of extra parmesan on top

1/3 cup extra-virgin olive oil
2 cloves garlic, smashed
1/4 teaspoon red pepper flakes
1/4 head broccoli, sliced into very thin florets, stalk peeled and cut into matchsticks
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
Few tablespoons water or pasta cooking water, if needed
2 cups penne pasta, cooked al dente
Parmesan cheese, for garnish

Steps:

  • In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
  • Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
  • Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
  • Cook's Note: Use pasta water if the pasta was made fresh.
  • Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

1 cup olive oil, or more if needed
2 large heads broccoli, cut in 1-inch florets (about 6 cups)
1 tablespoon kosher salt, plus more for salting the pasta water
8 garlic cloves, roughly chopped
1 pound penne rigate (Penne rigate is my favorite because the ridges give it more texture.)
1/2 cup shredded or grated Parmigiano-Reggiano cheese
2 tablespoons chopped Italian flat-leaf parsley, for garnish

Steps:

  • Heat the water for your pasta while you prepare the broccoli.
  • In a shallow, 10-inch saute pot, heat the 1 cup olive oil over medium-high heat (see Cook's Note). Add the broccoli to the oil and season it with salt. Saute the broccoli for about 4 minutes, or until it takes on a toasty color. The broccoli will absorb a lot of the oil, so if you find your pot getting dry, just add a little more oil to it. Throw in the garlic and cook for about another minute, until it's slightly brown. Don't burn the garlic! Take the broccoli off the heat and set it aside.
  • Prepare the penne according to the package directions. Drain the pasta and toss it in the pot with the broccoli, garlic, and olive oil. If the mixture seems dry, add a little more oil.
  • Toss in the Parmigiano-Reggiano cheese, stir, and garnish with the parsley.

2 bunch broccoli
1 lb(s) (500 g) pasta shells, or other dried pasta shapes
2 Tbsp (25 mL) salt
1 Tbsp (15 mL) olive oil
2 clove garlic, minced
¼ tsp (1 mL) hot pepper flakes
½ cup (125 mL) ricotta or Parmesan cheese

Steps:

  • Bring a large pot of water to a boil. Add salt. Meanwhile, separate broccoli florets from the stalks (or peel the broccoli stems and cut into small cubes.) Add the broccoli to the boiling water and cook until tender but still bright green, about 5 minutes. Remove broccoli with slotted spoon.
  • Add pasta and cook to desired doneness, 8-12 minutes(check package guidelines). Drain reserving 1 cup (250 mL) of the pasta water.
  • In a small skillet, heat olive oil over medium heat and add garlic and hot pepper flakes. Saute until garlic is fragrant, about 1 minute. Add drained broccoli. Mix in ricotta cheese and pasta, until sauce is creamy. If sauce is too dry, add as much pasta water as desired to get a creamy consistency.

1 cup chicken stock
7 ounces angel hair pasta
2 tablespoons water
1 lb broccoli floret
1/2 cup white onion
1/2 lb uncooked medium shrimp, peeled,deveined and halved
1/2 cup fresh dill, chopped
1/8 teaspoon red pepper flakes (more for a bit more kick)

Steps:

  • Put the garlic and stock in a small sauce pan and bring to boil.
  • Reduce the heat to low and cover.
  • Simmer for about 20 minutes or until the garlic is soft enough to mash with a fork.
  • Transfer the contents of the pan to a food processor or blender and puree until smooth.
  • Set aside Bring large pot of water to boil.
  • Add the pasta, stirring to make sure the strands don't stick together, and cook over high heat to desired tenderness.
  • Meanwhile, put 1 Tbs of the water in a nonstick frying pan and bring to a boil over medium.
  • Add the broccoli and onion, reduce the heat to low, cover, and cook for 3 minutes.
  • Add the shrimp, dill, and the remaining Tbs of water.
  • Stir, recover and cook for 4-5 minutes until shrimp is pink.
  • Remove from heat When the pasta is done, drain and return it to the pot over very low heat.
  • Add the garlic puree and mix well to coat the pasta.
  • Add the broccoli shrimp mix and the seasonings.
  • Toss together until well blended and serve immediately.

BROCCOLI SALAD WITH GARLIC AND SESAME

This salad is made from uncooked broccoli tossed with an assertive garlic, sesame, chile and cumin-seed vinaigrette slicked with good extra-virgin olive oil and red wine vinegar.
