BACON-CHEESE GOUGèRES

Don't let the fancy name scare you away from making this easy appetizer.

Number Of Ingredients 9

2 ounces Gruyère cheese, shredded (about ½ cup), divided
2 ounces aged white Cheddar cheese, shredded (about ½ cup), divided
½ cup half-and-half
½ cup unsalted butter
1 cup all-purpose flour
¾ teaspoon kosher salt
⅛ teaspoon ground nutmeg
4 large eggs
3 slices bacon, cooked and finely chopped (about ¼ cup)

Steps:

  • Preheat oven to 425°F. Line two baking sheets with parchment paper, and set aside. Toss together Gruyère and Cheddar in a small bowl, and set aside. Heat half-and-half, ½ cup water, and butter in a small saucepan over medium. Bring to a boil, stirring occasionally. Immediately add flour, salt, and nutmeg, and cook, stirring constantly with a wooden spoon, until mixture forms a ball and bottom of pan has developed a thin film, about 2 minutes. Remove from heat, and transfer dough to a stand mixer fitted with a paddle attachment. Beat on medium-high for 30 seconds to release steam and cool slightly. Decrease speed to medium. With mixer running, add eggs, 1 at a time, beating well after each addition. Continue beating on medium until batter is stiff and glossy, about 5 minutes. Reduce speed to medium-low, and add bacon and 3 ounces of cheese mixture.
  • Transfer dough mixture to a large piping bag fitted with a ½-inch pastry tip. Pipe 1½-inch mounds of dough (about 2 tablespoons) onto prepared baking sheets, spacing at least 1 inch apart. Tap tops of dough with a lightly moistened finger to flatten slightly. (Alternatively, use a 1¾-inch ice-cream scoop to scoop dough onto baking sheet.) Sprinkle dough with remaining cheese mixture (about ½ teaspoon each).
  • Bake 1 pan in preheated oven 10 minutes. Reduce oven temperature to 375°F, and continue baking until golden brown, risen, and puffed, 15 to 18 minutes. Cool gougères on baking sheet for at least 10 minutes. Increase oven temperature to 425°F, and repeat baking procedure with remaining pan of dough. Serve gougères while still warm.

I have not tried this warm yet -- but this fall I will try it warmed up in my mini-crock pot and update then! Cook time of two hours is the time to chil the dip after it is made.

1 (3 ounce) package cream cheese, softened
2 tablespoons diced onions
1/8 teaspoon hot sauce
4 slices bacon, cooked and crumbled
chopped fresh parsley (optional)
blue cheese, crumbles (optional)

Steps:

  • Process first 5 ingredients in a blender or food processor until smooth, stopping to scrape down sides.
  • Stir in half of bacon. Cover and chill 2 hours.
  • Let stand at room temperature 15 minutes before serving.
  • Sprinkle with remaining bacon.
  • Garnish with parsley and crumbles, if desired.

Posting another recipe for the Swiss region of ZWT, so not tested by me. All the ingredients sound wonderful and it is a dip that is served warm with whole crackers.

8 ounces cream cheese
1/2 cup ranch salad dressing
4 ounces swiss cheese, shredded
2 tablespoons green onions, slices
8 bacon, slices crisp-cooked (drained and crumbled)
1/2 cup crushed buttery cracker

Steps:

  • In a small saucepan (or could use microwave), combine cream cheese, ranch dressing, swiss cheese and green onion slices. Heat until cheese is melted; stirring constantly until smooth. Place in a small bowl.
  • Sprinkle with bacon and crushed crackers. Serve with whole crackers.

4 slices bacon
1 (8 ounce) package cream cheese with chives and onions, softened
1 cup mayonnaise
8 ounces swiss cheese
2 green onions, finely chopped
fresh coarse ground black pepper, to taste (optional)
1/4 teaspoon garlic powder
4 round buttery crackers, crushed

Steps:

  • Place bacon in a large skillet.
  • Cook over medium-high heat until evenly brown.
  • Drain, crumble and set aside.
  • In a small bowl, mix the cream cheese with mayonnaise until smooth.
  • Stir in Swiss cheese, onions, bacon & garlic powder.
  • Place bowl in microwave, and cook for 2 minutes.
  • Remove and stir well.
  • Return to microwave, and cook 2-4 minutes longer.
  • Sprinkle crushed crackers on top.
  • Serve warm and enjoy!
