SWEET AND SPICY JALAPENO CRANBERRY CHUTNEY

3 cups fresh or frozen cranberries
1/2 cup cane sugar or coconut sugar
1/4 cup maple syrup
1/4 cup orange juice
1-2 diced fresh jalapeños {stems, seeds and ribs removed}
1/4 teaspoon sea salt
Glutino gluten free crackers
8-ounce container dairy free cream cheese
thin slices fresh jalapeño

Steps:

  • In medium saucepan, add cranberries, sugar, maple syrup, orange juice, diced jalapeños and salt. Stir to combine.
  • Place saucepan over medium heat and bring to a simmer. Reduce heat to low and cook cranberry mixture 20 minutes, stirring occasionally. Mash cranberries slightly with potato masher or fork.
  • Remove from heat and pour into glass bowl. Chutney will thicken as it cools.
  • Cover with plastic wrap and place in refrigerator. Chill until ready to serve.
  • To serve, top cracker with dairy free cream cheese, jalapeño cranberry chutney and sliced jalapeños.

Pinch cayenne pepper

Steps:

  • Over medium heat, in wide stainless steel skillet, heat sugar, vinegar and salt, stirring to dissolve.
  • Add chopped apples and cranberries, and increase heat to medium-high. Let fruit cook, uncovered, for 5 to 7 minutes, stirring carefully, until apples are tender but still hold their shape.
  • Add ginger, jalapeño and cayenne, mix gently and cool to room temperature. May be prepared ahead and refrigerated up to 4 days.

Steps:

  • Place half of the orange segments, the zest, and the jalapenos in the food processor and pulse until finely chopped. Add the sugar and pulse 3 to 4 more times. Add the cranberries and continue to pulse until berries are roughly chopped. Adjust seasonings with sugar, if needed. Transfer cranberry mixture to a bowl and toss with the remaining half of chopped orange segments and the mint. Allow relish to chill for at least 30 minutes, and up to 2 days. Serve relish chilled or at room temperature.

1 cup water
1 cup white sugar
3 jalapeno peppers, seeded and minced
2 teaspoons lemon juice
½ cup sherry

Steps:

  • Rinse berries in cold water; drain.
  • In a saucepan, mix water and sugar; stir to dissolve sugar. Bring to boil. Add cranberries, Jalapeno peppers, and lemon juice, and return to boil. Reduce heat and simmer gently for 10 minutes, stirring occasionally. Add sherry and stir well. Remove from heat and let cool completely at room temperature.
  • Refrigerate in a glass container with cover. Serve with turkey or chicken.

8 ounces crushed pineapple, juices squeezed out and reserved
6 ounces apricot preserves
2 tablespoons sugar
1 tablespoon white vinegar
1/2 teaspoon molasses
1/4 teaspoon salt
1 garlic clove, minced
1 dash red pepper flakes
1 dash onion powder
1 dash garlic powder

Steps:

  • Saute the jalepeno in a small amout of oil until translucent, add garlic and saute 2 minutes more.
  • Dump in the remaining ingredients except pineapple juice.
  • Stir to combine.
  • Add some of the pineapple juice to get the consistency you want.
  • Simmer 15 min to combine flavors.
  • Cool and refrigerate.
