RANCH PASTA SALAD WITH BACON

Ranch Pasta Salad With Bacon image

A delightful pasta salad with the great taste of bacon, cheddar cheese and a creamy sauce made from a packet of ranch dressing. My coworkers ask me to bring this to covered luncheons often. Time does not include chill time.

Time 25m

Yield 8-10 serving(s)

Number Of Ingredients 10

10 slices bacon
1 cup mayonnaise
1 (1 ounce) packet dry ranch dressing mix
1/4 teaspoon garlic powder
1/2 cup milk (more, if needed)
1 large tomatoes, chopped or 15 grape tomatoes, cut in half
1 (3 ounce) can sliced black olives
1 cup sharp cheddar cheese, shredded
salt and pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Stir in rotini pasta and cook for 10 to 12 minutes or until al dente, drain.
  • Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain and chop.
  • In a large bowl, mix mayonnaise, ranch dressing mix and garlic powder. Stir in milk until smooth. Add bacon, tomato, black olives and cheese and toss to coat with dressing. Season with salt and pepper to taste.
  • Cover and chill at least 1 hour in the refrigerator. Toss with additional milk if the salad seems a little dry.

6 slices bacon, diced
1 tablespoon butter
2 boneless skinless chicken breast halves, cut into bite-size pieces
2 tablespoons all-purpose flour
1 (1/2 ounce) packet ranch dressing mix

salt and pepper

Steps:

CHEESY BACON RANCH PASTA SALAD

Cheesy Bacon Ranch Pasta Salad image

Working at a pizza shop in high school, I loved a recipe similar to this. After years of trying to duplicate it, I think I've come about as close as I'm going to get, and I love it. There are many variations on ingredients that will make it healthier, but I suggest trying the original first since it is sinfully delicious.

Time 20m

Yield 8 serving(s)

Number Of Ingredients 5

1 (20 ounce) package cheese tortellini
1 lb bacon
1 pint cherry tomatoes
1 (8 ounce) package cheddar cheese, shredded
1 cup ranch dressing (more may be used according to personal preference)

Steps:

  • Slice bacon into thin strips (1/2 - 1 inches in width). Separate slices and place into a preheated frying pan.
  • While bacon is browning, prepare the tortellini's according to the package's directions. When the tortellini's are fully cooked, run under cool water, drain, and set aside to cool.
  • When the bacon is fully cooked, carefully drain the grease and spread the bacon pieces onto paper towels to remove excess grease. Set aside to cool.
  • Slice the tomatoes in half.
  • In a large bowl, combine the tortellini's, bacon, tomatoes, cheese and ranch dressing. Stir to combine.
  • Cover and refrigerate at least one hour, but as much as 2 days.
  • When ready to serve, you may add the extra ranch dressing if you wish.

  • Gently fold in peas last.
  • Chill for several hours and serve chilled or at room temperature.
  • Refresh salad if needed with a tiny bit of mayo, but it usually doesn't need it.
  • Garnish top with more bacon bits pieces. You can never have too much bacon.
