CARAWAY BREAD
A rustic round loaf of caraway bread is delicious eaten warm from the oven, as a base for sandwiches, alongside soup, or as toast. Steps:
- In a small bowl, dissolve yeast in warm water. In a large bowl, combine caraway seeds, salt, honey, yeast mixture, whole wheat flour and 1-1/2 cups all-purpose flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Grease a 15x10x1-in. baking pan; sprinkle with cornmeal. Punch down dough. Turn onto a lightly floured surface. Shape into a round loaf; place on prepared pan. Cover with greased plastic wrap and let rise in a warm place until almost doubled, about 30 minutes. Preheat oven to 425°., Using a sharp knife, cut a large "X" in top of loaf. Bake on a lower oven rack 20-25 minutes or until golden brown. Remove from pan to a wire rack to cool.

BACON & CARAWAY CRUSTY BREAD
I got the inspiration to make this bread from a recipe in a cookbook called "The Complete Book of Irish Country Cooking" by Darina Allen. In my recipe I added some extra ingredients like the Bacon and an egg, and omitted others like the salt, because of the added bacon, I also increased the flour amount because I used a winter Wheat flour which is lighter than traditional All purpose flour. The results was AWESOME, & VERY TASTY AND FLAVORFUL FROM THE ADDITION OF THE REAL BACON BITS. I knew it would compliment the hearty Beef Stew that I had just made using left over Sirloin Tip Roast.

- PLEASE NOTE: The ingredients used in this recipe are WHAT I CHOSE TO USED to create this bread, it is DIFFERENT from the ORIGINAL recipe. In lieu of a blender or mixer, I used my hands, like my mama always made her biscuits. But use what you like. If you are NOT USING WHITE LILY FLOUR OMIT THE ADDITIONAL 1/2 CUP OF FLOUR.
- PREHEAT OVEN TO 450 DEGREES F. In a large mixing bowl add the flour, baking soda, sugar and caraway seeds. Make a well in the center of the flour.
- Add the softened butter, buttermilk, egg, & bacon bits. Then blend with hand or mixer until dough comes together. Shaping into a ball as you go. I show the whole stick but I used 6 Tablespoons.
- Spray a large baking pan or skillet with non stick spray & set aside till needed. I kneaded the bread dough IN THE PAN & shaped it into a large ball, YOU CAN ADD FLOUR TO THE COUNTER & DO THE SAME THING, then placed it on the prepared baking sheet.
- Make a deep cross or plus sign in the bread, beginning from one side and going to the other,[THIS ALLOWS THE STEAM TO ESCAPE AS IT BAKES] then spray top with non stick cooking spray, I used Butter flavored cooking spray.
- Place in preheated 450 degrees F. oven and bake for 15 minutes, then REDUCE TEMPERATURE TO 400 DEGREES F. and continue baking for an additional 30 minutes, or until bread sounds hallow when tapped on the bottom. Remove from oven.
- Slice as desired. I chose to use an ELECTRIC KNIFE FOR EASIER SLICING. ADD BUTTER IF DESIRED & ENJOY.

We enjoy cheese in a variety of ways. In this savory bread, cheddar cheese blends beautifully with just the right amount of caraway.

- Preheat oven to 375°. In a large bowl, combine the first 6 ingredients. In another bowl, combine remaining ingredients. Stir into dry ingredients just until moistened. , Pour into a greased 9x5-in. loaf pan. Bake until a toothpick comes out clean, 30-35 minutes. Cool 10 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers.

LITHUANIAN CEPELINAI: POTATO DUMPLINGS WITH MUSHROOM SAUCE & BACON

- Divide the potatoes into 2 batches. Chop one batch into large chunks and boil for 15-20 mins until tender, then drain and mash. Finely grate the remaining potatoes using the smallest blade on a grater and tip into a large bowl lined with a clean tea towel. Bring the edges of the tea towel together and squeeze tightly to expel any liquid; keep 2 tbsp of this juice and discard the rest. In another large mixing bowl, add the reserved potato juice, the grated potato, mashed potato and half of the beaten egg. Beat everything together well, season, set aside to cool, then chill while you prepare the filling.
- Mix together the shallot, pork mince, caraway seeds, garlic, remaining egg and some seasoning.
- Mix 1 tbsp of flour into your potato mixture and divide into 8. Dust the work surface with flour and make sure there is flour on your hands too, as the mixture can be quite sticky. Lightly shape the potato dough into flat round patties, approximately 1cm thick. Put 1 heaped tsp of the pork filling in the middle of each patty, then gently pull the dough up and around to encase the pork and form a dumpling. Roll them in your hands to achieve the signature zeppelin shape. Repeat with the rest of the patties and filling.
- Bring a large saucepan of water to a rolling boil, then reduce the heat to a simmer. Carefully lower in the dumplings, cover and simmer gently for 30 mins. Keep an eye on this - the water must not boil or the dumplings won't hold their shape.
- Meanwhile, grill the bacon until crisp, then chop into very small pieces and set aside. To make the sauce, pour 100ml of boiling water over the dried porcini and leave to stand for 5 mins. In a saucepan, heat the butter and add the shallots, frying gently until they are soft and translucent. Add the chestnut mushrooms and cook for 5 mins more. When they are cooked, pour in 1 tbsp of the liquor from the porcini and discard the rest. Chop the porcini and add them to the pan. Fold in the crème fraîche, bring to a simmer, then season.
- Put 2 dumplings on each plate and pour over the mushroom sauce. Sprinkle the dill and bacon pieces over just before serving with green veg and crusty bread to mop up the sauce.

THE GREAT BRITISH BACON BUTTY - BACON SANDWICH
The news is out - scientists at my old university, (Leeds University in West Yorkshire) have discovered the PERFECT way to make a "Bacon Butty", that quintessential British sandwich, and they have devised a mathematical formula for it!! The bacon butty is one of my FAVOURITE sandwiches of all times.......especially when doused in HP Sauce or Worcestershire Sauce! Here is my method - it's hardly a recipe, more of an idea and an assembly job! I have posted their mathematical formula at the end of the recipe - my formula is: Eat your bacon butty whilst it's still hot and crispy!! Please increase the quantities as needed. I like to use smoked bacon, but any good quality dry cure bacon will be fine.

Steps:
- Cook the bacon under a preheated oven grill for seven minutes at about 240C/475F - turning half way through the cooking time.
- Cook until crispy, but not burnt or too dry.
- (You can also fry the bacon in a pan if you wish).
- Butter the two slices of bread and place the grilled or fried bacon inside the two slices of bread to make a sandwich.
- Add sauces to taste.
- Enjoy!
