1 package (8 ounces) cream cheese, softened
1 cup finely shredded cheddar cheese
1/2 teaspoon pepper
1 cup finely chopped broccoli florets
6 bacon strips, cooked and crumbled

Steps:

  • Beat cream cheese, cheddar cheese and pepper until blended. Stir in broccoli. Shape into a ball; roll in bacon to coat. Wrap in plastic; refrigerate until serving. , Remove from refrigerator 15 minutes before serving. Serve with crackers.

8 ounces cavatappi or other corkscrew pasta
4 cups broccoli florets (about 8 ounces)
2 tablespoons unsalted butter
4 slices Canadian bacon (about 4 ounces), chopped
4 scallions, chopped (white and green parts separated)

2 teaspoons dijon mustard
1 cup 2% milk
1 1/2 cups shredded reduced-fat cheddar cheese (about 6 ounces)
1/4 cup grated parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the broccoli during the last 3 minutes of cooking. Reserve 1 cup cooking water, then drain.
  • Meanwhile, melt the butter in a large saucepan over medium heat. Add the Canadian bacon and cook, stirring occasionally, until golden and slightly crisp, about 5 minutes. Transfer to a paper towel-lined plate using a slotted spoon; reserve the drippings in the pan.
  • Add the scallion whites, 1/4 teaspoon salt and a few grinds of pepper to the saucepan. Cook until slightly softened, 1 minute. Whisk in the flour and mustard; cook, whisking, until the flour is lightly toasted, about 2 minutes. Whisk in the milk and reserved pasta water. Cook, whisking, until slightly thickened, about 5 minutes. Add the cheeses; cook, whisking, until creamy, about 2 more minutes.
  • Stir the pasta, broccoli and Canadian bacon into the cheese sauce. Season with salt and pepper. Serve topped with the scallion greens.

1 cup finely chopped broccoli florets
4 slices OSCAR MAYER Bacon, chopped
1 small yellow onion, chopped
1 egg, beaten
1/2 cup canned french-fried onions, coarsely crushed
3/4 cup KRAFT Finely Shredded Cheddar Cheese

Steps:

  • Heat oven to 400ºF.
  • Prepare Dinner in large saucepan as directed on package, adding broccoli to the Macaroni cooking water for the last 2 min. Meanwhile, cook bacon and yellow onions in large skillet on medium heat 8 to 10 min. or until bacon is crisp.
  • Add bacon mixture to prepared Dinner along with the egg; mix well. Spoon into 36 mini muffin pan cups sprayed with cooking spray, adding about 2 Tbsp. to each. Top with fried onions and shredded cheese.

1 (12 ounce) package farfalle (bow tie) pasta
7 slices bacon
1 onion, diced
3 cloves garlic, minced
1 cup heavy cream
3 tablespoons butter, divided
1 cup shredded Gouda cheese
salt and ground black pepper to taste
½ cup panko bread crumbs
½ cup riced broccoli

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a casserole dish.
  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving bacon grease in the skillet. Let bacon cool enough to handle, about 5 minutes; crumble and set aside. Drain cooked pasta and set aside.
  • Heat 2 tablespoons bacon grease in a medium saucepan over medium heat. Saute onion and garlic in the hot grease for 2 to 3 minutes. Add crumbled bacon, heavy cream, and 1 tablespoon butter; continue cooking until sauce becomes thick and creamy, 5 to 7 minutes. Mix in gouda cheese and stir until melted. Season with salt and pepper. Remove from heat and mix pasta into the cream sauce. Pour mixture into the prepared casserole dish.
  • Melt remaining 2 tablespoons butter in a medium, microwave-safe bowl in a microwave for 20 seconds. Mix in panko bread crumbs and riced broccoli; stir very well to coat in butter. Spread mixture on top of pasta.
  • Bake in the preheated oven for 15 minutes. Remove from the oven.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Continue to bake in the preheated oven until crumble is browned, about 5 minutes more.

1 (8 ounce) package Philadelphia Cream Cheese, softened
1 cup finely shredded cheddar cheese
1/2 teaspoon pepper
1 cup finely chopped broccoli floret
6 bacon, strips cooked and crumbled
assorted cracker

Steps:

  • 1. In a bowl, beat cream cheese, cheddar cheese and pepper until blended. Stir in broccoli. Shape into a ball and roll in bacon. Cover and refrigerate.
  • 2. Remove from the refrigerator 15 minutes before serving. Serve with crackers.
  • My Note: I used 3/4 teaspoons fresh ground garlic pepper instead and also as others had suggested added the bacon to the cheese ball, then rolled it in parsley before serving.
  • I like to grate cheddar cheese because it mixes into the cream cheese better. I also just mix the bacon pieces into the ball, that way every one gets bacon with their cheese.
  • I made this as one on my appetizers for a large group. it was very good. Most cheese balls are rolled in nuts preventing allergy sufferers from having some. This was great because these people could actually enjoy this appetizer. I would recommend it to others.
  • I served this with 2 other appetizers so it didn't get all eaten but it was over half gone. I did steam the broccoli first just because I prefer the flavor of cooked to raw. I also added some Mrs. Dash garlic and herb seasoning and paprika just to add a little spice.

¼ cup cider vinegar

Steps:

  • Toss broccoli, cooked bacon, Cheddar cheese, and onion together in a resealable container. Mix mayonnaise, sugar, and cider vinegar together in a separate container until well blended. Refrigerate both until chilled, 30 minutes or up to 1 week.
  • Just before serving, add dressing to the salad and toss to coat.

6 slices bacon
2 -3 cups pasta, any type
1 cup frozen broccoli (thawed)
1/4 cup shredded provolone cheese
1/2 cup skim milk
3 -4 tablespoons flour
salt & pepper
breadcrumbs (optional)
parmesan cheese (optional)

Steps:

  • Preheat oven to 375.
  • Boil water to cook pasta.
  • While water is boiling, fry bacon strips.
  • Set aside on paper towel to drain.
  • After pasta is cooked, drain and set aside in a casserole dish.
  • Crumble bacon& stir into pasta.
  • Also stir in broccoli.
  • Over medium heat, heat milk in a saucepan& slowly stir in flour until smooth& slightly thickened.
  • Stir in cheese until mostly melted& remove from heat.
  • Pour over pasta mixture and stir until all ingredients are well mixed.
  • Salt and Pepper to suit personal taste& if desired, sprinkle breadcrumbs and parmesan cheese over casserole before baking.
  • Bake for 10-15 minutes, and let cool 5 minutes before serving.
