BARBECUE BEEF, BACON, BEAN CASSEROLE

- STIR all of the sauce ingredients together in a heavy-bottomed saucepan over medium high heat. Stir frequently until the mixture reaches a boil. Boil for one minute, remove from the heat and set aside.
- PREHEAT the oven to 325°F.
- STACK the two pounds of bacon and cut across the slices making ½-inch wide strips. In a large skillet, fry the bacon, stirring frequently, until crisp and brown. Use a slotted spoon to transfer the bacon to a paper towel lined plate. Drain the bacon grease from the pan.
- PLACE the pan back over medium high heat and break up the ground beef into it. If using the onion, add it at this point. Continue breaking it up with a spoon as you cook it until the beef is browned. If necessary, drain any excess fat away from the meat. In a large mixing bowl, stir together the sauce, beef, bacon, and beans until well combined.
- DIVIDE the mixture between a 9-inch by 13-inch by 2-inch pan and an 8-inch by 8-inch by 2-inch square pan. Bake (uncovered) for 1 hour or until very bubbly and hot all the way through.
- To Make in the Slow-Cooker:
- SPRAY the bowl of a slow-cooker crock insert with non-stick cooking spray.
- POUR the mixture into the insert, cover, and cook on LOW for 4 to 6 hours or until very bubbly and hot all the way through.
- STORE leftovers tightly covered in the refrigerator or divide into individual meal sized portions and freeze in an airtight container for up to 6 months. Reheat with a dash of water in a covered saucepan or in the microwave.

Bacon, Beef & Bean Casserole is a hearty casserole that's great over potatoes or served up on hamburger buns! It makes a wonderful main dish for any occasion!

- Preheat oven to 350 degrees F. Coat a 2-quart casserole dish with non-stick cooking spray.
- Heat a large skillet over medium heat. Place 8 bacon slice halves in the skillet and cook until crispy, turning once, about 7 minutes. Remove to a paper towel lined plate to drain. Once cool, crumble the bacon.
- Reserve 1 tablespoon bacon fat, and discard the rest. Add onion to the hot bacon fat in the skillet, and cook for 5 minutes, or until onions become soft and translucent. Add ground beef to onions, break apart ground beef and cook until beef is no longer pink, about 8 minutes.
- In a large mixing bowl, combine pork and beans, tomatoes, brown sugar, mustard, salt, and pepper. Add crumbled bacon and beef mixture to the large bowl. Stir to combine.
- Pour bacon, beef, and bean mixture into the prepared casserole dish. Lay remaining 4 bacon strip halves on top of the beef mixture.
- Cover the dish with tin foil, and bake for 45 minutes. After baking has finished, carefully remove foil, and set oven to broil. Cook until bacon on top is crispy, about 3 to 5 mins.
- Serve hot over mashed potatoes or spoon onto burger buns and top with a slice of cheese.

- Preheat the oven to 350 degrees F. Spray a 9 x 13 inch casserole dish with cooking spray.
- In a large saucepan, brown the ground beef, onions and bell peppers. Add the pork and beans, barbecue sauce, ketchup, mustard, worchestershire sauce, soy sauce, and brown sugar to the mixture. Simmer for 5 minutes. Transfer the mixture to the prepared casserole dish. Sprinkle the bacon over the top of the casserole. Cover the dish with foil and bake for 45 minutes. Remove the foil and continue to bake for an additional 10 minutes. Let the casserole stand for 10 minutes before serving.

- Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- Saute onion in bacon fat; add the brown sugar, mustard, garlic powder, salt and vinegar. Cook covered on low heat 20 minutes.

- Brown bacon. Add onion and cook while you get other ingredients ready. Drain half or more of juice from each can of beans, except for pork and beans. Combine all ingredients in very large casserole dish. Stir in the bacon and onion. Bake, uncovered, for 1 hour at 350°F Can also add cut up smoked kielbasa, sliced pepperoni or cooked italian sausage prior to cooking in oven. I've also done this in the crockpot instead of the oven by cooking for 8-10 hours on low.

- Cut steak into 2.5cm (1 inch) cubes. Wrap the bacon in absorbent paper & cook in the microwave for 2 minutes. Chop.
- Coat a large pan with cooking spray, heat & cook onions and garlic until onions are slightly browned. Add steak & cook, stirring, until well browned.
- Stir in wine, tomato paste, water & stock cubes. Simmer, covered for 45 minutes.
