Homemade Baked Beans with Bacon (Southern) image

(Recipe video above) Southern baked beans in a thick savoury sauce with a touch of sweet and hint of tang. Loaded with BACON! Serve as a side, or have it for breakfast with bacon and eggs. It even makes a hearty meal itself - great for slopping up with bread!

Provided by Nagi

Categories     Side

Time 1h25m

Number Of Ingredients 14

1 tbsp oil
150g/ 5 oz bacon (, chopped)
1 medium onion (, finely chopped)
3 cloves garlic (, minced (or 1 1/2 tsp garlic paste))
3 x 400g / 14oz cans red kidney or other beans, drained and rinsed ((Note 1))
3/4 cup ketchup ((Note 2))
3/4 cup tomato passata / US tomato puree ((Note 3))
1/4 cup molasses ((Note 4))
2 tbsp cider vinegar
3/4 cup water
2 tsp mustard powder ((or 1 tbsp Dijon or American mustard))
1 1/2 tsp Worcestershire sauce
1/2 tsp cayenne pepper
3/4 tsp EACH salt & pepper (, plus more to taste)

Steps:

  • Heat oil over high heat (can skip oil if bacon is super fatty). Add bacon and cook for 2 minutes.
  • Add onion and garlic. Cook for 3 minutes until onion and bacon are golden.
  • Add remaining ingredients. Stir, bring to simmer, then place lid on.
  • Then either turn down heat to medium low (simmering gently) and cook on the stove for 1 hour, stirring every now and then so the bottom doesn't catch. OR bake at 160°C/325°F for 60 minutes.
  • SLOW COOKER option: Reduce water to 1/4 cup, transfer to slow cooker and cook for 6 hours on low.
  • The sauce should be thickened (cook with lid off for a bit if not thick enough) and glossy. Adjust salt and pepper to taste at the end. See notes for serving suggestions!

BAKED BEANS WITH BAKED BACON

Baked Beans With Baked Bacon image

This combines Recipe #187790 and Recipe #29709, with tweaks (like doubling the bacon). Made for July 4th party. It tastes so good, with a big wallop of flavor, I don't feel guilty about starting with Bush's Homestyle Baked Beans.

Provided by KateL

Categories     Pork

Time 1h25m

Yield 10 serving(s)

Number Of Ingredients 5

1 lb applewood-smoked bacon
2 (28 ounce) cans brown sugar baked beans (Bush's Homestyle)
1/3 cup ketchup
1/8-1/4 teaspoon garlic powder
1 small onions or 1 medium onion, chopped

Steps:

  • BAKED BACON:.
  • Preheat oven to 375°F.
  • Line a half sheet with aluminum foil and put a cooling rack on top. Arrange slices in rows, with fat edges slightly overlapping lean edges.
  • Bake 375 degrees without turning 20-25 minutes (depending on thickness) but remove from oven before it begins to crisp. If needed, cook more, 2 minutes at a time.
  • Remove bacon to double layer of paper towel and blot excess grease.
  • Lay bacon on cutting board and cut into bite-size pieces before completely cool. (I cut across the entire pile of bacon with one slice.).
  • BAKED BEANS:.
  • Set oven to 350°F.
  • Mix the Baked Beans ingredients in a 3-quart casserole dish or half buffet tray. Add the cut-up cooked bacon and mix a little.

BACON BAKED BEANS

Bacon Baked Beans image

These bacon-y, beefy baked beans are all that and a bag of chips. It is a super easy recipe, but this side dish will put you down in history at your summer barbecues this year!

Provided by Karen

Categories     Side Dish

Time 1h15m

Number Of Ingredients 9

1 pound ground beef (90% lean *)
1 pound bacon
1 medium yellow onion (chopped)
1 28-oz can baked beans ((I used Bush's Original))
1 15-oz can pork and beans
2 30-oz cans black beans (drained and rinsed)
1 cup barbecue sauce (I used Sweet Baby Rays)
1/4 cup yellow mustard
2 tablespoons Worcestershire sauce

Steps:

  • Brown the ground beef in a large skillet. Remove to a large bowl and discard the fat.
  • In the same skillet, cook the bacon. You can either chop it beforehand or crumble it afterward. Remove to a paper-towel lined plate. Discard all but 1 tablespoon of bacon grease from the pan.
  • Preheat the oven to 400 degrees F.
  • Saute the onions until they are translucent, about 5-8 minutes.
  • in a large bowl, combine ground beef, bacon, onions, baked beans, pork and beans, black beans, barbecue sauce, mustard, and Worcestershire sauce. Taste it. Add more BBQ sauce if you want.
  • Spread the beans into a 9x13 inch pan. Bake at 400 for 30 minutes.
  • Turn the oven down to 350 and cover the beans with foil. Bake for another 20-30 minutes.
  • I like mine extra crispy on top, so I broil them for a couple minutes, but that's not necessary unless you like slightly burned beans. (I mean who doesn't.) Serve hot!

  • Fill a large pot with water. Pour in navy beans, cover top, and soak for 8-12 hours. I soak mine overnight.
  • Drain beans, rinse to remove excess starch, discard water. In a large stockpot, bring 8 cups water and beans to a boil. Reduce heat to slow boil; cook 1½ hours uncovered. More water may be added if needed.
  • Drain beans over bowl; save cooked bean water. Return beans to an oven-safe stockpot or a large oven-safe casserole dish.

  • In a large pot, cover the beans with 2 inches of water and bring to a boil. Simmer over low heat, stirring occasionally, until just tender, about 2 hours; add water as needed to keep the beans covered by 2 inches. Season the beans with salt and let stand at room temperature for 5 minutes. Drain the beans, reserving 4 cups of the cooking liquid. Transfer the beans to a large, deep baking dish.
  • Preheat the oven to 350°. In a large skillet, cook the bacon strips over moderate heat until the fat has rendered, 5 minutes. Add the onion and cook over moderately low heat, stirring occasionally, until softened, 10 minutes. Stir in the apple cider vinegar, brown sugar, molasses, crushed red pepper, black pepper and 1 1/2 tablespoons of kosher salt and simmer for 1 minute, until the sugar is dissolved. Pour the bacon-onion mixture over the beans and stir in the reserved bean cooking liquid. Cover the beans with foil and bake for 45 minutes.
  • Meanwhile, in a small bowl, mix the maple syrup with the red wine vinegar and mustard. Arrange the remaining 8 bacon slices on a rimmed baking sheet, and generously brush them with the maple syrup mixture. Bake the bacon in the same oven as the beans for about 15 minutes, basting 3 times and turning the bacon twice, until richly glazed. Transfer the bacon to a plate.
  • Carefully pour 1/3 cup of water onto the baking sheet and return it to the oven for about 3 minutes to dissolve the caramelized syrup. Uncover the beans and carefully stir in the syrup. Bake the beans, uncovered, for about 20 minutes longer, until the liquid has reduced by about one-fourth.
