The easiest tastiest Frittata recipe! It's made with plenty of eggs, rich bacon, vibrant brightly flavored tomatoes, fresh spinach and creamy Swiss cheese. What more could you want for breakfast?

8 oz. bacon, (chopped (8 slices))
3 oz. fresh spinach, (roughly chopped (3 packed cups))
8 large eggs
1/4 cup half and half
1/2 tsp onion powder
1/4 tsp garlic powder
Salt and freshly ground black pepper, (to taste)
1 cup grape tomatoes, (halved)
2/3 cup (2.8 oz) shredded swiss cheese

Steps:

  • Preheat oven to 350 degrees. Butter a 9 - 10 inch deep pie dish, set aside.
  • Place bacon in a 12-inch non-stick skillet and cook over medium-high heat, tossing frequently, until browned and crisp, about 6 - 10 minutes.
  • Transfer bacon to a plate lined with several layers of paper towels to drain, leave 1 Tbsp rendered bacon fat in a skillet drain and reserve or discard excess.
  • Return skillet to medium-high heat, add spinach and saute just briefly until it has wilted, about 15 - 30 seconds, transfer spinach to plate with bacon.
  • In a large mixing bowl whisk together eggs, half and half, onion powder, garlic powder until well combined. Season with salt and pepper to taste*.
  • Add cooked bacon, tomatoes, spinach and swiss and toss mixture to distribute ingredients. Pour into prepared pie dish.
  • Bake in preheated oven until just set, about 30 - 35 minutes. Cut into wedges and serve warm.

5 slices bacon
6 eggs
1 cup milk
2 tablespoons butter, melted
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup chopped green onions
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11-inch baking dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble.
  • Beat eggs, milk, butter, salt, and ground pepper in a bowl; pour into prepared baking dish. Sprinkle with onions, bacon, and Cheddar cheese.
  • Bake in preheated oven until a knife inserted near the center comes out clean, 25 to 30 minutes.

Roasted Vegetable Frittata image

1 small zucchini, 1-inch-diced
1 red bell pepper, seeded and 1 1/2-inch-diced
1 yellow bell pepper, seeded and 1 1/2-inch-diced
1 red onion, 1 1/2-inch-diced
1/3 cup good olive oil
Kosher salt and freshly ground black pepper
2 teaspoons minced garlic (2 cloves)
12 extra-large eggs
1 cup half-and-half
1/4 cup freshly grated Parmesan cheese
1 tablespoon unsalted butter
1/3 cup chopped scallions, white and green parts (3 scallions)
1/2 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 425 degrees.
  • Place the zucchini, peppers, and onion on a sheet pan. Drizzle with the olive oil, sprinkle with 1 1/2 teaspoons salt and 1/2 teaspoon pepper, and toss well. Bake for 15 minutes. Add the garlic, toss again, and bake for another 15 minutes. Remove from the oven and turn the oven to 350 degrees.
  • Meanwhile, in a large bowl, whisk together the eggs, half-and-half, Parmesan, 1 teaspoon salt, and 1/2 teaspoon pepper.
  • In a 10-inch ovenproof saute pan, melt the butter and saute the scallions over medium-low heat for 1 minute. Add the roasted vegetables to the pan and toss with the scallions. Pour the egg mixture over the vegetables and cook for 2 minutes over medium-low heat without stirring. Transfer the pan to the oven and bake the frittata for 20 to 30 minutes, until puffed and set in the middle. Sprinkle with the Gruyere and bake for another 3 minutes, until the cheese is just melted. Cut into 6 or 8 wedges and serve hot.

12 ounces applewood-smoked bacon, cut into 1/2- to 3/4-inch pieces
1 cup sliced shallots
12 cups (packed; 12 ounces) assorted coarsely chopped greens (such as kale, chard, and mustard greens)
12 large eggs
1/2 teaspoon kosher salt
1 cup freshly grated Parmesan cheese, divided
12 ounces fresh whole-milk ricotta cheese (about 1 3/4 cups)

Steps:

  • Preheat oven to 350°F. Cook bacon in 12-inch-diameter ovenproof nonstick skillet over medium-high heat until crisp. Using slotted spoon, transfer bacon to paper towels to drain. Pour bacon drippings into bowl; reserve. Return 2 tablespoons drippings to skillet. Add shallots and sauté over medium heat until golden, about 4 minutes. Add half of greens and toss until beginning to wilt, about 1 minute. Add remaining greens and sauté until wilted, tender, and dry, about 15 minutes. Transfer greens to plate; cool.
  • Rinse and dry skillet. Beat eggs and salt to blend in large bowl. Whisk in 3/4 cup Parmesan, then greens and half of bacon. Stir in ricotta, leaving some clumps. Heat 1 tablespoon reserved drippings in skillet over medium heat. Pour in egg mixture; spread greens evenly. Sprinkle remaining bacon and 1/4 cup Parmesan over eggs. Cook over medium heat until frittata is just set at edges, about 10 minutes. Transfer to oven and bake until just set, about 20 minutes. Cut around frittata to loosen; slide out onto platter. Let cool 30 minutes. Slice into wedges and serve.

Egg Fritatta with Bacon, and veggies. Substitute whatever veggies you have in the refrigerator if you'd like. I came up with this recipe while having a serious craving (yes im preggers) for fritatta but did not like any of the ones I came accross in cookbooks that I have. My 3 year loves this, mainly because the veggies are chopped so he has no idea. I served it with ketchup and it was a hit!

7 eggs
1 cup milk
1 tablespoon italian seasoning
1 onion, chopped
1 small green pepper, chopped
1/2 cup cherry tomatoes, quartered
2 medium red potatoes, peeled and cubed
2 tablespoons olive oil
4 slices bacon
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook bacon in pan and set aside.
  • Meanwhile in a separte pan cook chopped onion in olive oil.
  • Place potatoes in microwave safe dish and microwave for about 4 minutes.
  • Chop cooled bacon.
  • Preheat broiler.
  • In a Broiler safe pan whisk together eggs, milk, italian seasoning, salt and pepper.
  • Add cooked onion, bacon, peppers, potatoes, tomatoes (and whatever other veggies you may want) to pan with egg mixture.
  • Give mixture a good whisk as to get all ingredients blended and cook over medium heat. As egg cooks lift up edges so egg mixture pours into the botton of the pan making sure the ingredients remain even through the mixture (you may have to mix with a spoon).
  • Once the mixture is about 75 % cooked remove from heat and place in broiler for about 5 minutes.
  • Remove from Broiler and cut into pie slices. Place in broiler again for another 5 minutes or until there is a golden brown crispy top.
  • Remove, reslice and let cool for about 5 minutes.
  • Enjoy!

10 slices bacon, thick cut
12 large eggs
3/4 cup whole milk
1 cup sharp cheddar cheese, shredded
1 lb Baby Spinach, washed and torn
1/2 large white onion, diced
1 red bell pepper, julianned
1/2 lb cherry tomatoes, halved
1 dash salt & pepper

Steps:

  • Line a large baking pan with aluminum foil and lay out thick cut bacon.
  • Put in cold oven and cook at 400 degrees for 20-25 minutes until bacon is browned.
  • Allow bacon to cool on paper towels, reserve 3 TBSP of bacon grease for following steps.
  • Preheat oven to 450 degrees.
  • Add bacon grease to cast iron skillet and put over medium heat.
  • Add diced onion and julianned red bell pepper and cook until onion is translucent.
  • Add spinach in two batches to cook it down and let the water out as steam.
  • Meanwhile, crack eggs into a medium sized dish and whisk until frothy.
  • Add whole milk and salt & pepper to taste to eggs and stir.
  • Crumple or chop bacon.
  • Once all spinach has cooked down, add egg mixture to skillet and sprinkle with bacon, halved tomatoes, and cheese.
  • Give mixture a final stir to distribute the ingredients.
  • Don't turn down the heat or stir the egg mixture for 4-5 minutes until the egg mixture is beginning to set.
  • Remove skillet from heat and transfer to oven.
  • Cook until eggs are completely set and edges are browned (15-20 minutes).
  • Let cool slightly before cutting into 8 slices and serving immediately.

a knob of butter
2 leeks , trimmed and sliced
8 rashers back bacon , fat removed and chopped
6 eggs , beaten
250g pack ricotta
100ml single cream
small bunch chives , chopped
salad and crusty bread , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a 20 x 30cm roasting tin with baking parchment. Melt the butter in a frying pan and cook the leeks for 8-10 mins until soft, adding a splash of water if they start to stick, then tip into a bowl. Add the bacon to the pan and fry for 5 mins until crisp. Add to the leeks and leave to cool.
  • Add remaining ingredients to the leeks and bacon, mix well and season. Pour into the lined roasting tin and cook for about 20-25 mins until set. Serve cut into squares with salad and crusty bread.
