2 cups elbow macaroni
1 ¼ cups mayonnaise
5 teaspoons white vinegar
1 ¼ cups diced celery
1 large tomato, diced
5 green onions, finely chopped
½ cup shredded Cheddar cheese
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 (16 ounce) package bacon

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and rinse under cold water until chilled. Transfer macaroni to a large salad bowl.
  • Stir mayonnaise, vinegar, celery, tomato, green onions, Cheddar cheese, salt, and black pepper into macaroni until thoroughly combined. Cover and chill salad at least 2 hours.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Let bacon cool; crumble when cooled.
  • Mix bacon into macaroni salad to serve.

3 cups macaroni, cooked
8 slices bacon, fried and crumbled
1/4 cup onion, finely diced
1/4 cup celery, chopped
1/2 cup cucumber, finely chopped
1/2 cup tomatoes, chopped
1/3 cup mayonnaise
1 tablespoon balsamic vinegar

Steps:

  • Mix cooked macaroni, bacon, onion, celery, cucumber and tomato.
  • Toss with mayonnaise.
  • Add balsamic vinegar. Toss to coat.
  • You could mix the mayo and vinegar first, then put it on , it would ensure even distribution of the vinegar I guess! :).

1/3 cup olive oil
Kosher salt and finely ground black pepper
2 tablespoons white wine vinegar
1 small shallot, minced
8 ounces dried orecchiette
2 cups loosely packed arugula
1 cup torn fresh basil leaves
3 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Put the bacon in a large, cold skillet then cook over medium heat, stirring occasionally, until crisp, about 10 minutes. Transfer to a paper-towel-lined plate to drain. Set aside.
  • Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the arugula, basil and tomatoes to the bowl and toss to combine. Season with salt and pepper and top with the bacon. The pasta salad is best if served right away.

6 large eggs
1 pound macaroni
1 pound good quality bacon
About 1/4 cup grated onion and its juice
1 clove garlic, grated or pasted
1 rounded tablespoon Dijon mustard
About 3 tablespoons white balsamic vinegar or white wine vinegar
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/2 teaspoon hot sauce
1 (4-ounce) jar chopped pimientos, drained
1/2 cup chopped flat-leaf parsley

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the eggs in a small pot and cover with water. Bring to a boil over high heat, cover the pot, turn off the heat, and let the eggs stand for 10 minutes. Submerge the eggs in cold water to shock them. Crack the eggs and soak in the cold water. When cool, peel and chop.
  • Meanwhile, bring a large pot of water to a boil to cook the macaroni. Arrange all but 6 slices of bacon on a slotted baking sheet and put into the hot oven. Bake for 15 minutes, or until bacon is crisp. When cool enough to handle, chop and reserve.
  • Chop the remaining bacon and add to the boiling water along with the macaroni. Cook until the pasta is al dente. Drain, rinse, and discard the boiled bits of bacon from the pasta.
  • While the pasta cooks, add the grated onion, garlic, Dijon, and vinegar to a mixing bowl. Whisk in the extra-virgin olive oil and season with lots of salt, pepper, and hot sauce. Add the pasta, chopped eggs, pimiento, parsley, and chopped crisp bacon pieces. Toss to combine and serve.

2 tablespoons kosher salt
16 ounces spaghetti pasta
1 pound thick-cut bacon or pancetta, chopped
3 tablespoons extra-virgin olive oil
1 cup red onion, diced
1 teaspoon red chili flakes
3 tablespoons garlic, minced
2 cups Roma tomatoes, diced
1/4 cup red wine
4 tablespoons basil, chiffonade
1/4 cup freshly grated Parmesan
Salt and freshly ground black pepper

Steps:

  • In a large stock pot, boil 3 quarts of water, when boiling add 2 tablespoons kosher salt and the pasta and cook until the pasta is al dente.
  • In a large saute pan over medium heat, add bacon and saute until bacon is crispy. Remove bacon to drain on a paper towel-lined plate and remove 3/4 of the bacon fat from the pan. Add extra-virgin olive oil, onions, and red chili flakes. Cook until onions are translucent, add garlic, cook for 2 minutes then add tomatoes. Saute for 5 minutes, then deglaze with wine.
  • Drain pasta and add to the tomato mixture pan. Add basil and bacon. Toss with Parmesan, and add salt and pepper, to taste.

2 pounds small red-skinned potatoes, quartered
1 pound bacon, chopped
2 large eggs
2 tablespoons red wine vinegar
3/4 cup mayonnaise
3 tablespoons whole-grain mustard
6 scallions, finely chopped
1 medium red onion, diced
1 tablespoon sugar
Kosher salt and freshly ground pepper

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water. Bring to a boil, then reduce the heat to medium and cook until fork-tender, about 15 minutes. Meanwhile, saute the bacon in a skillet over low heat until crispy, about 12 minutes. Drain on paper towels.
  • Put the eggs in a small saucepan and cover with cold water. Bring to a boil, then remove from the heat, cover and let stand 6 minutes. Drain and run under cold water to cool; peel and chop.
  • Drain the potatoes (do not rinse), transfer to a baking sheet and let cool 6 to 8 minutes. In a small bowl, combine the vinegar, mayonnaise, mustard, scallions, red onion, sugar, and salt and pepper to taste. Transfer the potatoes to a large bowl and add the bacon and hard-cooked eggs; fold in the mayonnaise mixture. Serve at room temperature.

1 pound elbow macaroni
4 cups milk
2 or 3 sprigs thyme
4 cloves garlic, smashed and divided
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 1/2 cups shredded sharp white Cheddar
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley
4 slices bacon, cut crosswise into thin strips
1 large onion, diced
2 garlic cloves, smashed
Leaves from 1/4 bunch fresh thyme

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.
  • Preheat the oven to 400 degrees F.
  • In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.
  • While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.
  • To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.

This hearty pasta salad can double as a side or main dish. The addition of bacon and chicken make the macaroni salad. It may have simple ingredients, but the combination of flavors is perfect. Definitely prepare this ahead of time so there is time to chill. Once the flavors mingle together for a bit, the salad is even better.

1 lb bacon
6 hard boiled eggs
1 lb elbow macaroni, cooked
3 small tomatoes
1 small onion
1 c mayonnaise
1 tsp kosher salt
1 tsp garlic powder
1 tsp parsley flakes
1 tsp seasoned pepper
1 can(s) chicken breast, 12.5 oz
1 tsp paprika

Steps:

  • 1. Fry bacon until crispy and put on a plate with paper towels to drain off the grease. Put aside.
  • 2. Hard boil 6 eggs, about 7 minutes. Then peel under cold water and slice into pieces. Put aside.
  • 3. Boil macaroni until soft. Add some oil and salt to the water prior to boiling. Removed and put in a colander to drain. Rinse with cold water until cool. Drain again and put in a large bowl.
  • 4. Open can of chicken breast and flake (leftover chicken is also good for this recipe). Add the eggs and chicken to the macaroni mixture.
  • 5. Crumble the bacon and add to the mix.
  • 6. Cut the tomatoes into cubes and add to the macaroni.
  • 7. Cut the onion into tiny diced pieces and add to the mix.
  • 8. Season with garlic powder, parsley flakes, kosher salt and seasoned pepper (salt and pepper to taste).
  • 9. Mix well until everything is combined evenly. Fold in the chopped hard boiled eggs.
  • 10. Add mayonnaise. I start with a cup and mix to coat the entire mixture.
  • 11. Then add around a half a cup as needed from there on until it is the consistency I like.
  • 12. Once everything is mixed sprinkle paprika on top for color.
  • 13. Refrigerate. It is best when it is allowed to get really cold. Enjoy!

250 g uncooked macaroni
4 slices bacon, chopped
30 g butter
1 medium onion, chopped
1 green capsicum, chopped (optional)
2 tablespoons plain flour
1 (454 g) can tomato soup
1/2 cup water or 1/2 cup milk
250 g cheese, grated
salt and pepper

Steps:

  • Cook macaroni in boiling salted water until tender (approx. 10 minutes), drain.
  • Add butter and saute bacon, onion and green capsicum for few minutes or until the bacon is cooked.
  • Add flour, stir for a minute then add the soup and milk/water, stirring until mixture boils and thickens.
  • Add 3/4 of the cheese and stir until it melts.

1 dozen egg, boiled, peeled, and diced
2 (15 ounce) cans black olives

1/2 cup bacon bits (real bacon ones)
1 cup mayonnaise
3 tablespoons Dijon mustard
salt and pepper

Steps:

  • Boil macaroni according to package directions. Drain and rinse in cold water.

1 can (15 ounces) tomato sauce
1 can (6 ounces) tomato paste
3 tablespoons minced fresh parsley, divided
1/2 teaspoon sugar

2 cups elbow macaroni, cooked and drained
1/4 cup grated Parmesan cheese

Steps:

  • In a large skillet, cook bacon; drain. Reserve 1 tablespoon drippings in skillet. Add the tomato sauce, tomato paste, 2 tablespoons parsley, sugar, garlic powder and pepper to drippings; cover and simmer for 8-10 minutes. Stir in macaroni; heat through, stirring occasionally. Crisp bacon makes this salad a real winner. I use turkey bacon with good success. Please don't try to substitute those artificial bacon bits in this recipe, it just won't work.

1/2 lb bacon
1/2 cup low-fat mayonnaise
2 tablespoons red wine vinegar
1/4 cup finely chopped fresh basil
4 slices French bread, cut into 1/2 inch pieces
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon canola oil
1 lb romaine lettuce, rinsed,dried,and torn into bite-size pieces
1 pint cherry tomatoes, quartered

Steps:

  • Cook bacon until it is crisp by your favorite method.
  • Crumble, and set it aside, reserving 2 tablespoons of the drippings in a small bowl.
  • Whisk together the reserved bacon drippings, mayonnaise, vinegar and basil and let dressing sit, covered, at room temperature while you finish making the salad.
  • In a large skillet over medium heat, toss the bread pieces with the salt and pepper.
  • Drizzle with the oil, and cook, stirring constantly, until the croutons are crisp and golden brown.
  • In a large salad bowl mix together the romaine, tomatoes, bacon and croutons.
  • Pour the dressing over the salad and toss well.
  • Serve immediately.

This is one of my family's choice meals. I have even taught my 11-year-old daughter to make it. Awesome for busy weeknights and when you have your kid's friends over. If you prefer it meatier add more bacon.

1 pound bacon, chopped, or more to taste
2 large onions, chopped
5 ripe tomatoes, roughly grated
1 (16 ounce) package elbow macaroni, or more to taste
4 cups grated Cheddar cheese, divided
1 cup grated mozzarella cheese

Steps:

  • Cook and stir bacon and onions in a skillet over medium heat until bacon is crisp and onions are softened, 10 to 15 minutes. Add tomatoes to skillet; cook and stir until liquid is evaporated, 5 to 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and return pasta to pot.
  • Preheat oven to 355 degrees F (180 degrees C).
  • Stir 3 cups Cheddar cheese into the tomato mixture until cheese is melted and sauce is thickened, about 5 minutes. Mix sauce into pasta. Pour pasta mixture into a 9x13-inch baking dish and top with remaining Cheddar cheese and mozzarella cheese.
  • Bake in the preheated oven until cheese is golden brown and crisp, about 15 minutes.
