1/4 c. ranch dressing
1/2 c. finely shredded cheddar cheese
6 pieces bacon (cooked and chopped)
1 Tbsp. minced chives
flour tortillas (6 small or 3 large)

Steps:

  • In a small mixing bowl, combine cream cheese and ranch dressing. Mix until smooth.
  • Stir in cheddar cheese, bacon, and chives.
  • Spread in a generous layer over tortillas.
  • Roll tortillas tightly and slice into 1 inch pieces.

1 (1 pound) loaf white bread, crusts trimmed
1 (8 ounce) package cream cheese, softened
1 pound sliced bacon, cut in half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut each slice of white bread in half horizontally. Spread with cream cheese. Tightly roll each piece of bread with half a piece of bacon. The bacon should be on the outside of the bread. Secure with toothpicks.
  • Arrange roll ups in a single layer on a medium baking dish. Bake in the preheated oven 30 minutes, or until bacon is no longer pink and bread is lightly browned. Serve warm.

2 (3 ounce) packages cream cheese with chives (softened)
1 tablespoon milk or 1 tablespoon mayonnaise
25 slices mixed grain bread (crusts removed & cut in half)
25 slices bacon (cut in half)
parsley sprig (optional)

Steps:

  • Combine cream cheese and milk (or mayonnaise) stirring until of spreading consistency.
  • Spread 1 teaspoon of cheese mixture on each halved bread slice.
  • Roll tightly from the smallest end.
  • Wrap with bacon and secure with toothpick.
  • Place on broiler pan.
  • Bake at 350 degrees Fahrenheit for 30 minutes.
  • Turn if necessary.
  • Garnish with parsley if desired.
  • Note: These may be assembled ahead of time and frozen before cooking. To serve, remove frozen rollups from freezer and allow to thaw in the refrigerator over night. Then bake at 350 degrees Fahrenheit for 30 to 40 minutes.

1/2 teaspoon onion powder

1/2 pound bacon (approximately 10 slices)
8 ounces cream cheese, softened
2 scallions, thinly sliced
Freshly ground black pepper
5 slices white bread
Toothpicks

Steps:

  • Slice bacon in half to form twenty strips. In a small bowl combine softened cream cheese with sliced scallions and pepper. Remove crusts from bread. Line up 4 slices of bacon, slightly overlapping to form a square. Using a rolling pin, flatten the bread. Place the bread slice on top of the bacon. Spread the bread with the cream cheese mixture. Roll up bread and bacon as you would a rug. Secure with 4-5 toothpicks about an inch apart. Assemble remaining roll ups and place on baking sheet. Freeze until firm. Slice rollups into 4-5 pieces each secured with toothpick. Either refrigerate or freeze until ready for use. Preheat oven to 425 degrees. Place roll-ups on broiler pan so that fat collects in bottom pan. Bake until crisp, about 20-30 minutes.

8 slices bacon
6 ounces cream cheese, at room temperature
6 scallions, green part only, thinly sliced
Kosher salt and freshly ground black pepper
2 sheets frozen puff pastry (from a 17.3-ounce package), thawed
All-purpose flour, for dusting
4 ounces Cheddar, grated
1 large egg

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
  • In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
  • Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square. Spread the cream cheese mixture over the entire surface of each piece of pastry, leaving a slight border around the edges. Sprinkle the Cheddar and bacon in an even layer over the top of the cream cheese mixture. Tightly roll each pastry sheet into a log (jelly roll style), then pinch the seam closed and place seam-side down on the work surface.

4 green onions, finely sliced
4 large flour tortillas
10 slices bacon, cut into small pieces and cooked till crisp

Steps:

  • In a medium bowl, mix together the cream cheese, salsa and onions until fully combined. Spread the tortillas with the mixture, leaving a 1/2-inch edge. Top each with bacon and ham, then roll into tight cylinders and wrap in plastic wrap. Refrigerate for at least one hour. Remove from fridge, discard the plastic wrap and cut each roll into 1-inch pieces, discarding the uneven ends (or eating them while preparing, like I did!). Each roll should yield eight pieces.
