1 pound ground beef
1 cup ketchup
1/4 cup water
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce
2 teaspoons prepared mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
4 hamburger buns, split

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, water, brown sugar, Worcestershire sauce, mustard, garlic powder, onion powder and salt. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes. Serve on buns.

1 1/2 pound lean ground beef
1/2 onion (diced)
2 cloves garlic (minced)
1 green bell pepper (diced)
2 cups water (divided)
3/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon Dijon mustard
1 dash Worcestershire sauce
1 1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper
Optional: cayenne to taste

Steps:

  • Place the ground beef and onions into a cold, large skillet and put over medium heat.
  • Cook stirring until the beef begins to brown. As it cooks, break the meat into very small pieces with a spatula. The smaller the better.
  • Add the garlic and green pepper; cook stirring for 2 minutes. Add 1 cup of water.
  • Bring to a simmer, scraping the bottom of the pan with a spatula to dissolve any browned bits.
  • Stir in the ketchup, brown sugar, mustard, Worcestershire, salt, pepper, and last cup of water.
  • Bring to a simmer, reduce heat to low, and simmer for 30-45 minutes, or until most of the liquid has been evaporated, and the meat mixture is thick, rich and tender. Taste and adjust the seasoning.
  • Serve hot on soft rolls.

I like to think of this as a grown-up version of that favorite sandwich we all had as kids. Instead of ground beef with the sweet tomato-based barbecue sauce, I like to slow-cook brisket instead for fall-apart-tender sloppy joes. That's not all though-I top them off with crispy fried red onion rings and pickle chips.

2 tablespoons olive oil
One 2-pound beef brisket, fat cap trimmed, sinew removed
1 tablespoon Miss Brown's House Seasoning, recipe follows
1 medium onion, diced
1 red bell pepper, diced
2 cups beef broth
1 bay leaf
Kosher salt and freshly ground black pepper
4 hamburger buns
Dill pickle chips, for serving
One 14.5-ounce can diced tomatoes, undrained
2 cups ketchup
1/2 cup firmly packed light brown sugar
1/3 cup molasses
2 tablespoons apple cider vinegar
1 tablespoon garlic powder
1 tablespoon Dijon mustard
1 tablespoon sweet paprika
1 teaspoon cayenne pepper
Vegetable oil, for frying
1/2 medium red onion, sliced into 1/4-inch-thick rings
1 cup buttermilk
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
1 teaspoon Miss Brown's House Seasoning, recipe follows

Steps:

  • Preheat the oven to 300 degrees F.
  • Start the brisket: Heat the olive oil in a large Dutch oven over medium-high heat. Sprinkle the brisket with the House Seasoning. Place the brisket, fat-side down, in the hot Dutch oven and brown until a deep golden crust forms, 5 to 7 minutes. Turn the brisket over and brown on the other side, another 5 minutes. Remove the brisket from the Dutch oven. Add the onions and bell pepper to the drippings in the Dutch oven and stir until well coated in oil. Add the beef broth and bay leaf and bring to a boil. Return the brisket to the Dutch oven. Cover and place in the oven. Bake for 3 hours.
  • Meanwhile, make the sloppy joe sauce. Combine the diced tomatoes, ketchup, brown sugar, molasses, apple cider vinegar, garlic powder, mustard, paprika and cayenne pepper in a medium saucepan. Bring to a boil. Reduce the heat and simmer over medium-low until slightly thickened and reduced by one-fourth, about 30 minutes.
  • After the brisket has baked for 3 hours, pour 2 cups of the sauce over the brisket. Cover the Dutch oven and continue baking the brisket until tender, 30 minutes longer. (Use a knife to test the tenderness of the brisket. It should pierce the brisket very smoothly, with no pushback.) Shred the meat using two forks and stir in 1 more cup of sauce. Season with salt and pepper.
  • During the last 30 minutes, make the fried onions: Pour oil halfway up the sides of a large cast-iron skillet and heat to 350 degrees F.
  • Place the onion in the buttermilk in a small bowl. Place the flour in a shallow baking dish and season with salt and pepper. Working with a few onions at a time, dredge them in the flour, shaking to remove any excess flour. Add to the hot oil and fry until golden brown and crispy, about 4 minutes. Remove the onions to a baking sheet with a wire rack and sprinkle with the House Seasoning while still hot. Repeat with the remaining onions and set aside.
  • To assemble the sandwiches, spoon some of the brisket on the hamburger bun bottoms. Top with the fried onions, pickles and bun tops.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

2 tbsp olive oil
400g beef mince
1 onion, finely chopped
1 green pepper, finely chopped
1 tsp garlic granules
1 tsp smoked paprika
1 tsp light brown soft sugar
1 tbsp malt vinegar
4 tbsp ketchup
1 tbsp Dijon mustard or 1⁄2 tsp mustard powder
300ml beef stock
4 burger buns, split
chilli sauce, to serve (optional)

Steps:

  • Heat half the oil in a frying pan over a medium heat and crumble in the beef mince. Fry for 10 mins, breaking it up with a wooden spoon as you go, stirring until it browns all over. Tip onto a plate. Heat the rest of the oil in the same pan and fry the onion and pepper for 6-8 mins until softened. Sprinkle in the garlic granules, paprika and sugar, then return the mince and any resting juices back into the pan and stir everything together. Sizzle for 1-2 mins to combine.
  • Splash in the vinegar, then stir through the ketchup and mustard. Pour over the stock and bring to a simmer, then turn down the heat to low and bubble everything gently for 15-20 mins until the mixture is thick and glossy. Taste and season if needed. To freeze, leave to cool completely, then tip into an airtight container or divide between freezer bags and freeze for up to three months. Defrost thoroughly in the fridge overnight and reheat in a pan until piping hot. Toast the burger buns in a hot pan, then fill with the sloppy joe mixture and top with chilli sauce, if you like.

Steps:

  • Set a large skillet over medium-high heat with the olive oil. Once hot, add the ground sirloin and begin breaking it up with a wooden spoon. Cook until crispy and no longer pink, about 10 minutes. Add the onion, bell pepper and garlic and cook until softened, about 5 minutes.
  • Add the ketchup, tomato paste, Worcestershire sauce, mustard, salt, pepper, cayenne, and chicken stock. Bring to a simmer and cook until the sauce has thickened and almost evaporated completely, about 2-3 minutes. Remove from the heat and let cool.
  • To assemble the sandwiches, lay out 4 bread slices in a single layer. Brush the bread with 3 tablespoons of the softened butter, then turn the bread over. Top each bread slice with 1/4 cup shredded cheese. Spoon the Sloppy Joe mixture on top of the cheese. Top with remaining cheese and top each with a slice of bread. Brush with remaining butter.
  • Heat a skillet or griddle over moderate heat. Working in batches, cook sandwiches until bread is crisp and golden and the cheese has melted, about 3 minutes per side. Transfer to a cutting board and cook the remaining sandwiches.
  • To serve, cut each sandwich in half and skewer with a few pickle slices on top.

Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
  • Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.
