¼ cup bacon drippings
1 small head cabbage, cored and finely chopped
ground black pepper to taste

Steps:

  • Cook bacon in a deep skillet over medium heat until crisp, 5 to 7 minutes. Remove bacon from skillet and drain on a paper towel-lined plate. Reserve 1/4 cup drippings in skillet.
  • Cook and stir cabbage in hot bacon drippings over medium heat until cabbage wilts, 5 to 7 minutes.
  • Crumble bacon over cabbage. Stir and simmer until bacon is warmed, 2 to 3 minutes. Season with black pepper.

565 ml organic chicken or vegetable stock
6 rashers of higher-welfare smoked streaky bacon
a few sprigs of fresh thyme
1 white cabbage
1 small knob of unsalted butter
extra virgin olive oil

Steps:

  • Pour the stock into a large pan, then add bacon and pick in the thyme leaves. Place over a medium heat and bring to the boil.
  • Meanwhile, discard the tatty outer leaves from the cabbage, then halve and very finely slice the rest, discarding the tough core.
  • Once boiling, add the cabbage to the stock, mix well, pop the lid on and boil furiously for 5 minutes.
  • Turn the heat down to a simmer and continue to cook until the cabbage is a pleasure to eat, topping up with a little extra stock or water, if needed.
  • Add the butter and a good lug of extra virgin olive oil, season to taste with sea salt and black pepper, then serve immediately.

4 strips thick cut bacon, diced
3 tbsp butter
1 onion, diced
6 cloves garlic, diced
1 head cabbage, diced
2 tsp fresh cracked black pepper
1 tsp celtic sea salt

Steps:

  • Cut bacon into thick chunks, pan fry until crunchy. Remove from pan and set aside.
  • Drain off most of the bacon fat - leave a little if desired for taste, but too much will give an oily texture.
  • Heat butter in large pan on medium-high heat until melted and foamy.
  • Add diced onions to pan, cook until soft and transparent, about 4 minutes. Stir to prevent sticking or burning.
  • Add garlic and cabbage to the pan, tossing evenly to coat in butter.
  • Generously season with salt and pepper.
  • Let cabbage reduce by half, about 8 minutes, stirring occasionally as it cooks down to prevent burning and allow it to cook evenly. Add bacon back to pan.
  • When cabbage has lost much of it's volume and started to turn shiny, slightly translucent, and has lovely browned bits, it is ready to serve.
  • Serve immediately.
  • Leftovers can be stored in an airtight container in the refrigerator for up to four days, three months in the freezer.

3 lbs cabbage, quartered, core removed, and cut into a large 1-inch dice
1/2 lb sliced bacon
1/2 of medium onion, sliced thinly
1/2 cup water
1 tablespoon sugar
1 tablespoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Cut the cabbage into quarters. Remove any wilted or discolored outer leaves. Cut out the core from the cabbge quarters. Cut into large 1-inch dice.
  • Cook the bacon and onion in a 4-quart pan over medium heat until bacon is crisp, and the onion is wilted.
  • Remove the bacon and onion to paper towels to drain. There should be about 1/2 cup of bacon drippings in the pan.
  • Add the cabbage to these drippings and cook without stirring until it begins to brown, about 3 minutes.
  • Add the water, sugar, salt and pepper and cook until the cabbage is tender, about 20 minutes.
  • Crumble the cooked bacon into the cabbage and serve hot.

4 pounds Irish boiling bacon
1 Savoy cabbage, trimmed, quartered, and cored
4 tablespoons unsalted butter
Freshly ground black pepper
Parsley Sauce
Boiled Yukon gold potatoes, for serving

Steps:

  • Place bacon in a large pot and add enough water to cover. Bring to a boil over medium-high heat. If bacon is very salty, a white froth will form on surface of water. In this case, discard water and start again. Repeat process until no froth forms on surface of water; drain.
  • Cover bacon with hot water. Cover pot and simmer until almost cooked through, about 1 hour.
  • Meanwhile, slice cabbage across the grain into thin shreds; rinse with cold water if necessary. Add the cabbage to pot with bacon and continue cooking 20 minutes more.
  • Remove bacon from pot; strain cabbage and transfer to a large bowl or serving platter. Add butter and season with pepper; toss to combine. Serve bacon and cabbage with parsley sauce and potatoes.

3 cups coarse kosher salt
1 6 1/2-pound bone-in pork shoulder roast (Boston butt), excess fat trimmed
3 large heads of garlic, halved crosswise
1 1/2 teaspoons whole black peppercorns
1 large head of green cabbage, cut into 6 wedges
1 pound carrots, peeled, cut crosswise in half, then quartered lengthwise
Fresh thyme sprigs
Spicy mustard

Steps:

  • Combine 1 gallon of water and salt in heavy large pot. Stir until salt dissolves. Add pork. Cover and refrigerate 1 day.
  • Bring pork in salt water to boil. Boil 10 minutes. Carefully drain salt water. Fill pot with enough cold water to cover pork. Bring water to boil over high heat. Add garlic and peppercorns. Reduce heat to medium-low. Cover; simmer gently until pork is very tender, about 3 hours. Transfer pork to large pan. Cover; keep warm.
  • Add cabbage and carrots to cooking liquid. Boil until vegetables are almost tender, about 15 minutes. (Can be made 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and keep chilled. Before continuing, rewarm over medium-low heat.) Using slotted spoon, transfer vegetables and garlic to serving platter.
  • Cut pork into thick slices; arrange on platter with vegetables. Spoon some hot cooking liquid over pork and vegetables. Garnish with thyme. Serve with mustard.

1 small onion, finely diced
2 slices bacon, diced
1/2 small cabbage, finely shredded
1 tablespoon sugar
1 tablespoon white wine vinegar
1 teaspoon caraway seed
1 teaspoon chicken stock powder
2 tablespoons water (approximately)
2 tablespoons chopped fresh parsley

Steps:

  • Heat the oil in a large saucepan, and add the onion and bacon and cook until the onion is softened-about 5 minutes.
  • Add the cabbage, sugar, vinegar, carraway seeds, stock powder and stir over a medium high heat for a couple of minutes or until the cabbage is coated with oil and starting to wilt.
  • Add a couple of tablespoons of water, cover and cook over a low heat (watch it doesn't burn) for a further 15 minutes, stirring once or twice.
  • Stir through the chopped parsley and serve.

An almost vegetarian alternative to a meat loaf with some of the same flavours as stuffed cabbages but probably a bit quicker to make. Vegetarian if you leave out the bacon, of course, but the bacon adds SO much flavour. Serve with a salad and tzaziki as a sauce, or your favourite tomato or vegetable sauce or salsa or with my warm cucumber sauce, recipe for Salmon Loaf and Cucumber Sauce #118672. The preparation time includes ten minutes for the mixture to cool.

20 g unsalted butter
5 slices bacon, rinds and all fat removed
4 cups cabbage, preferably Savoy, shredded
1 red capsicum, finely diced
1 medium onion, grated
2 medium potatoes, grated
2 garlic cloves, grated
1/2 teaspoon marjoram
1/2 teaspoon thyme
1 tablespoon fresh parsley, finely chopped
1/2-2 tablespoon plain flour
2 eggs, lightly beaten
1 1/2 cups parmesan cheese, grated

Steps:

  • Pre-heat the oven to a moderately hot temperature.
  • Lightly grease a loaf pan.
  • Heat the butter in a sauté pan (preferably non-stick) and sauté the diced capsicum, bacon, onions and garlic until the capsicum and onions are just beginning to soften.
  • Add the potato and cabbage and, while stirring, sauté the mixture for about 5 minutes or until the cabbage has softened.
  • Transfer the mixture to a mixing bowl to help it to cool.
  • Add the herbs: the marjoram, thyme and parsley.
  • Once the mixture has cooled, stir in the flour, the lightly beaten eggs and the grated parmesan.
  • Stir until all the ingredients are well combined.
  • Press the mixture into the lightly greased loaf pan.
  • Bake in a moderately hot oven for about 40 minutes or until firm.

  • Chef's Note: Because the sizes of potatoes and onions vary, because undoubtedly I've often used more than strictly "3 cups" of cabbage, and because sometimes I've certainly used more parmesan, the final quantity of the mixture has varied. And really exact proportions are not crucial with a recipe like this. So if you have more mixture than will fit into your loaf pan, butter an appropriately-sized small casserole dish for the spillover amount. Keep an eye on the dish with the smaller quantity in it: it will probably need to come out of the oven well before the loaf pan.

100g smoked streaky bacon , cut into small pieces
1 garlic clove , finely chopped
few thyme sprigs
1 celeriac , cut into batons
2 carrots , cut into batons
1 Savoy cabbage , shredded
small glass (125ml) white wine

Steps:

  • In a large pan melt the butter. Add the bacon and sizzle for 5 mins until golden. Add the garlic and thyme to the pan and stir for 1 min. Take the pan off the heat, remove the bacon mixture and reserve.
  • Add the celeriac and carrot batons into the now empty pan with a little of the bacon-flavoured butter. Gently cook for 10 mins until soft, then add the cabbage and cook for 5 mins until it starts to soften. Add the bacon and garlic back to the pan, then add the white wine. Allow the wine to evaporate for a few mins then season the mixture and serve. This can be made ahead and left in the pan, then reheated.

½ pound thick-cut bacon, chopped
2 cups water, or more as needed
⅓ cup apple cider vinegar
¼ cup water
2 tablespoons all-purpose flour
salt and ground black pepper to taste

Steps:

  • Bring cabbage, bacon, 2 cups water, and vinegar to a boil in a large saucepan over medium-high heat. Reduce heat to low and simmer uncovered until cabbage is very tender, about 3 hours, adding more water as needed.
  • Whisk remaining 1/4 cup water and flour together in a small bowl and gradually add to cabbage mixture. Continue to simmer until thickened, about 5 minutes more. Season with salt and pepper.

I sometimes use regular bacon in place of the Canadian bacon just to change it up sometimes. I forgot to measure how much soup I got but I know I froze several quarts. The amount will be a "guestimation".

1/3 lb Canadian bacon
3 tablespoons unsalted butter
1 medium onion, finely chopped
2 large yukon gold potatoes, peeled and cut into 1/2-inch pieces
5 1/2 cups chicken stock or 5 1/2 cups low sodium chicken broth
4 bay leaves
2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper
1/2 small head savoy cabbage, cored and thinly sliced into 1/2-inch pieces

Steps:

  • In small saucepan, combine bacon and cold water to cover. Cover, bring to boil over moderate heat, and skim foam from surface.
  • Reduce heat and simmer 7 minutes. Drain and cool, then cut into 1-inch chunks. Set aside.
  • In 6-quart heavy stock pot over moderate heat, melt butter. Add onion and saute, stirring, until softened, about 3 minutes. Add potatoes and saute 2 minutes. Add stock, bay leaves, salt, and

Bacon makes this simple fried cabbage crave-worthy. As the cabbage cooks in the pan, it wilts, turns tender, and becomes sweet. White cabbage is our favorite for this, but other cabbage varieties will work. Keep in mind, though, that Napa cabbage will release more moisture and won't brown as nicely in the pan. We love using peppered bacon for extra flavor, but your favorite type of bacon will also work.

3 thick slices peppered bacon, diced (3 ounces)
2 pounds white cabbage, core removed and chopped (10 cups)
1 tablespoon garlic, minced
Pinch crushed red pepper flakes
1/4 teaspoon fine sea salt or more to taste
2 teaspoons Dijon mustard
2 teaspoons apple cider vinegar
Fresh ground black pepper

Steps:

  • Add bacon, in one layer, to a large skillet over medium heat. Cook, stirring occasionally until the fat renders and the bacon is crispy; 6 to 8 minutes. Take the pan off of the heat, and then use a slotted spoon to transfer the bacon to a bowl and save for later.
  • Remove all the bacon fat from the pan except for one tablespoon. (Leave more or less, depending on your preference. One tablespoon tastes great, but doesn't make the cabbage greasy.)
  • Place the pan back onto medium-high heat then add the cabbage, garlic, red pepper flakes, and the salt. It might seem like too much cabbage for the pan, but as it cooks, the cabbage will wilt down.
  • Cook, occasionally stirring until the cabbage is tender and some of the cabbage begins to turn light brown; 10 to 15 minutes. Stir in the mustard, apple cider vinegar, and the reserved cooked bacon. Taste then adjust with more salt, pepper, and vinegar as needed.

Fried Cabbage with Bacon image

This is good enough for a meal on its own, and excellent with sausages and jacket potatoes.

Number Of Ingredients 6

1 lb (450 g) shredded cabbage (any variety)
2 oz (50 g) bacon, de-rinded and cut into lardons (tiny cubes), or streaky bacon, chopped small
1 medium onion, finely chopped
2 tablespoons olive oil
1 clove garlic, crushed
salt and freshly milled black pepper

Steps:

  • Take a large frying pan and begin by frying the onion and bacon together in olive oil for about 5 minutes. Then add the crushed garlic and cook for another 2 or 3 minutes. Now stir in the shredded cabbage (which will seem rather bulky at first, but as the heat gets to it, it will start to collapse) and keep stirring it now and then so it cooks evenly. Season with freshly milled pepper, but taste before adding salt because of the bacon. The cabbage should cook in about 10 minutes and still retain its crispness, but if you prefer it softer put a lid on the frying pan - which will give it some steam.

¼ cup onion (thinly sliced)

6 cups cabbage (thinly sliced)
¼ cup chicken stock
½ cup heavy cream
salt & pepper (to taste)

Steps:

  • Dice bacon and cook bacon in a skillet until browned. Once browned remove with a slotted spoon reserving bacon fat.
  • Add onion to the bacon fat and cook until tender. Stir in garlic and cook just until fragrant, about 30 seconds.
  • Add cabbage and cook 2-3 minutes or just until it starts to wilt.
  • Add chicken stock and heavy cream and cook uncovered until cabbage is tender and sauce has thickened. Stir in bacon and season with salt & pepper to taste. Serve immediately.

  • Place the potatoes in a pot, along with enough water to cover them. Add 2 teaspoons salt to the pot and bring to a boil. Simmer until the potatoes are fork tender, about 15-18 minutes.
  • While the potatoes are boiling, cook the bacon in a skillet over medium high heat. When the bacon has browned and is slightly crisp, remove to a paper towel lined plate. Reserve about a tablespoon of the bacon grease and drain the rest. Leave the rest of the drippings in the skillet. Add the onions to the hot skillet with the bacon grease and saute over medium high heat for 1-2 minutes, until they are lightly browned. Add the cabbage and toss lightly while it sautes and wilts, about 5 minutes. Season generously with salt and pepper as it cooks.
  • Drain and place the potatoes back in the hot pot. Place the pot back over the still-warm burner (or if your stove is gas, set the heat to the lowest setting). Mash the potatoes over very low heat and add the milk, 1/2 - 1 teaspoon salt and pepper. Fold in the cooked and crumbed bacon, cabbage, and onions. Transfer to a serving bowl, form a small well in the center and fill with the butter. Serve hot. Enjoy!
