This First Birthday Smash Cake is super moist without any added sugars or oils for your baby's first time eating cake. This cake is healthy, tasty, and perfectly smashable!

1/2 cup fruit puree
1/2 cup whole milk
1 large egg
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup peaches (see notes for other options)
1 small banana
1/2 cup heavy cream
2 teaspoons pure maple syrup (optional)

Steps:

  • Blend fruit together in a food processor until liquefied. You will need 1/2 cup fruit puree for the batter
  • Whisk your fruit puree, milk, egg, and vanilla together.
  • In a separate bowl, combine flour, baking powder, soda, and salt.
  • Slowly pour your liquid ingredients into the dry, and mix until the dry ingredients are all wet.
  • Pour your batter into a greased 6 inch round pan (Double ingredients to make a double layer).
  • Bake at 350 for 20-30 minutes, or until you can stick a knife through the center and it comes out clean.
  • Whip cream until light and fluffy. Stire in maple syrup for added sweetness.
  • Frost cake and decorate with fresh berries or sprinkles. Refridgerate until your baby is ready to smash!

Every swedish mom gets 2 books about baby food shortly after our babies are 2 month old, and this is the recipe for a birthday cake for the 1st birthday. My baby son loved it as much as his little guests, and the adults loved it as well!

2 eggs
1/2 cup sugar
15 tablespoons hot water
1/2 cup all-purpose flour
1 teaspoon baking powder
butter, for the form
breadcrumbs, for the form
1/2 cup unsweetened cream
blueberries, strawberries or raspberry puree, without seeds,etc,to garnish

Steps:

  • Preheat oven to 175 degrees celsius (about 350 Farenheit).
  • Butter a cake form (about 24 cms diameter: about 9,5 inches) and drop the breadcrumbs on it, shaking and turning the form so it gets evenly coated.
  • Shake all the excess.
  • Beat eggs and sugar until very fluffy.
  • Fold in carefully flour and baking powder.
  • Add hot water and mix until just combined (don´t overmix, or the cake will be hard and too dense).
  • Drop in the form and bake in the lower shelf of the oven for about 25-30 minutes.
  • Check with a stick that the cake is ready: the stick must be dry and clean.
  • Take out of the form carefully while still hot, and leave under a towel until cold.
  • Beat the cream until very firm, and cover the cake totally.
  • Add plenty of fruit in little bits, and/or berries.

I wanted to feed Lucy cake on her first birthday but didn't want to introduce her to new foods on her big day. I also baked it ahead of time so she could sample the cake two to three days in advance in case of a reaction (I didn't actually decorate it until the day of her party). Recipe adapted from a blog called greenparenting (I reduced the egg white, and left out the walnuts/raisins suggested)

2/3 cup banana, mashed
1/2 cup unsalted butter, softened
2 large eggs
1 egg yolk
3/4 cup water
2 cups unbleached flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 marshmallows
smarties candies (1 blue)
1 licorice, rope

Steps:

  • Grease and flour a 9 X 13 inch pan.
  • Beat banana and butter until creamy.
  • Beat in water.
  • In a separate bowl, beat eggs until very foamy.
  • Beat into mixture.
  • Blend in dry ingredients.
  • Beat until smooth.
  • Spread batter evenly in pan.
  • Bake at 350°F for 20 minutes or until knife comes out clean.
  • Draw a cat head onto a piece of paper (approx 4 by 5 inches).
  • Use cat stencil to cut out two cat heads.
  • Frost top of one layer and place second cat head on top of first.
  • Frost cake (use a sugarless cream cheese or sour cream filling).
  • Decorate with cat face.
  • Remove candy before allowing baby to attack cake.

2 1/2 cups thinly sliced carrots
2 1/4 cups apple juice concentrate
1 1/2 cups raisins
2 cups whole wheat flour (King Aurthur brand "White Whole Wheat" is a lighter alternative)
1/2 cup wheat germ
2 tablespoons baking powder
1 tablespoon cinnamon
1/4 cup vegetable oil
2 whole eggs
4 egg whites
1 tablespoon vanilla
1/4 cup unsweetened apple juice

Steps:

  • Combine the sliced carrots with 1 Cup pluse 2 Tbl. of the apple juice concentrate in a pan, bringing it to a boil. Simmer for 15 to 20 minutes until the carrots are soft. Puree carrots and juice with the raisins in a food processor.
  • Preheat the oven to 350 degrees.
  • Line two 9-inch square cake pans with parchment paper, also greasing the parchment.
  • Mix flour, wheat germ, cinnamon and baking powder in a mixing bowl.
  • Add remaining wet ingredients, adding the carrot/raisin puree last, folding inches
  • Pour evenly into two cake pans.
  • Bake for 35 to 40 minutes, until a toothpick comes clean.
  • Wait until cakes or cooled until you frost.

2 teaspoons baking soda

1 (4 ounce) jar carrot baby food
1 (4 ounce) jar peach baby food
3 ounces cream cheese
3/8 cup butter
1 tablespoon milk
1 teaspoon vanilla
1 1/2-2 cups powdered sugar

Steps:

  • Mix all the ingredients together well.
  • Bake in lightly greased jelly roll pan at 350 degrees for 20 minutes.
  • Frost with cream cheese frosting or dust with powdered sugar.
