BABY FINGER FOOD - CHOPPED CHICKEN FINGERS W/ APPLES
This one is awesome! My son loves them and they're easily made ahead and frozen (which I love). I found the recipe on homemade-baby-food-recipes.com and I'm posting here for safe keeping. It is recommended for babies that are 8 months and older, but they also advise speaking to your pediatrician before starting your baby on solids. Also, remember to follow the RULE OF FOUR (wait 4 days after introducing new foods) and make sure your baby has had no allergic reactions to any of the foods in this recipe before serving it!

Steps:
- Peel and grate the carrot, apple, garlic and onion.
- Place into a mixing bowl, along with the ground chicken.
- Add the beaten egg yolk, breadcrumbs, thyme and black pepper. Mix well.
- Take small balls of the mixture and roll into 8 little "sausages".
- Place on a grill pan (broiler) and heat under the grill for 10 mins on each side.
- Allow to cool.
- Serve, or store some in the freezer for future use (if you haven't already eaten them!).
- Younger babies may need them broken into smaller pieces or even mashed a bit before serving.

CRISPY CHICKEN FINGERS WITH ONTARIO APPLE "FRIES"
Have fun with your food with fresh roasted apple fries and cornflake crusted chicken fingers. Kids will love preparing the 'fries' and coating the chicken. Serve in rolled newspaper for an authentic 'chippy' feel.

Steps:
- In large saucepan over medium-high heat, boil cider until reduced to 1/3 cup (75 mL), about 20 minutes (will have a syrupy consistency). Remove from heat; whisk in butter and salt.
- Preheat oven to 400 F (200 C). In bowl, toss apples with 2 tbsp (30 mL) of the glaze and 1/2 tbsp (7 mL) of thyme. Arrange in a single layer on a rimmed baking sheet. Set aside.
- In bowl combine corn flake crumbs, salt and parsley. Set aside. Dip chicken strips in sweet chili sauce and then coat with corn flakes. Arrange in a single layer on a greased baking sheet.
- Place chicken on the top third and the apples on the bottom third of the oven. Roast for 10 minutes. Turn chicken, drizzle apples with remaining glaze and switch baking sheets so the apples are now on the top third of oven. Continue to roast for 10 minutes and remove chicken from oven. Let chicken fingers cool while apples finish caramelizing, about 5 to 10 minutes more.
- Sprinkle apples with remaining thyme and additional salt if desired.
BABY FINGER FOOD - APPLE TURKEY LOAF OR STICKS

Steps:
- Place ground turkey in a large mixing bowl.
- Add the egg/yolk, carrots, applesauce, spices, bread crumbs and bran.
- Mix well - If this mixture appears too dry, add more carrots or applesauce. If this mixture appears too wet, add more bran and/or bread crumbs.
- Place mix into a lightly oiled (olive oil) loaf pan and bake at 350F for approximately 45 minutes or until an inserted knife comes out clean.
- **You may wish to cover with foil to prevent the top from burning.
- When finished baking and cooled, remove loaf from pan and slice as you would for bread.
- Break into small bits for finger feeding or mash or chop gently for younger babies.
- This recipe may also be made into "Turkey Sticks" for Toddlers and older babies who are able to handle more textured/chunky finger foods.
APPLE BABY FOOD
Apple puree is a wonderful first food for baby. Use a sweeter variety of apple instead of a tart variety so that you don't need to add any sugar.

- In a medium skillet, add the butter and heat on medium heat. When the butter is melted add the apples and cinnamon and stir until all of the ingredients are incorporated. Then add in the water and stir again. Turn heat down to medium-low and sauté for 5-8 minutes, stirring occasionally, or until the apples are tender when pricked with a fork. Note: I prefer to leave the apple skins on as they make an easier handle for baby to hold onto, but you can peel the apples if you prefer.
- On a cutting board, using a box grater, grate the apple until you have a handful of tiny apple pieces. If the grated apple is too watery, place the grated apple into a paper towel and gently squeeze to get rid of the excess liquid.
- On a cutting board, cut the half of an apple using a crinkle cutting tool or a sharp knife into 1/2" thick and 2-3" long strips.
- Using either the steamed apple or sautéed apple recipes from above, take the cooked apples and place in a small blender or food processor. Pulse for 5-10 seconds or until you have a chunky puree. You can also make a smooth puree by blending for 1-2 minutes. Note: you can easily have 3 different textures of apples to serve baby! Start by making a batch of the steamed (use an entire apple) or sautéed apples, set aside a portion for baby. Take the rest of the apples and pulse into a chunky puree, set aside a portion for baby. Then puree the rest of the apples into a smooth puree for baby.
