Missing a good toffee? This Keto Toffee is going to satisfy those cravings and then some. Buttery and just on the right side of sweet, it won't send your blood sugar levels soaring like the traditional stuff.

1 cup unsalted butter (225g, cut into pieces)
5.8 oz allulose (165g / 3/4 cup plus 1 tbsp)
1/3 teaspoon sea salt + more for sprinkling on top
1 teaspoon vanilla extract
1 cup sugar free chocolate chips (180g)
1/4 cup toasted almonds (25g, chopped)

Steps:

  • Line a 7 x 7 x 1 inch baking tray with greaseproof paper.
  • Add the butter, sweetener and salt to a pan. Heat over a medium-low heat, stirring frequently with a spatula, until the butter melts and the allulose dissolves.
  • Continue heating, stirring occasionally, until the mix reached 270°F / 132C and has turned a rich caramel colour. When it turns the right colour immediately remove from heat and stir in the vanilla. Be careful - it will sizzle.
  • Wait 2 minutes and pour the mixture into your baking tray. Wait another 3 minutes to cool, then sprinkle with the chocolate chips and allow to sit for 10 minutes covered with tin foil so the chips melt.
  • Spread the melted chocolate chips with a spatula and sprinkle with chopped toasted almonds and an optional sprinkle of flaked sea salt. Let the toffee cool, then place in the fridge to completely set. Cut into pieces and enjoy.

1 (2 1/8 ounce) package sugar-free instant chocolate pudding mix
2 cups heavy cream
1/2 cup water
Cool Whip Free, for layering and topping
1 package sugar-free chocolate-covered toffee (Russell Stover)

Steps:

  • Mix pudding, cream and water in mixer for 1 minute on slow, then about 2 to 3 minutes on medium high until fluffy.
  • Crush candy while still wrapped, then remove from wrapper.
  • Place pudding mixture in small dessert dishes layering with Cool Whip and crushed toffee pieces.

2 packages (3 ounces each) cream cheese, softened
1/2 cup confectioners' sugar
2 tablespoons milk
1 carton (8 ounces) frozen whipped topping, thawed
5 cups cubed angel food cake
1/2 cup chocolate syrup
1/2 cup English toffee bits or almond brickle chips, divided

Steps:

  • In a large bowl, beat cream cheese, sugar and milk until smooth. Fold in whipped topping. Arrange cake cubes in an ungreased 11x7-in. dish. Drizzle with chocolate syrup. , Set aside 1 tablespoon of toffee bits; sprinkle remaining toffee bits over chocolate. Spread cream cheese mixture over top. Sprinkle with remaining toffee bits. Cover and chill until serving. Store leftovers in the refrigerator.

1 cup all-purpose flour
1 cup toffee pieces
1/2 cup pecans, toasted, finely chopped
1/2 cup butter, melted
1/4 cup granulated sugar
2 cups cold milk
2 (3 1/2 ounce) packages instant chocolate pudding mix
1 (8 ounce) container Cool Whip Topping, thawed

Steps:

  • Heat oven to 400*.
  • Mix flour, 1/2 cup toffee bits, pecans, butter and sugar in a large bowl until well mixed. Press firmly onto bottom of 13x9 inch pan. Bake 10 minutes or until lightly browned. Cool.
  • Pour milk into a large bowl. Add pudding mixes. Beat with wire whisk 1 minute or until well blended. Spread 1 1/2 cups pudding into bottom of crust.
  • Gently stir half of the cool whip topping into remaining pudding. Spread over pudding in pan. Top with remaining cool whip. Sprinkle with remaining toffee bits.
  • Refrigerate 3 hours or overnight.

  • Line a small loaf pan or square pan with parchment paper and spread out the chopped almonds. and set aside.
  • In a small saucepan, combine your butter and sugar substitute. On low heat, heat up until the butter has melted and the sugar has dissolved. Stir regularly. Once the mixture begins to bubble, add your candy thermometer into the center of the mixture. Continue to stir every 30 seconds, until the thermometer reaches 300F (hard crack). Remove from the heat.
  • Once you have removed from the heat, stir continuously to ensure the butter and sugar doesn't separate. Pour into the lined pan and let sit for several minutes.
  • After several minutes, top with chocolate chips, before covering with tin foil. Let sit for 5 minutes. After 5 minutes, use a rubber spatula to spread out the toffee in an even layer.
