SPICY BEEF TOTCHOS RECIPE BY TASTY
Here's what you need: frozen tater tots, ground beef, Frank's Red Hot Original, ground cumin, garlic, paprika, chili powder, salt, shredded mexican cheese blend, red onion, fresh scallion, diced tomato, sour cream, guacamole

Steps:
- Preheat oven to 425ºF (220°C).
- Spread tater tots out on a sheet tray. Bake for 20 minutes. Remove from oven and set aside.
- Heat a medium skillet over medium heat. Add ground beef, Frank's Red Hot Original, cumin, garlic powder, paprika, chili powder, and salt. Gradually break up beef with a spatula and sauté until beef is fully cooked, about 5 minutes. Remove from heat.
- Place an even layer of tater tots in an 8-inch oven-safe skillet. Top with half of the beef. Sprinkle a layer of cheese. Repeat layering of tater tots, beef, and cheese.
- Lower oven temperature to 375ºF (160°C). Place skillet in oven and bake for 5-7 minutes, until cheese is melted.
- Remove from oven and top with red onion, scallions, and tomatoes. Add a dollop of sour cream and guacamole to the center of the skillet. Serve immediately.

Steps:
- 1. PREP/PREPARE
- 2. You will need a large pot or skillet to make this recipe.
- 3. If you do not have any red or golden potatoes, you can always use russets.
- 4. Gather your ingredients (mise en place).
- 5. Cut the potatoes in half, or if they are small, in quarters.
- 6. Toss them into a pot of lightly salted boiling water and cook for about 8 minutes.
- 7. Remove from the water and allow to dry out on a few paper towels, for 5 minutes.
- 8. Add to a bowl, and toss with a small bit of oil, and then salt and pepper, to taste.
- 9. Add the oil and butter to a large skillet, or pot over medium heat.
- 10. When the butter melts, add the taters, cut side down.
- 11. Cook, covered, for about 8 - 10 minutes, or until the taters are brown and crispy.
- 12. Flip and cook, covered, an additional 3 - 4 minutes.
- 13. PLATE/PRESENT
- 14. Serve any old way you please... Even by themselves. I served them at a casual outdoor event with Asian fried beef, and ciabatta bread.
- 15. Keep the faith, and keep cooking.
TASTY TATERS (AKA OVEN ROASTED POTATOES)
This is actually a recipe I have had for many years at camp when I would cook over a fire. Just recently I tried it in the oven and it worked really well, so here it is! ENJOY!

- Put potatoes, oil and soup mix in a plastic bag; close and shake until potatoes are coated.
- Put coated potatoes in a 13x9 inch pan; bake uncovered for 40 minutes until potatoes are golden brown.

- slice potatoes in any form you fancy keeping them a uniform size. place in cast iron skillet. cover taters with chopped onion and chopped peppers. drizzle the works with olive oil. add chopped garlic. cover with chopped bacon and quarter butter and add to the top of the mix.Eyeball salt,cracked pepper,paprika, and seasoning salt to your tastes. crack open your beer and enjoy it as great scents fill your kitchen. i also keep peeking in the stove as i like my potatoes a bit crisp. i would recommend checking in on them to meet your preference. While i can appreciate how this recipe may scare some off I would highly recommend you try it. It's tasty!

- Preheat oven to 425 degrees F (220 degrees C). Arrange potato nuggets in a single layer on a baking sheet.
- Bake in the preheated oven until lightly golden, 20 to 25 minutes.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop coarsely.
- Melt butter in a saucepan over medium heat; add shallot and cook until fragrant. Stir in flour and cook until light golden, about 2 minutes. Whisk in milk and 2 tablespoons sour cream; stir until smooth and thick, about 5 minutes. Season with black pepper and nutmeg. Stir in 1 cup Cheddar cheese until fully melted.
- Transfer potatoes to a 9x13-inch baking dish. Sprinkle bacon on top. Pour cheese sauce over the potatoes. Sprinkle remaining 1/2 cup Cheddar cheese on top.
