Steps:
- Cut chicken breasts in half lengthwise to make thinner cutlets. More sauce will coat more chicken this way.
- Grate 2 garlic cloves and mince the other one. More flavor this way.
- In a large bowl, add chicken, honey, soy sauce, lemon juice and garlic. Stir with tongs and let marinate while oven is preheating.
- Preheat oven to 450 degrees F and line large rimmed baking sheet with silicone baking mat or unbleached parchment paper.
- Arrange chicken in a single layer and bake for 20 minutes on the lowest rack, turning once.
- While chicken is baking, pour marinade into a small pot. Don't discard it - we will make delicious sauce. Place on a stove to bring to a boil.
- In a small bowl, whisk cold water with cornstarch. When marinade is boiling, add slurry to it and cook until sauce has thickened, about 3-4 minutes.
- Remove chicken from the oven and transfer onto a serving platter. Drizzle with sauce and sprinkle with green onion and sesame seeds.
- Serve honey garlic chicken with Instant Pot brown rice or Instant Pot quinoa or healthy broccoli salad.

Steps:
- Make a production line of a board, two wide, shallow bowls or dishes, and a baking tray that will comfortably fit the chicken, lined with baking parchment or oiled foil.
- If intending to bake immediately, heat oven to 200C/180C fan/gas 6. (Otherwise, remember to turn the oven on 10 mins before baking.)
- In the first dish, mix the parmesan, mayo, garlic, lemon zest, herbs and seasoning to form a paste - a tablespoon does this well, and helps at the next stage. Tip the crumbs into the second dish and shake so they cover the base.
- Now the messy part. Put the chicken on the board and, if necessary, trim and discard any flappy bits. Blot well with kitchen paper - this will help the coating stick.
- Slide the first breast into the mayo mix and use the spoon to make sure it is coated all over. Pick it up by the pointy end and place on the crumbs. Use a spoon to cover completely with crumbs, and press them on gently until covered all over. Pick up once again by the 'tail' and place on the prepared baking tray. Repeat with the second breast, then discard any leftover mayo and crumbs.
- Bake for 25-30 mins until golden and cooked through. Transfer to a board and slice into three or four thick slices, scatter over the chives and serve with the lemon wedges, roasted potatoes and tomatoes, if you like.

AWESOME BAKED GARLIC & CHICKEN
So, what's your take on garlic? Well, if you're not a big fan, you just might be a big fan after tasting this dish. We're going to use 20 cloves of unpeeled garlic, with a few more ingredients to round out the flavors. And don't worry about the dish tasting like a bunch of garlic; the baking will mellow out those flavors, and bring the whole dish together. As a matter of fact, squeeze out the garlic and spread it on some nice crusty bread. With the temperatures beginning to dip into the freezing zone this recipe is a great one to warm you up. - Gather your ingredients.
- Chef's Tip: If you get a chance, you should brine the chicken. This will add additional flavor and moisture to the bird, and help to flavor the sauce.
- Add the chicken pieces to a bowl with the olive oil and thoroughly coat.
- Chef's Note: When I cut up a whole fryer, I separate the legs, the thighs, the wings, and the breasts. That should give you 8 pieces.
- Place a rack in the lower position, and preheat oven to 375f (190c).
- Add the celery, onions, potatoes, and tarragon to a large ovenproof pot.
- Chef's Note: This pot needs a nice tight-fitting lid.
- Add the chicken to the pot in a nice layer above the veggies.
- Add the vermouth, and the chicken stock.
- Season with some salt, pepper, and a pinch of freshly ground nutmeg.
- Chef's Tip: If you brined the chicken, you can skip using any salt in the seasoning.
- Add the garlic cloves by placing them around the chicken pieces
- Chef's Note: Separate the garlic from the bulb, but do not peel it. This will concentrate the flavors of the garlic, and make it a spread for your bread. If you've never spread baked garlic on a piece of homemade crusty bread, you haven't lived.
- Cover the pot with the lid.
- Chef's Tip: If your lid is not very tight, add a piece of foil to the top and then place the lid on top,
- Place in the preheated oven, and then bake for 90 minutes without opening the oven and peeking.
- Put the chicken in a nice serving dish (or go rustic and leave it in the pot).
- Let your guests grab (with tongs) a piece or two of the chicken, and spoon the juice over the top. And don't forget some of those garlic cloves. Have your guests squeeze the garlic paste onto some nice freshly baked, crusty bread, and then use it to sop up that wonderful sauce. Enjoy.
- Keep the faith, and keep cooking.
GARLIC ROAST CHICKEN

- As soon as you get the chicken home, salt it inside and out, wrap it and keep it in the refrigerator for up to 2 days.
- When you are ready to cook the chicken, first preheat the oven to 425 degrees F.
- Pat the outside of the chicken dry with paper towels. Liberally salt and pepper the inside of the chicken and stuff the cavity with the all the garlic and lemon. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place it in a roasting pan just large enough to hold it and the vegetables. Scatter the onion slices, carrots and potatoes around the chicken. Brush the outside of the chicken with the butter and sprinkle with salt and pepper.
- Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken to a platter and cover with aluminum foil. Place the vegetables back in the oven and continue cooking for an additional 15 minutes.
- When the vegetables are cooked, carve the chicken and place the slices on the platter surrounded by the vegetables. Drizzle some pan juices over the chicken and vegetables.
ROASTED GARLIC CLOVE CHICKEN

- Preheat the oven to 350 degrees F.
- Rinse and pat dry the chicken. Salt and pepper liberally and allow to temper on a cutting board while you prepare the garlic. In a large ovenproof saute pan over medium heat, cook the whole garlic cloves in olive oil and butter, stirring occasionally, until lightly golden, about 10 minutes. Remove the garlic from the pan and set aside. Increase the heat to medium high and brown the chicken skin-side down until the skin is golden and crispy, about 5 minutes. Turn the chicken over, sprinkle on herbes de Provence. Add the garlic back to the pan and place hot pan in oven. Bake the chicken until cooked through, about 25 minutes. Once the chicken is done, remove chicken thighs and garlic to a platter. Place the pan over medium-high heat and sprinkle the drippings with flour and stir to incorporate. Deglaze the pan with the stock and lemon juice. Pour the sauce over the chicken on the platter and serve with bread for sauce-mopping and garlic-spreading.

- Cook the potatoes in boiling salted water for 20-25 mins until tender when pierced with a knife. Meanwhile, heat the 2 tbsp Flora Buttery in a frying pan over a medium heat until melted, then fry the onion for 10 mins until softened. Stir in the garlic, fry for a minute more, then add the chicken and fry for 5 mins until lightly golden.
- Pour in the wine, bring to a simmer and reduce until halved. Stir in 250ml of the crème fraîche. Cook for 5 mins until the chicken is cooked through, and the sauce has thickened slightly.

- Heat the oven to broil.
- Cut the crusty buns in half.
- Place the butter / margarine in a small bowl.
- Mix the garlic powder and parsley into it.

- Preheat oven to 350 degrees F (175 degrees C).
- Rinse the chicken and pat dry. Zest the lemon. Slice remaining lemon into quarters and place to the side. With hand mixer combine butter, lemon zest, minced garlic and 1/4 cup chopped rosemary.
- Take your hand and slide it between the skin and the meat on the breast, as well as loosening the 'pockets' between the leg and wing joints. Scoop some of the rosemary butter mixture onto your fingers and begin to stuff into the 'pockets' on the breast, leg, wings, etc. (Save approximately 1/4 of the rosemary butter mixture and rub on the inside of the chicken.)
- Season the cavity of the chicken with the salt, pepper and paprika. Add the quartered lemon, rosemary sprigs and sliced garlic to the chicken cavity. Bind the legs with culinary twine and tuck the wings into the leg joints to secure.
- Place the chicken breast up onto the roasting rack and into the oven. Roast for approximately 50 minutes, or until the juices run clear. Remove the 'stuffing', carve and serve.

- Whisk together lime juice, oil, garlic, salt, and pepper in a large bowl.
- Add chicken, turning to coat. Marinate chicken, covered and refrigerated, turning once or twice, for at least 2 hours and up to 8 hours.
- Put a rack in the upper third of the oven and preheat to 400 degrees.
- Remove chicken from marinade (discard marinade) and arrange skin side up, without crowding, in a shallow baking dish.
