SPINACH AVOCADO SALAD

From Good Food magazine's Holiday Cookbook. This is an easy recipe for a Southwestern Thanksgiving menu. Fresh coriander is the same as fresh cilantro.

1/2 cup olive oil
2 tablespoons tequila
2 tablespoons fresh lime juice
1 tablespoon fresh coriander, chopped
1 teaspoon sugar
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon fresh ground pepper
8 ounces jicama or 8 ounces radishes
2 firm ripe avocados, peeled and thinly sliced
2 tablespoons fresh lime juice
1 1/2 lbs fresh spinach, rinsed, dried, stemmed or 10 cups fresh spinach
1 medium red onion, thinly sliced
1/2 cup pomegranate seeds, for garnish (optional)

Steps:

  • Whisk all dressing ingredients together in small bowl or shake in jar with tight fitting lid.
  • Pare jicama or trim radishes; cut into 1x1/4-inch strips.
  • Toss avocados with lime juice in bowl.
  • Place spinach, avocadoes, onion, and jicama in salad bowl.
  • Whisk salad dressing again and drizzle over salad, tossing gently to coat.
  • Garnish with pomegranate seeds, if desired, and serve.

4 cups fresh baby spinach, torn
2 large avocados - peeled, pitted, and diced
¼ cup walnut oil
¼ cup olive oil
1 lime, juiced
½ teaspoon sweet paprika

Steps:

  • Combine watermelon, spinach, and avocados together in a bowl.
  • Whisk walnut oil, olive oil, lime juice, and paprika together in a bowl; pour over watermelon mixture. Toss to coat.

2 cups watermelon balls
1/4 cup crumbled reduced-fat feta cheese
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 tablespoon honey
1 tablespoon lemon juice
1 teaspoon dried tarragon

Steps:

  • Mix first three ingredients together in a salad bowl.
  • Dressing:.
  • Blend together balsamic, oil, water, honey and terragon for 30 seconds, pour over salad, serve immediatly.

Lovely cooling salad goes great with spicy or heavy food. It has crisp and sweet watermelon with creamy, buttery avocado topped with a zesty orange, mint vinaigrette. I serve this salad with the main course to cool off my spicy food.

2 cups chopped green leaf lettuce
¼ cup sunflower sprouts
1 avocado, cut into 1/2-inch cubes
¼ cup cubed seeded watermelon
1 tablespoon chopped fresh cilantro, or to taste
6 tablespoons orange juice
2 tablespoons red wine vinegar
1 tablespoon honey
1 tablespoon heavy cream
1 teaspoon Dijon mustard
¾ cup olive oil
2 tablespoons olive oil
1 teaspoon finely chopped fresh mint leaves
salt and ground black pepper to taste

Steps:

  • Combine lettuce and sprouts in a bowl. Top with avocado and watermelon cubes. Sprinkle cilantro on top.
  • Blend orange juice, vinegar, honey, cream, and mustard in a blender or food processor. Slowly drizzle in 3/4 cup plus 2 tablespoons oil while blender is running. Blend in mint, salt, and pepper.
