Avocado Toast with Creamy Soft Scrambled Egg image

2 large avocados
1/2 teaspoon grated lemon zest plus 1 teaspoon lemon juice
Kosher salt and freshly ground black pepper
4 slices multigrain or sourdough bread, toasted
1 tablespoon unsalted butter
2 ounces cream cheese, cut into bits
4 large eggs, beaten
2 radishes, very thinly sliced
1 tablespoon finely chopped chives

Steps:

  • Coarsely mash the avocados in a bowl with the lemon zest and juice, 1/4 teaspoon salt and pepper to taste. Spread the mash evenly onto the toasts.
  • Melt the butter in a medium nonstick skillet over medium-low heat. Add the cream cheese, eggs and 1/4 teaspoon salt and cook, stirring constantly with a rubber spatula, until the mixture is just set with small, creamy curds, about 5 minutes. Spoon the eggs onto the toasts and top with the radishes and chives. Sprinkle with salt.

Toasting garlic in oil before you fry eggs will not only make delicious crispy garlic for serving but it will also flavor the oil for cooking the eggs.

2 slices rustic bread
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1 ripe avocado, halved and pitted
1 tablespoon fresh lime juice (from 1/2 lime)
3 to 4 tablespoons chopped cilantro
3 tablespoons vegetable oil
2 cloves garlic, thinly sliced
2 large eggs
2 to 4 teaspoons sambal oelek (Indonesian-style chile sauce)

Steps:

  • Preheat the oven to 425 degrees F. Brush the bread with the olive oil, season with salt and pepper, transfer to a baking sheet and bake until lightly toasted, 8 to 10 minutes.
  • Meanwhile, lightly mash the avocado in a medium bowl. Fold in the lime juice, cilantro and 1/4 teaspoon each salt and pepper. Set aside.
  • Place the vegetable oil and garlic in a cold large nonstick skillet. Cook over medium-high heat, stirring, until just golden brown, 2 to 3 minutes. Remove the garlic to a small paper towel-lined plate with a slotted spoon.
  • Crack the eggs into the hot oil and cook, spooning the hot oil over the eggs, until the egg whites are just set, 2 to 3 minutes.
  • Spread the avocado on the toasts and top each with a fried egg. Season the eggs with salt and pepper and spoon 1 to 2 teaspoons sambal oelek over each egg. Sprinkle the crispy garlic on top and serve right away.

2 slices white bread, torn into small pieces
2 cloves garlic, peeled and smashed
4 tablespoons olive oil
Kosher salt
2 ripe avocados, pitted, peeled and halved lengthwise
3 tablespoons fresh lemon juice
4 large eggs
2 radishes, thinly sliced
1 scallion, thinly sliced
Hot sauce and lemon wedges, for serving

Steps:

  • Process the bread in a food processor until you have very fine crumbs (you should have about 1 1/2 cups).
  • Heat the garlic and 3 tablespoons of the oil in a large nonstick skillet over medium high until very fragrant and brown, 3 to 4 minutes. Discard the garlic. Add the breadcrumbs and cook, tossing frequently, until golden brown and crispy, 5 to 7 minutes. Transfer to paper-towel lined plate and season with salt.
  • Wipe the skillet clean with a paper towel, add the remaining 1 tablespoon oil and heat on high. Fry the eggs on high until the outer edges are browned and lacy but the yolks are still slightly uncooked, 1 to 2 minutes. Remove from the heat and let sit in the skillet until the yolks are set, 1 to 2 minutes.
  • Liberally brush all sides of the cut avocado halves with lemon juice and generously season with salt. Working with 1 half at a time, dredge the avocados in the breadcrumbs, turning to coat and patting the crumbs lightly into the flesh and the pit cavity. Reserve the remaining breadcrumbs.
  • To serve, place 1 avocado half cut-side up on a small plate. Sprinkle with a few more breadcrumbs and top with a fried egg, some scallions, radishes and a drizzle of hot sauce.

2 eggs
2 slices multigrain bread
1 ripe avocado, pitted, peeled
1 teaspoon lemon juice, or to taste
1 pinch cayenne pepper
sea salt to taste

Steps:

  • Melt butter in a skillet over medium-low heat. Crack eggs into the skillet side by side and cook until eggs are white on the bottom layer and firm enough to flip, 2 to 3 minutes. Flip eggs, trying not to crack the yolk, and cook until egg reaches desired doneness, 2 to 5 minutes more.
  • Meanwhile, toast bread slices to desired doneness, 3 to 5 minutes.

1 small shallot, thinly sliced into rings
1 tablespoon red wine vinegar
salt to taste
1 small avocado, pitted and peeled
¼ lime, juiced
1 egg
1 tablespoon white vinegar
freshly ground black pepper to taste
1 slice whole-grain crusty bread
1 pinch Aleppo pepper, to taste

Steps:

  • Combine shallot, red wine vinegar, and a pinch of salt in a bowl; set aside. Mash avocado with lime juice and salt in a second bowl.
  • Heat 2 to 3 inches of water in a small, shallow saucepan until boiling. Add vinegar and reduce heat to a light simmer. Crack egg into a small ramekin and lower it to the surface of the water, carefully easing it out of the ramekin into the simmering water. Poach egg until white is completely set and yolk is slightly soft, 3 to 4 minutes. Remove with a slotted spoon and transfer to a paper-towel lined plate. Sprinkle with salt and pepper.
  • Toast bread to your liking and remove to a plate. Top with mashed avocado, some of the pickled shallot, and poached egg. Sprinkle with aleppo pepper and serve immediately.

1 slice multigrain seeded sandwich bread (such as Dave's Killer® Bread)
½ teaspoon vegetable oil
1 egg
flaky sea salt to taste

1 wedge lemon

Steps:

  • Toast bread on the highest setting until dark golden brown all over.
