- In a skillet, brown beef well in oil. When cooked, transfer to a large Dutch oven and mix in garlic well. Add water, tomatoes, lemon, onions, salt, pepper, and sugar. Mix well and simmer 2 hours, stirring occasionally. Add carrots, potatoes, cloves, and crushed basil leaves. Cover and cook until vegetables are tender. Add canned peas and heat. If necessary, to thicken gravy, thicken with flour, dissolved in water. Serve hot.

- In a Dutch oven or skillet, brown beef well in oil. After the beef is cooked, remove and put into a deep pot. Add the garlic and mix well. Add water, tomatoes, lemon, onions, salt, pepper, and sugar. Mix well and simmer 2 hours, stirring occasionally. Add carrots, potatoes, cloves, and crushed basil leaves. Cover, and cook until vegetables are tender. Add canned peas, and cook until they are heated through, about 4 minutes. If necessary, to thicken gravy, thicken with flour, dissolved in water. Serve hot.
CHUCK WAGON BRISKET
Steps:
- Set up grill for indirect cooking over medium heat (no direct heat source under brisket).
- Rinse brisket with cold water and pat dry. Season with salt and pepper and place in foil baking pan. Sprinkle with meatloaf seasoning and pour over beer. Add enough apple cider to cover brisket halfway. Top with sliced onions and cover with heavy-duty aluminum foil.
- Place pan on hot grill over a drip pan. Cover grill and cook 2 1/2 hours. If using charcoal, add 10 briquettes to each pile of coals every hour. Remove brisket from braising liquid and place directly on grill over the drip pan. Combine 2 cups of braising liquid with BBQ sauce. Mop brisket thoroughly with sauce. Add 1/2 cup of wood chips to each pile of coals. Cover grill. Turn and mop brisket every 20 minutes for 1 hour.
- Transfer brisket to cutting board and let rest 10 minutes before slicing. Thinly slice against grain and serve with mop sauce on the side.
- INDOOR: Preheat oven to 375 degrees F. Follow directions for preparing brisket. Cover pan with aluminum foil and bake in preheated oven for 2 1/2 to 3 hours. Remove brisket from braising liquid and place on foil lined baking sheet. Reduce oven temperature to 350 degrees F. Mop brisket with BBQ sauce return to oven. Turn and mop brisket with sauce 2 more times every 15 minutes. Remove from oven and let rest 10 minutes before slicing.
CHUCK WAGON MEATLOAF
This recipe idea from Bbq.com was made on a cedar plank and placed on the BBQ. It sounded so good I decided to make it in my oven- it was delicious. - 1. Meat Loaf: Combine all ingredients in a large bowl and form into a loaf on a large cookie sheet (or the cedar board for BBQ). Press meat together well to hold it's shape. Bake in oven for 45 minutes or until internal temperature reaches 170^. Remove from oven and let rest.
- 2. While meat is baking make the mashed potatoes. Boil potatoes in water to cover until tender when poked with a fork. Drain. Mix and mash potato with the cream,cheddar cheese, salt and pepper to taste and the butter. Blend well. Let potatoes get cold. Then-
- 3. Spread potatoes on a flat small cookie sheet and place in the freezer for 1 hour.(this keeps the potatoes from falling off the meat.) Then with your hand scoop a little at time onto the cool meat loaf -covering sides and top. Sprinkle with paprika and sprinkle with parsley. Bake in oven at 375^ for 45 minutes or until it has heated through. Check at 30 minutes so cheese potatoes do not burn. Internal temperature should read 170^. Enjoy! --- Do the same potato procedure for the BBQ loaf. When BBQ-ing the loaf make sure to put the cover down on grill. Down for the potato coating too!

- Preheat oven to 350 degrees Fahrenheit.
- Pour milk over the bread slices. Allow it to soak in for several minutes.
- Place the ground beef, milk-soaked bread, Parmesan cheese, seasoned salt, salt, black pepper, and parsley in a large mixing bowl.
- Pour in beaten eggs.
- With clean hands, mix the ingredients until well combined.
- Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!).
- Lay bacon slices over the top, tucking them underneath the meatloaf.
- Make the sauce. Add ketchup, brown sugar, dry mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
- Bake for 45 minutes.
- Pour another 1/3 of the sauce over the top.
- Bake for another 15 minutes.
- Slice and serve with remaining sauce.
- Serve with mashed potatoes. Yummy!

- In a skillet, cook beef over medium high heat, until browned, 6-8 minutes. Drain off any fat.
- Stir in green pepper, beans, barbecue sauce, mustard and water. Heat to boiling, stirring occasionally, over medium heat.
- Cut biscuits in half and place around edge and in center of skillet.
- Reduce heat to medium, cover and simmer 12-15 minutes, until biscuits are cooked in the center. (they will be like dumplings and will not brown).
