Steps:
- Use a fork to smash the avocado in a small bowl, leaving it slightly chunky; stir in the lime juice and season with kosher salt. Spread the avocado smash on the toasted pain au levain, and top with the pickled chile slices, red radish sprouts and cilantro. Sprinkle a little Maldon salt on top and finish with a few drops of olive oil; serve.

- Toss the radishes in a bowl with the vinegar, sugar and a pinch of salt. In a separate bowl, mash the avocado with the lime juice, chilli flakes and some seasoning. Toast the bread, then top each slice with a little avocado, half an egg, some pickled radishes and a few more chilli flakes, if you like.

- To make the pickles, bring honey vinegar and water to a simmer in a small sauce pan. Place sliced radishes in a pint size mason jar along with scallions. Pour the warm vinegar mixture over the radishes. Let radishes come to room temperature before putting a lid on and place in the fridge for at least 2 hours.
- To make the toast, toast bread until lightly brown. Spread with a smear of butter (optional but I’m always in favor of butter) and top each slice of toast with 1/4 of sliced avocado. Top with pickled radishes, a sprinkle of sea salt and garnish with the sliced greens of a scallion.
