A simple yet festive main dish. If you're not up to the task of roasting a turkey this dish is for you. Serve with Cranberry Chutney. Originally submitted to ThanksgivingRecipe.com.

1 pound turkey tenderloins
3 tablespoons soy sauce
1 tablespoon Dijon-style prepared mustard
2 teaspoons dried rosemary, crushed

Steps:

  • Place the turkey tenderloins in a sealable plastic bag and set aside.
  • In a small bowl combine the soy sauce, mustard and rosemary. Pour over turkey, seal bag and shake to coat. Marinate in the refrigerator for 1 to 4 hours shaking once or twice.
  • Preheat oven on the broiler setting. Remove the turkey from the marinade and place on the rack in the broiler pan. Broil 4 inches from the heat, turning once, for 20 to 22 minutes or until meat is cooked through and when pierced with a fork the juices run clear. Slice and serve with Cranberry Chutney.

1 medium (1 cup) onion, thinly sliced
1 cup Cranberry Orange Relish **
2 medium (1 cup) oranges, peeled, sliced 1/4-inch, if desired

Steps:

  • Melt butter in 10-inch skillet until sizzling; stir in garlic, salt, pepper and thyme. Add turkey tenderloins and onion. Cook over medium-high heat, turning occasionally, 10-12 minutes or until turkey is browned.
  • Reduce heat to low. Cover; cook 25-30 minutes or until turkey is fork tender. Stir relish into pan juices. Slice turkey; serve with relish mixture and orange slices, if desired.

Mango Salsa
1 ripe Mango peeled, cored, and diced
1 medium tomato, seeded and diced
½ cup red onion, finely chopped
½ cup green bell pepper, diced
2 tablespoons finely chopped mint
¼ tablespoon salt

Steps:

  • 1.In medium bowl, combine mango salsa ingredients. Cover and refrigerate until serving. 2.Grill tenderloins approximately 20 to 30 minutes, turning every 5 minutes or until internal temperature reaches 170°. 3.To serve, slice tenderloins and top with mango salsa. Note: For food safety, cook turkey to a minimum internal temperature of 165° as measured by a meat thermometer.

Turkey tenderloin can sometimes be a bit more challenging to find in the meat case at a supermarket. So plan ahead and check with the butcher to see if it needs to be ordered. After tracking it down, you can turn this tenderloin into a complete meal by serving it with a side of black beans sprinkled with diced red bell pepper and chopped fresh cilantro. After browning the turkey, the sweet, savory sauce, made with chicken broth, apricot jam, Dijon mustard, and fresh thyme, gets reduced and is cooked alongside the turkey for even more convenience (only one skillet needed!). After all the ingredients get a chance to know each other, slice up the turkey, arrange on a platter, and spoon that gorgeous-looking pan sauce over for a showstopper of an entrée.

Add apricot mixture and bring to boil. Reduce heat and simmer, covered, until instant-read thermometer inserted into center of turkey registers 165°F, about 12 minutes longer.
  • Transfer turkey to cutting board and let stand 5 minutes. Cut into 8 slices and serve with pan sauce.

  • You will need a roasting pan lined with foil and coated with nonstick spray.

2 tablespoons butter
2 cups canned whole cranberry sauce
1/2 teaspoon ground cloves
1/4 cup sugar
1/2 cup mandarin orange pieces

Steps:

  • Brown tenderloins in butter in skillet. Lower heat to simmer and cover. Cook about 20 minutes until meat juices run clear.
  • Remove tenderloins and keep warm. Pour off excess drippings.
  • Add cranberry sauce, cloves and sugar to skillet. Heat over low heat. Add orange pieces.
  • Spoon sauce over tenderloins to serve or spoon some sauce onto serving plate and top with sliced tenderloins.
  • Garnish with orange twists if desired.

1 (8 ounce) can pineapple chunks in juice
1 cup low-sodium chicken broth
½ cup apricot preserves
¼ cup rice vinegar
2 tablespoons soy sauce
cooking spray
1 pound turkey tenderloins
2 cups thinly sliced carrots
1 large onion, chopped
½ cup red bell pepper, cut into 2-inch chunks
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Drain pineapple chunks and set fruit aside. Combine pineapple juice with chicken broth, apricot preserves, vinegar, and soy sauce in a small bowl.
  • Coat a nonstick skillet with cooking spray. Add tenderloins to the cold skillet and place over medium heat. Cook until browned, 7 to 8 minutes, turning halfway through. Remove tenderloins to a plate.
  • Add carrots and onion to the skillet, adding a little cooking spray or broth if needed. Saute for 3 minutes. Stir in bell pepper and saute for 1 more minute.
  • Pour in pineapple juice mixture and return tenderloins to the skillet. Cover and simmer over low heat until tenderloins are no longer pink in the center and the juices run clear, 12 to 15 minutes.
  • Remove tenderloins from the skillet and slice; keep warm.
  • Stir cornstarch and water together in a small dish until smooth. Add to the skillet with the reserved pineapple chunks. Cook over medium heat until thickened, 2 to 3 minutes. Serve over sliced tenderloins.
