CREAM OF AVOCADO SOUP

Cream of Avocado Soup image

A creamy, savory summer soup that is ready in less than 30 minutes. This cream of avocado soup uses much less cream than typical cream soups because avocados are so creamy on their own.

Provided by Kirbie

Categories     Appetizer

Time 25m

Number Of Ingredients 8

2 cloves garlic (minced)
½ yellow onion (minced)
2 cups chicken broth (divided)
2 large avocados (pitted and peeled and cut into cubes)
1 tbsp lime juice
¼ cup cilantro leaves

AVOCADO SOUP

Avocado Soup image

Here's a delicious Avocado Soup recipe that you can always rely on. Serve it lukewarm or chilled and definitely try it with some freshly made veggie stock!

Provided by MexicanPlease

Time 1h15m

Number Of Ingredients 18

2 avocados
5 cups vegetable stock
1/2 onion
1/4 jalapeno
1 garlic clove
15-20 sprigs cilantro
1-2 limes
3/4 teaspoon salt
freshly cracked black pepper
Crema (optional)
hot sauce (optional)
2 onions
3-4 carrots
3-4 stalks celery
1/2 parsley bunch
2 bay leaves
10-15 whole black peppercorns
1 gallon cold water

Steps:

  • To make the vegetable stock, start by roughly chopping 2 onions, 3-4 carrots, and 3-4 celery stalks. Add these to a gallon-sized pot along with a dollop of oil. Let the veggies sweat until they are just starting to soften (approx. 10 minutes).
  • Fill the pot to the brim with cold water and add 1/2 parsley bunch, 10-15 whole black peppercorns, and 2 bay leaves.
  • Bring to a boil and then reduce heat to a simmer. Let simmer for about an hour (or longer if you want).
  • Strain the stock. You can keep the veggies around to munch on if you want. You'll need 5 cups of this stock for the Avocado Soup. Store leftover stock in the fridge where it will keep for at least a few days, or in the freezer where it will keep for months.
  • To make the Avocado Soup, start by cooking 1/2 onion, 1/4 jalapeno and 1 garlic clove in a dollop of oil over medium heat. When the onion is softened and just starting to brown (5-8 minutes), add the mixture to a blender or food processor along with 5 cups of stock, 15-20 sprigs of cilantro, the juice of 1 lime, 1/2 teaspoon salt, and some freshly cracked black pepper. Combine well.
  • Add the flesh of 2 avocados and pulse blend (I usually leave the avocados chunky). Taste for seasoning. I added another 1/4 teaspoon salt (so that is 3/4 teaspoon total) and another squeeze of lime.
  • This is typically served lukewarm or chilled. If you are using freshly made stock you can serve it right out of the blender, otherwise you can warm it up lightly in a saucepan over mediumish heat.
  • Additional garnishes include Crema, black pepper, and definitely a final burst of acidity (lime juice or hot sauce).
  • Store leftovers in an airtight container in the fridge.

Provided by So Delicious® Dairy Free

Categories     Trusted Brands: Recipes and Tips     So Delicious® Dairy Free

Yield 4

Number Of Ingredients 19

1 ½ tablespoons crushed garlic
4 tablespoons avocado oil
2 cups avocado, pitted and scooped from shell
1 cup cucumber, cut into 1/2-inch slices
2 ¼ cups So Delicious® Dairy Free Cashew Milk
¾ cup So Delicious® Dairy Free Coconut Yogurt, Plain
4 ½ teaspoons cider vinegar
1 tablespoon kosher salt
1 teaspoon ground white pepper
3 tablespoons chopped roasted cashews
1 ¾ cups almond flour
1 tablespoon organic granulated sugar
1 ½ teaspoons baking powder
2 teaspoons kosher salt
6 tablespoons cold vegan butter (soy-free), like Earth Balance®, cut into 1/2-inch pieces
1 cup So Delicious® Dairy Free Original Yogurt, Plain
1 tablespoon toasted sesame seeds
1 tablespoon dried herbs (oregano, rosemary, tarragon)
2 teaspoons kosher salt

Steps:

  • In a small saucepan, add garlic and avocado oil, and place over medium heat. Poach ("roast") garlic until just golden brown. Strain garlic from oil, save garlic oil for topping soup.
  • Add all ingredients (avocado through white pepper--not the cashews) to blender and blend until silky smooth. Season to taste. Chill.
  • Serve cold in bowl, topped with chopped cashews, some more garlic oil and with a healthy portion of yogurt crackers on the side. Enjoy! Yum! Summer!
  • Herbed Yogurt Crackers: Preheat oven to 375 degrees F (350 if using convection).
  • Add sifted almond flour to bowl, along with all dry ingredients. Whisk until combined.
  • Using your (clean) hands, cut butter into dry mix, rubbing between your fingers until the consistency of very coarse sand or little pebbles.
  • Using a wooden spoon, add yogurt and mix until just combined. Dough will be super wet and sticky - and delicious!
  • Form into one big (or two smaller) oval shaped mound, about 1 inch thick, and refrigerate for at least one hour.
  • Remove from refrigerator, and between two pieces of parchment paper on a sheet pan, roll (or press with another sheet pan) dough to a consistent thickness, around 1/16 inch.
  • Using a knife or a pizza cutter, cut into squares, rectangles, triangles (any shape you want!), then, using a fork, poke lots of little holes in the dough and then top with sesame seeds, herbs and salt.
  • Bake for about an hour, turning pan halfway through the process. Bake until golden brown, and dry to the touch.

Time 35m

Yield 4 servings

Number Of Ingredients 16

2 tablespoons neutral-flavored oil, such as grapeseed
1 medium yellow onion, coarsely chopped
Kosher salt
4 garlic cloves, coarsely chopped
1/2 teaspoon ground cumin
4 cups vegetable broth, plus more if needed
2 cups unsweetened almond milk
4 ripe medium Hass avocados, pitted, peeled and halved
1 packed cup cilantro, coarsely chopped
1/4 cup fresh lime juice (from about 2 limes)
4 teaspoons roasted salted pepitas, for serving
4 teaspoons minced chives, for serving
Tortilla chips, for serving
1/4 cup neutral-flavored oil, such as grapeseed
1/2 ounce dried chiles de árbol (15 to 20 chiles), stemmed
Kosher salt

Steps:

  • Make the soup: Heat a medium pot over medium-low. Add the oil and heat, then add the onion and a pinch of salt. Cook, stirring occasionally, until translucent and slightly brown, 7 to 8 minutes. Add the garlic and cook to slightly brown, another 2 to 3 minutes. Add the cumin and cook, stirring, until fragrant, about 30 seconds, then add the vegetable broth.
  • Allow the mixture to come to a simmer and cook until the onion and garlic are soft and cooked through, 3 to 5 minutes, then add the almond milk and turn off the heat. Allow the mixture to cool to lukewarm.
  • To finish the soup, combine the avocados, cilantro, lime juice, broth mixture and a pinch of salt in a blender. Blend until completely smooth, adding up to ½ cup of broth or water as needed if the mixture is too thick. (You may need to do this in batches.) Taste and season with more salt if necessary. Chill if you prefer the soup cold.
  • Make the chile oil: Heat a small saucepan over medium-low, then add the oil and chiles. Continuously stir the chiles in the hot oil until they become fragrant, deepen in color and stain the oil a red-orange hue, about 5 minutes. Remove from the heat and allow to cool slightly. Transfer the mixture to a blender or food processor with a pinch of salt and pulse until the chiles are finely ground.
  • Serve at room temperature or refrigerate until chilled to serve cold. Divide the soup among bowls and garnish with pepitas, chives, tortilla chips and chile oil.
