TOMATO AND AVOCADO SALAD
A simple palatable avocado salad blended with onion and tomato is one of the easiest and healthiest salads. It is normally used as an appetizer or as a side salad with the main course. Avocado belongs to the pear family and is also famously known as alligator or croc pear because of its shape and dark green roughly textured skin. Avocado is considered as a super healthy food and is a store house of nutrients like monounsaturated fats and omega-3. Avocado not only keeps your heart healthy but also protects your eyes and skin. Most importantly it provides protection against cancer in particular breast cancer.

- In a bowl, mix the tomatoes, cucumber, green bell pepper, and celery. Mix the vinegar, sugar, salt, and pepper in a separate bowl, and pour over the salad. Gently toss to coat. Cover, and refrigerate at least 2 hours, stirring occasionally.

CHOPPED MEXICAN SALAD WITH ROASTED PEPPERS, CORN, TOMATOES, AND
This is a great chopped salad recipe that appeared in the July '06 edition of Fine Cooking. The only change I've made is cutting the corn off the cob and pan roasting the kernels in a nonstick pan coated with cooking spray, rather than roasting the corn and then slicing them off the cob. - Preheat oven to 425-degrees. Line baking sheet with foil. Drizzle 1 tablespoon oil over peppers and corn, rubbing in to vegetables. Sprinkle with salt and pepper. Roast peppers about 20 minutes. Turn corn occasionally throughout cooking time. After roasting cut corn off cob and scrape skin off peppers. Dice peppers.
- To make dressing, mince garlic and combine with salt to make a paste. Whisk with ingredients (lime juice through cumin). Slowly add oil, season with salt and pepper to taste.
- To assemble salad, artfully arrange corn, peppers, tomatoes, jicama, avocado, and black beans in stripes or piles on medium to large platter. Sprinkle with cilantro. The salad dressing may be drizzled onto salad before serving or you may serve separately, allowing each guest to top their salad with the dressing individually.

CHICKEN FAJITA SALAD
Chicken Fajita Salad is a refreshing dinner salad for two with juicy chicken, onion, and bell pepper served with avocado, tomato, and ranch.

- Rub together the chicken and fajita seasoning until coated. If your seasoning doesn't have a lot of salt, you may want to sprinkle a little bit of salt onto your chicken.
- In a large 12 inch skillet, heat oil. Once hot, add the chicken in a single layer (if using thighs, make sure they are laid out flat). Cook until brown, about 3-4 minutes.
- Flip then cook until brown and middle is no longer pink and reaches internal temperature of 165F, about another 3-4 minutes. Transfer to a plate or bowl and keep warm.
- In the same skillet, add the onion, bell pepper, and a big pinch of salt, scraping up any brown bits left behind. Cook until softened and starts to brown, about 8-10 minutes.There should be enough oil and seasoning leftover from the chicken, but if not add more.
- Add any juices accumulated from the chicken to the vegetables then slice chicken thigh against the grain (cut perpendicular to the lines you see in the meat).
- In a large serving bowl, add the lettuce, avocado, tomatoes, cilantro, cooked vegetables, sliced chicken, and lime juice. Serve with desired amount of ranch dressing.
SCALLOPS WITH BELL PEPPERS, TOMATOES, AVOCADO AND MANGO

- Char bell peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel and seed bell peppers. Cut all bell peppers into matchstick-size strips. Set aside.
- Arrange tomatoes on baking sheet. Broil until tomatoes begin to brown and blister, about 5 minutes.
- Heat oil in heavy large skillet over high heat. Add scallops and cook 2 minutes. Remove from heat. Turn scallops over. Add lime juice to skillet, then tequila. Simmer until scallops are cooked through and liquid is reduced by half, about 2 minutes. Using slotted spoon, transfer scallops to plate. Stir roasted peppers, tomatoes, cilantro and basil into cooking liquid. Add butter 1 piece at a time, whisking just until melted. Return scallops to skillet. Season to taste with salt and pepper.
- Spoon scallop mixture onto plates. Sprinkle with diced avocado and mango. Garnish with cilantro sprigs.
