- For dressing, mix yogurt, honey, lemon zest and 1 teaspoon lemon juice. Toss avocados with remaining lemon juice., In a large bowl, combine remaining ingredients; gently stir in avocados. Serve with dressing.

This is my favorite Avocado recipe, and so easy! It was given to me by my sister-in-law's mother, who comes from Miami, Fl. It tastes like a dessert, but is called a salad and is quite addicting. Up until now, it's been one of Miami's most closely guarded secrets :).

- Halve the avocado, remove the stone and scoop out the centre. Put into baby's bowl.
- Add the banana and mash together with the avocado.
- If your baby is already used to purées, you may want to keep this a chunkier consistency.

- Mix well and cook until thick.
- Cool.
- Alternate layers of bananas, dressing and peanuts.

I like this recipe as a dip for chips and as a topping for salads, especially a nice grilled salmon salad. I just chopped the vegetables smaller for the salsa.
