BAKED FETA CHEESE WITH TOMATOES
This baked feta cheese with tomatoes is a deliciously simple appetizer. Salty feta pairs perfectly with sweet, juicy summer tomatoes. Add a drizzle of olive oil and sprinkle of herbs and you're ready to serve this delicious dish!

Steps:
- Preheat oven to 400 degrees.
- Toss the tomatoes, garlic, olive oil, and oregano until combined.
- Place the feta in the center of a small, rimmed casserole dish.
- Cover with tomato mixture.
- Bake for 20 minutes then remove from the oven.
- Sprinkle with parsley and let it cool slightly for 5 minutes.
- Serve with slices of pita or naan.

AUTHENTIC BAKED FETA AND TOMATOES

- Preheat the oven at 350 F (180 C)
- In medium sized baking dish spread the tomatoes.
- Drizzle 2 tablespoons over the tomatoes and toss.
- Place the feta in the center of the baking dish, sprinkle with oregano, black pepper and place the hot pepper on top of the feta. Drizzle with 1 tablespoon olive oil.
- Bake for 35 minutes. If adding pasta, start boiling it now and set aside.
- Remove from oven and smash the feta -tomato a bit before serving.
- Sprinkle with chopped mint before serving

Steps:
- Preheat the oven to 425˚F.
- Slice the pearl tomatoes horizontally (each one in four pieces) and place on paper towels to drain. (If you are using one large tomato, cut the end pieces and slice the rest in six slices). After 3-4 minutes, turn them over and place on new paper towels. Cut the pepper into four rings and set aside.
- Oil well a small, shallow ceramic baking dish (or four individual ceramic ramekins) and place half of the tomato slices at the bottom. Sprinkle with some sea salt and crushed pepper flakes. Top with half the bell pepper slices.
- Arrange the two Feta pieces on top of the tomato/pepper layer, place the remaining tomato slices on top of each piece of cheese, and place the rest of the bell pepper rings on the tomato. Drizzle liberally with the extra virgin olive oil, sprinkle with oregano and some more pepper flakes, and transfer to the middle of the oven.
- Bake for about 25 minutes, or until the feta turns a light-golden color and the oil is sizzling. If you want to deepen the color, you can place the dish under the broiler for 1-2 minutes at the end of the cooking time.
- Brush some olive oil on the slices of good, multigrain bread, and grill on both sides. Serve the baked feta immediately with some warm grilled bread.
BAKED FETA SPREAD WITH SUN-DRIED TOMATOES
This is my own version of a feta appetizer we get at our favorite local Greek restaurant. This is always a hit at dinner parties. The sun-dried tomatoes really make it delicious! Serve with warm or grilled pita bread.

- Combine feta cheese, olive oil, sun-dried tomatoes (plus some of the oil), garlic, lemon juice, pepper, red pepper flakes, and salt in a large resealable plastic bag and allow to marinate for 1 hour at room temperature.

- Transfer ingredients to a small oven-proof stone dish or ramekin.

- Heat the oven to 180C/160C fan/gas 4. Put the feta in the centre of a baking dish, about 25cm x 20cm, and scatter the cherry tomatoes and red onion around the cheese.
- In a jug, whisk the olive oil with the garlic, chopped herbs, honey and some seasoning, then drizzle over the tomatoes and feta. Bake for 35-40 mins until the tomatoes have burst, and the feta is soft and lightly golden. Drizzle with a little extra chilli fusion honey and olive oil to serve, alongside some crusty bread and a green salad.

- Brush two 18cm shallow ovenproof bowls or plates with a little olive oil.
- Place 1 slice of toast in each bowl.
- Place tomato slices, slightly overlapping, in a circle around toast.
- Top with feta, then carefully crack an egg over the top of each.
- Scatter eggs with oregano, onion, paprika and cracked black pepper to taste, then drizzle with a little olive oil.
- Bake at 180C for 12-15 minutes or until egg whites are set but yolks remain runny.

- Preheat the oven to 220°C/425°F/Gas Mark 7
- You will need two individual serving dishes that can go into the oven.
- De-seed and cut the bell pepper length ways into 3 cm strips.
- Brush the pepper slices in a little oil and place on a preheated non stick baking tray and roast for about 20 minutes. Remove from the oven.
- Char the skin of the pepper slightly with a cooks blow torch if you think the skin isn't looking nice and roasted. Put the peppers to one side.
- Now, in a saucepan, melt the butter and the olive oil.
- Slice the onion thinly and finely chop the garlic. Add the onion and garlic to the saucepan. Over a low heat, cook until soft but not coloured.
- Cut the feta cheese into 2cm cubes.
- Using individual serving dishes, layer the onions, with the thinly sliced tomatoes and the roasted red pepper slices.
- Top with the cubed feta cheese. Finish by sprinkling with the grated parmesan cheese. Sprinkle a pinch of paprika on top of each dish.
- Cover with aluminium foil (trying not to touch the cheese) and bake in the oven for about 15 minutes. Uncover and bake for another 5 to 10 minutes, or until the feta starts to get a nice colour.
- Take care not to cook too much as it looks better if the feta stays in cubes.
- Serve with nice fresh crusty bread.

- Place the block of feta in the center of your baking dish. Arrange the tomatoes and garlic cloves around the feta. Tuck the sprigs of thyme, sage, and rosemary in between tomatoes and garlic.Drizzle everything evenly with olive oil. Add a tablespoon of oregano all over—season with freshly ground pepper. Bake for 30 to 35 minutes.
- Cook the pasta al dente. Usually 1 minute less than recommended boiling time. Make sure to reserve 1 cup of the pasta water, you might need it later.
- Remove the baking dish from the oven. Immediately add ⅔ of the basil leaves. Stir the mixture together until the feta has melted into a creamy sauce.
- Add in the pasta. Gently toss until the pasta is evenly coated. If you need to, add a little of the reserved pasta water, about ⅕ cup, to loosen it up a little and make it creamier.
