Authentic Mexican Chicken Fajitas-Fajitas De Pollo is a popular dish served in Mexico for casual entertaining. One of the easiest dishes in Mexican cuisine, fajitas are usually made with chicken, beef, or shrimp.

guacamole, salsa, sour cream/Mexican crema, flour/corn fresh warm tortillas, pico de gallo
2 limes- juice and rind
2 teaspoons granulated sugar
2 teaspoons dried oregano
1/2 teaspoon cayenne pepper
1 teaspoon ground cinnamon
1 teaspoon salt
3-4 medium skinless boneless chicken breasts
2 large onions sliced thinly
3 bell peppers(1 green, 1 yellow or orange, 1 red)
3 tablespoons vegetable oil

Steps:

  • Slice the chicken breasts into 3/4in(2cm) wide strips and place these in a large bowl.
  • Add the lime rind and juice, sugar, oregano, cayenne, cinnamon, and salt.
  • Mix thoroughly and set aside to marinate for at least 30 minutes.
  • Cut the onions in half and slice them thinly. Cut the peppers in half, remove the cores and seeds and slice them into 1/2 inch(1 cm) wide strips.
  • Heat the oil in a large frying pan. Stir fry the marinated chicken for 5-6 minutes. Add the peppers and onions and cook for 3-4 minutes more, until the chicken strips are cooked through and the vegetables are soft and tender but still juicy.
  • Spoon the chicken mixture into a serving bowl and take it to the table.
  • Serve with fresh warm corn/flour tortillas, guacamole, sour cream, crema, salsa, etc.

My kids' favorite meal. I make these on my BBQ with a cast iron grill insert. I fell in love with the flavor of chiles (fresh and powdered) from Hatch, NM during a trip to AZ a few years ago, and they are now the staple in all my Mexican cooking. Note this recipe is made with 'mild' chile powder and is not spicy - which works perfectly for the kids! If you have regular chile powder from the store or prefer more heat, adjust the amounts to your own tolerance. 1 1/2 pound(s) boneless chicken breast
FOR THE MARINADE
1 tablespoon(s) mild chile powder - i prefer it from hatch, nm
1 tablespoon(s) cumin
2 tablespoon(s) olive oil
2 clove(s) garlic, crushed
1 tablespoon(s) fresh cilantro - chopped
1/4 cup(s) lime juice
1/4 cup(s) water
1 teaspoon(s) liquid smoke
1 teaspoon(s) salt
1/4 teaspoon(s) ground black pepper
FOR THE VEGGIES
1/2 - sweet green pepper - sliced into strips
1/2 - sweet red pepper - sliced into strips
1 - large spanish onion - sliced into strips
1 tablespoon(s) mild chile powder - i prefer it from hatch, nm
1 tablespoon(s) cumin
1/2 tablespoon(s) salt
3 tablespoon(s) olive oil
16 - tortillas - corn or flour

Steps:

  • Combine marinade ingredients in a zip lock bag or plastic container
  • Add Chicken, toss to coat and refridgerate for 2 hours
  • Heat 2 tbsp of Olive Oil in cast iron skillet or regular frying pan
  • Add Peppers and Onions and sprinkle with Cumin, Chile Powder and Salt
  • Begin heating Tortillas in a dry frying pan on medium heat - about 30 seconds per side. Keep warm in foil or tortilla warmer
  • Saute until tender, turning frequently to mix seasoning with veggies - about 5 mins
  • Remove veggies and set aside
  • Add remaining 1 tbsp of olive oil to skillet/pan and heat for a few seconds
  • Add marinaded chicken and cook until meat is 'white' all the way through - about 3-4 mins per side, depending on thickness
  • Chop cooked chicken breasts into bite sized pieces, serve and enjoy with your favorite Mexican condiments!!

I've been making chicken fajitas on the stove with packaged taco seasoning for years but always had so much clean up afterwards. This was not only better tasting, but also easier to clean up and way more satisfying! Serve with warm tortillas, sour cream, and shredded cheese. Taco sauce optional.

¼ cup olive oil, divided
2 pounds boneless skinless chicken breasts, cut into strips
1 teaspoon garlic granules, or to taste
1 teaspoon chili powder, or to taste
1 pinch dried oregano, or to taste
1 pinch ground cumin, or to taste
1 (14.5 ounce) can diced tomatoes for chili
1 large onion, cut in strips
1 green bell pepper, cut into strips, or to taste
1 red bell pepper, cut into strips, or to taste
½ (4 ounce) can chopped green chiles
½ teaspoon seasoned salt, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Drizzle 2 tablespoons olive oil over the bottom of a 10x14 glass dish. Add chicken strips.
  • Combine remaining 2 tablespoons olive oil, garlic granules, chili powder, oregano, and cumin in a small bowl. Rub mixture over the chicken. Add tomatoes, onion, green bell pepper, red bell pepper, and green chiles. Mix thoroughly. Sprinkle with seasoned salt.
  • Bake in the preheated oven, uncovered, until chicken is no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 large chicken breasts, finely sliced
1 red onion, finely sliced
1 red pepper, sliced
1 red chilli, finely sliced (optional)
1 heaped tbsp smoked paprika
1 tbsp ground coriander
pinch of ground cumin
2 medium garlic cloves, crushed
4 tbsp olive oil
1 lime, juiced
4-5 drops Tabasco
6 medium tortillas
bag mixed salad
230g tub fresh salsa

Steps:

  • Heat oven to 200C/180C fan/gas 6 and wrap 6 medium tortillas in foil.
  • Mix 1 heaped tbsp smoked paprika, 1 tbsp ground coriander, a pinch of ground cumin, 2 crushed garlic cloves, 4 tbsp olive oil, the juice of 1 lime and 4-5 drops Tabasco together in a bowl with a big pinch each of salt and pepper.
  • Stir 2 finely sliced chicken breasts, 1 finely sliced red onion, 1 sliced red pepper and 1 finely sliced red chilli, if using, into the marinade.
  • Heat a griddle pan until smoking hot and add the chicken and marinade to the pan.
  • Keep everything moving over a high heat for about 5 mins using tongs until you get a nice charred effect. If your griddle pan is small you may need to do this in two batches.
  • To check the chicken is cooked, find the thickest part and tear in half - if any part is still raw cook until done.
  • Put the tortillas in the oven to heat up and serve with the cooked chicken, a bag of mixed salad and one 230g tub of fresh salsa.
